Data from 23 years of the U.S. Consumer Expenditure Survey (1982–2004) are analyzed to investigate cohort effects on food away-from-home (FAFH) expenditures using the age, period, and cohort (APC) model. Nine 10-year interval cohorts are included, from the Interbellum Generation born between 1896 and 1905 to the MTV Generation born between 1976 and 1985. Analyses reveal that later-born cohorts spend more on FAFH, both in dollar amount and in food budget share, compared with earlier-born cohorts. Significant cohort differences in FAFH remain after additional sociodemographic and economic variables are controlled.  相似文献

This paper explores the relationship between consumer unit type and expenditures on food away from home using microdata from the 1989 Consumer Expenditure Survey. A log-linear model is used to purge the effects of income and race/ethnicity from the consumer unit type/food-away-from-home expenditure relationship. The income-and race/ethnicity-controlled propensities to purchase food away from home among eight consumer unit types are revealed in simple percentage form. These adjusted percentages are discussed in regard to current and future business strategy designed to address industrywide declines in expenditures on food away from home. The results offer support for some existing strategies as well as provide the basis for viable alternatives. Log-linear purging is shown to be a valuable tool for consumer researchers.  相似文献

The United States fast-food industry represents an important business sector with respect to national and international economics. Due to the low levels of product differentiation and high industry competition, fast-food companies heavily engage in advertising and branding activities. Quick-service restaurants (QSR) are the largest and growing segment of the fast-food industry. The current study examined the longitudinal relationship between advertising expenditures and sales revenues for the QSR industry and leading QSR brands in the United States from 1986 to 2007. Hypotheses were tested using a time-series regression analysis. Managerial, research, and policy implications of the results are provided.  相似文献

Abstract

As the fast food restaurant industry grows in the Western industrialized world, it has also become increasingly competitive. In such an environment, marketers are concerned about how to increase or maintain market share through better service quality and effective segmentation strategies. This paper reports a two-phase exploratory study conducted to determine the dimensions of service quality in the fast food industry, from the consumer's perspective. Factor analysis revealed 10 dimensions made up of 57 different attributes. The 10 dimensions were able to discriminate among three groups of fast food patrons, namely: frequent, less frequent, and more frequent patrons. Managerial implications of these findings, for market segmentation, targeting, positioning, and promotional strategies are discussed.  相似文献

The market for prepared pet food in the United Kingdom (UK) is worth just over $2.3 billion a year. As a consequence, the pet food industry needs to be responsible, efficient, and at the forefront of technology. This research investigates the technological and industrial environment for innovation, which currently exists in the UK pet food industry. It draws primarily on existing research and secondary data sources including organisations such as the Pet Food Manufacturers' Association. The pilot study involved a detailed analysis of the issues regarding technological innovation in the pet food industry in the UK. In particular the results of the study have been analysed in detail using a “cross indicator analysis.” The research reveals that pet food SMEs in the UK are key players in the pet food industry and are willing to innovate to enhance their product lines even if at a moderate level.  相似文献

Food away from home, especially fast food, is often cited as contributing to obesity and other nutritional problems. This negative publicity can affect demand. Models explaining visits to table service and fast food restaurants are estimated, with nutrition variables added to standard demographic measures. Demographic effects are similar to those in past studies. Nutrition factors have little impact on table service, but nutrition‐orientated consumers tend to have lower fast food consumption.  相似文献

Purpose: The research investigates the impact of emergent technologies, specifically supply-chain technology and food-production technology (i.e., genetically modified organisms [GMO]), on global food retailers' supplier decisions.

Methodology/approach: Qualitative research is conducted to examine technology-related vendor selection criteria of food retailers in 5 European countries comparing to those in the US.

Findings: Our findings show that global food retailers view supply-chain technology as a competitive advantage and is integrated as an important selection criteria; however, selection criteria differ for food-production technology between the United States and the European countries. European food retailers explicitly oppose food-production technology (GMO), while U.S. food retailers implicitly accept food-production technology. Emerging from this opposing view, global food retailers establish similar criteria for organic food (non-GMO) supplier selection: reliability, distance, consistent quality, and relationships with suppliers.

Research implications: Applying the supplier choice criteria framework (Lehmann and O'Shaughnessy 1982 Lehmann, D. R. and 'Shaughnessy, J. O. 1982. Decision criteria used in buying different categories of products. Journal of Purchasing and Materials Management, 18: 914.  [Google Scholar]) to further analyze organic food suppliers, we find that reliability (adaptive criterion), distance (integrative criterion), consistent quality (performance criterion), and relationships with suppliers (economic criterion) are essential, but price is not.

