In this study, Canadian household meat consumption behavior in exotic (deer and elk meat) and traditional meats (beef, pork, chicken, turkey, bison, and seafood) is examined. This research introduces some differences in public response to transmissible spongiform encephalopathies (TSE) risks across consumer segments from different sources of meat supply, including hunted meat. The analysis uses a combination of survey and household meat purchase data that include a balanced household panel of 2,393 households per year across time. A two-step estimation procedure is used with a probit model in the first step (consume or not) and a doublelog–translog two-stage demand system in the second step (level of consumption). It is assumed and tested that household sociodemographics, consumers’ risk perceptions/attitudes, and media coverage of bovine spongiform encephalopathy (BSE) and chronic wasting disease (CWD) are underlying demand shifters in consumers’ daily meat purchase decision. The results suggest that households who obtain venison from hunting show the highest confidence in venison safety. Exotic meat preferences negatively affect traditional meat consumption in the daily diets of households who purchase traditional meats from stores and obtain venison from hunting. In response to the media coverage of BSE and CWD, exotic meat eaters are less sensitive to animal disease media information than the general population.  相似文献

Consumers are increasingly aware of the link between their lifestyle choices and the risk of noncommunicable diseases. A dynamic approach incorporating this linkage in food demand is developed, where consumers maximize utility over time by choosing fat intake to control their cumulative fat level. The resulting dynamic indirect utility function and household data on meat, fish, and dairy consumption are used to estimate a censored demand system. Results show that consumers consciously adjust, but not instantaneously, their cumulative fat level. Highly educated households have a faster rate of adjustment of cumulative fat. When cumulative fat level increases, consumers shift to dairy or white meat from red meat products.  相似文献

Sluggish growth in per capita consumption and a downward pressure on beef price at the farm level has required producers to raise cattle that precisely target the meat attributes desired by consumers. Coupled with the consumers' preference for beef with lean tissue and less external fat, the beef packing plants have used the dualistic grading system that emphasizes leanness and palatability; both important to carcass prices. Ultrasound technology can help farmers to produce a carcass with an optimal mix of attributes such as marbling and muscling, and external fat. The results of this study show a high level of accuracy of ultrasound technology in predicting carcass attributes. An estimated hedonic regression model shows that the carcass attributes are reflected on the implicit beef price. Ultrasound technology helps producers to produce carcass with the desired attributes and thus obtain a higher price.  相似文献

By combining 2012 Living Standard Measurement Survey cross-sectional survey responses and georeferenced conflict data, this study quantifies the effect of violent conflict on food security and dietary quality in Iraq. Specifically, it estimates the effect of physical insecurity on different food security dimensions, including caloric consumption and household dietary diversity. Because disrespecting war-related foreign national cemeteries is a war crime that discourages nearby fighting, instrumenting conflict intensity by the exogenous variation in distance between these sites and household place of residence addresses potential sources of bias. The instrumental variable analysis confirms the positive (negative) effect of conflict—deriving from state, non-state and one-sided violence (e.g., attacks by the Islamic State)—on per capita caloric consumption (household dietary diversity), which although counterintuitive is unsurprising given Iraq's relatively high-income levels and changes in dietary pattern. Given that the primary driver of conflict's positive effect on calories is increased consumption of carbohydrates and, to a lesser extent, saturated fat, these results suggest that in countries transitioning to Western-style diets, violent conflict may drive the population toward an unhealthier diet, contributing heavily to a growing national prevalence of nutrition-related non-communicable diseases.  相似文献

The Canadian dairy, egg, broiler, and turkey industries operate under supply management, a policy regime that sets product prices and allocates production among provinces and ultimately among farms through quotas. The Canadian Farm Products Agencies Act requires that comparative advantage be used to guide the allocation of new quota when increases in consumer demand necessitate increased production. This requirement, however, has not been met in practice. We develop a proposal by Meilke to use quota prices as measures of comparative advantage. We evaluate the quota price approach and other proposed methods, from a Hayekian and Coasean market process perspective. We conclude that quota prices offer an economically justifiable indicator of provincial comparative advantage. We develop an individual‐level general equilibrium model of quota exchange to illustrate the informational content of quota prices as indicators of comparative advantage. We also discuss potential practical challenges of using quota prices as indicators of comparative advantage.  相似文献

