Abstract

As the fast food restaurant industry grows in the Western industrialized world, it has also become increasingly competitive. In such an environment, marketers are concerned about how to increase or maintain market share through better service quality and effective segmentation strategies. This paper reports a two-phase exploratory study conducted to determine the dimensions of service quality in the fast food industry, from the consumer's perspective. Factor analysis revealed 10 dimensions made up of 57 different attributes. The 10 dimensions were able to discriminate among three groups of fast food patrons, namely: frequent, less frequent, and more frequent patrons. Managerial implications of these findings, for market segmentation, targeting, positioning, and promotional strategies are discussed.  相似文献

Food values have been proposed in previous research as a method of identifying stable constructs of consumer preference. We conducted an online survey of 1950 US respondents using best–worst scaling applying the concept of food values to four specific meat and dairy products: ground beef, beef steak, chicken breast, and milk. We test the applicability of general food values to specific products, while further discovering the nature of heterogeneity of values by defining classes of respondents. Our findings suggest that the general food values previously proposed apply well to specific products of the livestock industry. We also found that the differences between consumer classes were driven primarily by price sensitivity, with many of the most important and least important values remaining the same.  相似文献

A major tenet of Total Quality Management (TQM) is quality provision from the customer's perspective. A common quality measurement technique used by restaurants of all types is the customer comment questionnaire. Available at the table, counter, or by request, the questionnaire attempts to provide feedback to management on the dining experience from the patron's viewpoint. This paper evaluates this popular feedback method through an analysis of current questionnaires in use in franchised fast food restaurants. comparisons are also made with other common feedback methods. ABSTRACT

This exploratory study examines relevant factors affecting consumers' evaluation of product and service quality in the context of Internet retail food purchasing. A total of 489 anecdotes, written by online consumers based on their own shopping experience, were collected and content analyzed. In turn, 18 quality dimensions and 58 sub-attributes were identified. The asymmetric effect of positive and negative attribute-level performances on consumer dis/satisfaction was discussed. The impact of two delivery strategies on consumers' perceived quality was also examined. Finally, managerial implications and recommendations were provided in order to pave the way for possible improvement of the quality of Internet retail food purchasing and, in turn, consumer satisfaction.  相似文献

The recent behaviour of the U.S. economy poses two conundrums: short-term interest rates are much lower than would normally be expected, and the yield curve is flat. These suggest to many European observers that U.S. economic prospects are not as rosy as often depicted. The objectives of this study were to collect data on the barriers to healthful eating among university students and to obtain student feedback regarding a proposed nutrition labeling program to promote healthy eating on campus. The location was a major university in the southwest. The Logic Model guided the development of focus group questions related to the barriers that university students face. To collect quantitative data regarding nutrition knowledge and health consciousness, a Nutrition Knowledge and Health Consciousness Scale (NKHCS) was used. After completing the scale, 30 students participated in four focus groups. Three themes emerged from the focus groups: the need for increased availability of healthy foods, the ability to sample healthy foods, and nutrition labeling of foods. This mixed method approach to the study provided both qualitative and quantitative data, and the results provided important insights from students regarding the development of university‐based nutrition education programs.  相似文献

Does US government policy purposefully benefit particular industries or is industrial policy absent in the USA? Based on a review of recent US policies this paper argues that the USA applies many policies with an industry-specific impact. But these policies do not differ significantly from those in other countries and the process in which US industrial policies emerge severely limits their consistency. What differentiates the USA is a microeconomic business environment that enables a high degree of regional specialization, benefits especially knowledge-driven industries, and raises the impact of innovation and entrepreneurship policies.  相似文献

Compliance with food safety recommendations was assessed among 357 university undergraduates, 112 males (31%) and 245 females (69%), in the context of the health belief model. Concerning meats, 87% of the students complied with purchasing, 75% with storage, and 42% with preparation recommendations often/always. Compliance was high with recommended purchasing (96%) and storage (99%) practices for raw eggs, but only 55% of students prepared eggs safely. Overall, the health belief model was a poor predictor of compliance with food‐safety recommendations. Findings suggest that college students would benefit from interventions focusing on the causes of microbial food contamination and those that assist them in overcoming perceived barriers to adopting safe food‐handling practices. Also, validated instruments are needed to help family and consumer sciences educators identify college students who are noncompliant with food‐safety recommendations.  相似文献

We address the issue of UK firms relatively poor record of corporate community contributions (CCCs) by subjecting them to formal comparison with those of US firms. To this end, we employ data on the top 100 UK, and top 100 US, contributors in 2001. Cross-country differences are described and discussed with reference to a stakeholder perspective on corporate social responsibility, and CCCs in particular. In this connection, we evaluate the role played by the sectoral composition of activities, as well as national, cultural and institutional factors. Our findings highlight a number of significant cross-country differences in the pattern of CCCs and suggest that UK and US firms operate within significantly different stakeholder environments.JEL Classification: M14Stephen Brammer is a Lecturer in Business Economics at University of Bath, with research interests in the area of corporate social responsibility.