Practical implications: This study suggests that to sustain competitiveness in the global food market, food suppliers not only need to ensure technological compatibility in supply-chain, but also adapt to the local food-production restriction (GMO) and organic food selection criteria preferences.

Originality/value/contribution: Supply-chain technology is strategically important and is adopted by global food retailers for competitive advantage; yet, there are dramatic differences regarding the acceptance of food production technology. This research contributes to the better understanding of how technologies exert significant and strategic weight in the food supplier selection process.  相似文献

In recent decades, gradual changes have been occuring in the socioeconomic environment and the demographic structure of the U.S. population. These changes, in combination with technological advancements in agriculture and marketing, have significantly influenced food consumption patterns. Changing food consumption patterns as well as emerging sources of food supply are impacting the entire food industry. To insure industry growth, food professionals need to continually monitor the activities and lifestyles of the buying public. The objectives of this article are: to provide an overview of food consumption trends during the last two decades, to identify factors responsible for such changes and finally, to discuss the effects of changes in domestic demand on the food industry.  相似文献

This study investigates Western Australia’s consumer attitudes toward and preferences for locally produced food products signified by a state-funded campaign logo, Buy West Eat Best (BWEB). A choice experiment using both a fresh and a processed food product (skinless chicken breast and fruit yogurt) is conducted to assess willingness to pay for a local production attribute and other label claims. We find that consumer awareness and preference for local foods is high. However, this high preference is not because the product is locally produced but because of the local attributes associated with high-quality products. The study highlights the importance of successfully differentiating products through credible labeling schemes in order to capture market premium.  相似文献

Food allergy is a chronic disease that can only be managed through avoidance of problematic proteins in the diet. Inappropriate communication about food allergens can cause stress and insecurity, which may have a negative impact on quality of life. The aim was to investigate whether information provided through current labelling practices meets the need of food allergic consumers. A total of 40 participants (20 adult food allergy suffers and 20 parents of food allergic children) were recruited from two different European countries (Greece and The Netherlands), and interviewed while shopping in a supermarket. Participants were asked to purchase 15 potentially problematic food items as if for their own household. Their information search behaviour was observed, and participants were questioned about their preferences for food allergen information provision. Participants reported experiencing problems associated with current food allergy information provision. It was reported that inappropriate use of fonts, colours and languages, application of precautionary labelling and lack of harmonization in labelling practices across countries can cause (un)necessary dietary restrictions for food allergic consumers. Research is needed to investigate the feasibility and implementation possibilities for new information delivery strategies and amendments to existing European labelling policy.  相似文献

Using the Current Population Survey data for 1999, a bivariate probit model was estimated to determine food stamp and food pantries participation for low‐income households. Household income, the level of food insecurity, household structure, and metro versus nonmetro residence affected participation decisions in both programs. Shorter application forms for food stamp benefits encouraged food stamp participation. Food Stamp Program participation and food pantry use were found to be positively correlated.  相似文献

Food values have been proposed in previous research as a method of identifying stable constructs of consumer preference. We conducted an online survey of 1950 US respondents using best–worst scaling applying the concept of food values to four specific meat and dairy products: ground beef, beef steak, chicken breast, and milk. We test the applicability of general food values to specific products, while further discovering the nature of heterogeneity of values by defining classes of respondents. Our findings suggest that the general food values previously proposed apply well to specific products of the livestock industry. We also found that the differences between consumer classes were driven primarily by price sensitivity, with many of the most important and least important values remaining the same.  相似文献

The authors surveyed consumers for preferences on allergen advisory statements on food labels (N = 1,243). They also conducted an experiment to assess how consumers use advisory statements (N = 4,049) to make food consumption decisions. Results show that food allergic individuals, including caregivers to food allergic individuals, and a control group of nonallergic people preferred “Allergen Information: May Contain …” over three other statements tested. The experiment revealed measurable differences among the statements in how they are used to make food consumption decisions. Statements rated as more believable and more helpful also received higher ratings on a “likelihood of eating/serving” measure.  相似文献

Region of origin labeled food products consumption is influenced both by cognitive motives related to the individuals' health and safety concerns and by affective motives in relation within the pleasure, the emotional states and the social values. The objective of our study is to examine the effect of involvement and its nature (cognitive vs. experiential) on consumer preferences toward region of origin labeled food products. Discriminant analysis shows that both the cognitive and experiential dimensions of involvement discriminate between the two groups: those who prefer regional food products and those who prefer either national or foreign products. By targeting each profile by an adequate communication strategy, food labels could meet consumer expectations. Thus, their acceptance becomes higher.  相似文献