This paper applies linear programming cost-minimisation models to the analysis of human diets. The models incorporate considerations of nutritional and non-nutritional factors in diet choice in order to assess the impact of adopting dietary guidelines upon the cost of nutrition-only and palatable diets. The dual prices yielded by the models are used to estimate the total cost of meeting requirements for separate nutrients in diets for different population groups. Sensitivity analysis is then used to derive marginal cost curves for changes in the supply of nutrients covered by the dietary guidelines. The cost and composition of ‘healthy’ human diets contrast markedly with the results of past studies and indicate that economic constraints upon dietary guideline adoption are limited.  相似文献

探讨不同剂量巴拉圭茶对高脂血症小鼠氧化还原状态的影响。通过高脂日粮建立高脂血脂小鼠模型,随机分为模型组、巴拉圭茶低剂量组、巴拉圭茶高剂量组,对照组饲喂基础日粮,模型组饲喂高脂日粮,巴拉圭茶低剂量组、巴拉圭茶高剂量组饲喂高脂日粮并分别灌胃1 g·kg-1、2 g·kg-1巴拉圭茶,连续灌胃4周,处死小鼠,测定小鼠肝脏中活性氧自由基(ROS)水平、超氧化物歧化酶(SOD)活性、过氧化氢酶(CAT)活性、丙二醛(MDA)的含量。与模型组相比,低剂量、高剂量巴拉圭茶可显著降低小鼠肝脏中ROS水平、MDA含量(p<0.05),可显著提高小鼠肝脏中SOD、CAT活性(p<0.05)。巴拉圭茶对高脂血症小鼠氧化应激具有一定的调节作用。  相似文献

A global transition towards diets increasingly dominated by ultra-processed foods (UPFs) has occurred in recent decades to the detriment of public health and the environment. This study aimed to examine long-term trends in the structure and market dynamics of the global UPF manufacturing industry as part of broader efforts to understand the drivers of this transition. Using diverse methods, metrics and data sources, we examined several dimensions (e.g., industry concentration and profitability) according to an adapted structure–conduct–performance model. We found that the global UPF manufacturing industry has evolved to become a major component of global food systems, with its longstanding dominant corporations becoming some of the system's largest accumulators of profit and distributors of capital. It follows that reversing the global UPF dietary transition will require structural and regulatory changes to ensure that population diets, and food systems more broadly, are not subordinated to the interests of powerful for-profit business corporations.  相似文献

Major contributors to the obesity epidemic are societal and result from sedentary lifestyles and consumption of high-calorie diets. Previous studies suggest that food choice behavior is socially transmissible. Hence, knowledge of the impact of social influence on calorie intake is critical to improve the understanding about the outcomes of policies related to healthful diets. There is the need to analyze the influence of social networks on choosing food in a public place. Thus, we interviewed groups of food court patrons in an all-you-can-eat college dining hall. Results show individuals dining in a group with at least one obese group member are consuming more calories from high-calorie foods and fewer calories from low-calorie foods. Food-related interactions in a group influenced food consumption. Hence, dining with obese peers likely increases calorie intake.  相似文献

[目的]随着时代的进步和社会经济的发展,对粮食安全内涵的理解也在逐步深化,粮食安全内涵不仅包括数量方面,还包括营养健康安全,保障居民营养健康成为粮食安全的新时代内涵。基于营养目标的粮食需求研究,建立营养—消费—生产的粮食生产模式,对引导居民合理健康消费和保障粮食安全具有十分重要的意义。[方法]文章首先分析了我国城乡居民营养消费状况,然后基于平衡膳食模式视角,引入标准人消费系数这一概念对我国未来粮食需求进行了更准确的预测。[结果]城镇居民粮食消费已达到高营养目标,但目前农村居民仅达到低营养目标水平,相当于21世纪初的城镇消费水平;考虑人口结构因素,2020年和2030年粮食需求总量分别为4.8亿t和5.6亿t,比没有考虑人口结构变化时分别减少8700万t和2 600万t。[结论]根据分析结果,提出以下几点政策建议:(1)宣传普及营养健康消费知识,引导居民合理膳食;(2)关注人口结构变动,及时调整粮食安全调控机制;(3)优化食品工业的产业机构升级,提高饲料粮转化率。  相似文献

Abstract

A sample of 606 students, staff and faculty from Auburn and North Carolina A&T State universities were self-administered a questionnaire to evaluate their weekly consumption of peanut butter and products containing peanut butter. The age group ranged from 16 to 78 years, with the majority coming from households of less than four individuals. Their incomes were fairly evenly distributed, with 38 percent earning above $40,000, 31 percent with $10,000 to $40,000, and 31 percent earning less than $10,000. Age, ethnicity, convenience, whether the product was served as a side dish, peanut flavor, and knowledge of fat content significantly influenced peanut butter consumption; whereas age, ethnicity, income, crunchiness, nutrition, convenience, and consumer's perception of fat level in the product affected the consumption of products containing peanut butter.  相似文献

The implications of dietary changes for the environment and for human health are well documented, but the impacts on the agricultural sector are less well researched. We fill this gap by specifying scenarios in which European consumers' diets approximate the EAT-Lancet dietary recommendations to varying degrees and estimate the effects on agricultural production, incomes and emissions using an agro-economic modelling framework. The combination of different models allows for a detailed assessment of consequences for the agricultural sector from the global through European NUTS2 level to the farm level at different time scales. Shifting European consumption towards the EAT-Lancet recommendations leads to decreasing production of animal-based products, while production of fruits and vegetables increases sharply. The results indicate that the agricultural sector could benefit from a dietary shift, though the results are mixed at country, regional and farm levels. In particular, countries and regions that are highly specialised in animal farming are likely to lose income—at least in the short run—while regions with higher shares of vegetable and fruit farms can expect income gains. In Germany, pig and poultry farms may experience losses of up to 34% of their income, whereas farms with a high share of vegetables could gain more than 30% in income. Our results have implications for the policies to assist these extensive structural adjustments in response to widespread dietary changes.  相似文献

Mexico is a megadiverse country with large agroclimatic diversity and socioeconomic inequality. These two factors result in strong diversity in diets and agricultural systems within the country. In this paper, we assess the impact of Mexican diets and production systems on the per capita land requirements for food. We estimate it for the extremes: from the very basic diet of the poorest share of the population to the affluent diet of the richest share of the population; and for extensive and intensive systems, with irrigation as the indicator of the intensity of the system. We show that the basic diet produced in rainfed systems requires 1620 m2/cap/yr and produced in irrigate systems requires 700 m2/cap/yr. The affluent diet produced in rainfed systems requires 2540 m2/cap/yr and produced in irrigated systems requires 1230 m2/cap/yr. Hence, differences in diets result in a requirement for 80% or 60% more land for an affluent diet; and differences in production systems result in more than twice the amount of land for extensive than for intensive systems. In 2050, it would be possible to feed the entire population with affluent diets only if all the present area of crop land had the productivity of intensive systems. In contrast, it would be possible to feed all people with a basic diet even if all present crop land area had only the productivity of extensive systems.  相似文献

In this paper, we question the role of added fats on health disparities in the French case and its policy implications. Since low-status populations are proven to have more nutritional pathologies, can we evidence fat consumption specificity in poor populations? We first verify the strong sensitivity of fat consumption to income and education, criteria which both characterize deprived populations. We estimate a demand system taking into account the selection issue. For this we propose a modification of the Shonkwiler and Yen's procedure which, unlike Heckman's, allows participation on every market of products to be controlled for. We use the latter procedure on a set of seven fat categories which have different, including opposite, health attributes. Our results show that segmentation following income and/or education essentially affects price elasticities. This offers different perspectives for health policies. Controlling fat consumption through prices appears easier among low-income households than among low-education households.  相似文献

We present empirical evidence on how changes in food preferences have contributed to nutrition transition, where the dietary pattern of households shifts away from traditional staples. Using household-level time series cross-section survey data for India, we estimate time varying demand elasticities, revealing evidence of the declining importance of cereals in Indian household diets. The estimates show that Indian demand for cereals has become more income inelastic and price elastic. We also find that cereals are a substitute rather than a complement to animal products in household diets. Since changes in elasticities can only be attributed to variation in utility parameters, this indicates that cereals are losing favour with Indian households. These findings have implications for Indian food policy design and implementation.  相似文献

This paper demonstrates a procedure for determining economically optimal rations which avoids problems that arise in conventional analysis of experimental results. It consists of maximising a suitably constrained profit per unit time objective function, itself formed from functions obtained from pig fattening experiments under special Australian conditions. The relevant functions-for consumption of milk and wheat, time to slaughter and percentage lean meatare first demonstrated, followed by a brief discussion of results obtained. Specifcally, it is noted that optimal diets differ according to whether the criterion adopted is profit per pig or profit per pig per week, that dairy farmers fattening pigs should feed substantial quantities of grain, and that the optimal diets are very stable to changing prices. More generally, the procedure avoids the statistical difficulties of conventional analysis of experiments arising from the estimation of weight-gain functions based on actual quantities of food consumed.  相似文献

Worldwide, obesity almost tripled between 1975 and 2016 and is now prevalent in both rich and poor countries. Using annual food availability data produced by the Food and Agriculture Organisation of the United Nations (FAO) covering half a century in 118 countries, this article explores the diets that are central to the problem of obesity, identifying groups of countries with similar consumption patterns. Applying algorithms from the fuzzy clustering literature, five distinct consumption patterns are revealed whose dietary composition broadly corresponds to diets that we label ‘Western’, ‘Traditional’, ‘Mediterranean’, ‘Tropical’ and ‘Vegetarian’. Despite differences in dietary characteristics, all five share two common themes: rising total calories and declining healthiness, both of which are linked to the substitution of plant-based foods with food derived from animals. That the evidence points to a convergence on the ‘Western’ diet, the most obesogenic and least healthy of all the diets we consider, is a cause for concern. The key message is that in a future where people are predicted to live longer – but not necessarily healthier – lives, recent efforts to address the challenge are prescient, and as the results in the article imply, need to be heeded globally.  相似文献

Fababeans have recently been promoted as an alternative crop of western Canadian agriculture. They contain relatively high amounts of protein and metabolizable energy and they offer potential as a substitute for imported soybean meal in animal diets. In this study, the economic competitiveness of fababeans in broiler chick diets is determined. The linear optimizing results of three feeding experiments involving different fababean cultivars and different protein and energy levels at a range of relative prices indicate that fababeans are not competitive with soybean meal at any reasonable price ratio in the diets of young broiler chicks. La féverole a récemment été proposée comme culture de remplacement dans ?ouest du Canada. Elle contient des teneurs relativement élevées de protéines et ?énergie métabolisable, et s'avère prometteuse pour remplacer le tourteau de soja importé dans les rations des animaux. Dans la présente étude, les auteurs ont déterminé la compétitivité économique de la féverole dans des rations pour poulets à griller. Les résultats ?optimisation linéaire de trois expériences ?alimentation comprenant divers cultivars de féverole et différentes concentrations de protéines et ?énergie pour un écart de prix relatifs révèlent que la féverole ne peut concurrencer le tourteau de soja à n'importe quel rapport de prix raisonnable dans des rations pour jeunes poulets à griller.  相似文献
