We apply sets of weekly retail and household scanner data to estimate consumer demand of selected organic and conventional fresh beef products in the Canadian retail market. The main contribution of our study stems from the application of a two‐stage procedure that provides new and deeper insight into consumers' responses to changing retail environment and pricing for organic and conventional meat products. Combined knowledge of point‐of‐sale consumer behaviour for value‐based products, such as organic products, and distinct socio‐demographic profiles of buyers vs. non‐buyers of meat is especially interesting for retail managers and meat industry stakeholders. First, household meat consumption patterns are investigated based on household scanner data that track household's meat purchases in the period 2006–2007. The second step of analysis then involves the estimation of an almost ideal demand system for selected organic and conventional fresh beef products using retail scanner data for the period 2000–2007. The introduction of greater selections in organic product lines across mainstream supermarkets in Canada in response to consumer health concerns is expected to spur retail competition in an otherwise saturated Canadian retail market. The analysis of socio‐demographic profiles in beef consumption using individual household's purchase data reveals that besides regional differences in preferences, household size and resource characteristics are major determinants of point‐of‐sale beef purchase decisions. Our demand system results indicate that organic beef is highly dependent on price and expenditures, whereas demand for conventional beef is mostly driven by income, habits and ‘typical’ Canadian seasonal beef consumption patterns. Altogether, our conclusions on organic beef vs. conventional beef buyers may have further implications for institutional regulations.  相似文献

Differences in food expenditures in married‐ and single‐parent families are examined using the Consumer Expenditure Survey Diary Component (1990–2003). Single parents, compared to married parents, allocate a greater share of their food budget to alcohol and food purchased away from home; conversely, they spend a smaller share of their food budget on vegetables and fruits. Compared to married parents, single fathers spend a greater share on alcohol and food purchased away from home and a lesser share on vegetables, fruits, meat and beans, desserts and snacks, and prepared foods. Single mothers, compared to married parents, spend a greater share on grains and nonalcoholic beverages and a lesser share on vegetables and alcohol. Single mothers and fathers differ from each other in almost all categories of food and beverage expenditure. We also find important differences based on the employment status of parents in the household: families where all parents are employed, irrespective of family structure, spend a greater share of their food budgets on food purchased away from home and a lesser share on vegetables, fruits, milk, and meat and beans compared with married‐couple families in which the mother is not employed. We discuss ways in which family structure and parental employment status may be associated with food purchasing decisions.  相似文献

Beef and sheep products represent the largest emitters of greenhouse gases within the meat group. One way of encouraging Scottish households to substitute purchasing lower carbon footprint meat products such as chicken is through a carbon consumption tax. In this article, the effects of such a tax were studied using a dynamic per capita error correction version of the almost ideal demand system (AIDS). The data used in the analysis were from a Scottish household panel dataset for the years 2006–2011, which allowed disaggregation by three socioeconomic groups. The results suggest that the net application of meat taxes is likely to reduce demand for beef and sheep products irrespective of socioeconomic group. Application of all meat carbon consumption taxes has the potential to reduce household demand for meat products, resulting in a likely 10.5% reduction in Scottish meat emissions.  相似文献

This study explores factors related to household income growth in a two-period timeframe. using data from the 1983 and I986 Survey of Consumer Finances. Regression results explain 81% of the variation in household income. Household income in the first period, age, marital status, education, job status and occupation were found to be important determinants of various levels of household real income growth. Implications for consumer education, financial planning, family economics and welfare policy are discussed.  相似文献

Using data from the Nationwide Food Consumption Surrey, 1977–78, this study assessed the influence of household size and composition, household income, and eligibility/participation in the Food Stamp Programme (FSP) on the weekly money value of specified food groups used from the household food supply. Mean money values of foods by food groups were calculated for various sample partitions and proportions of total food value allocated to the 12 specified food groups were analysed using ordinary least squares regression. Results indicated that household size had a statistically significant impact on household food consumption patterns. As per capita household income increased, percentage allocations to high-cost meats and beverages generally increased while percentage allocations for the other 10 food groups decreased. The money value of food used per equivalent food energy need increased with decreasing household size and with increasing per capita household income. These relationships occurred for total food and for most of the specified food groups. Households that participated in the FSP used food with higher money value per-equivalent food energy need than did households who were eligible but did not participate in the FSP.  相似文献

Consumers do not easily trust brands’ claims of naturalness, making it essential to understand the drivers of loyalty and the underlying brand love for such products. Responding to this need, the present study developed a conceptual model based on the Behavioral Reasoning Theory (BRT) to examine the antecedents of brand love. The model was tested using data collected through a cross-sectional survey. The findings suggest that health consciousness is positively associated with reasons for consuming natural products and attitude, which, in turn, are also positively associated with each other. At the same time, reasons for consuming natural products and attitude are positively associated with brand love toward natural products. Whereas, reasons against consuming natural products are negatively associated with attitude and have no association with either health consciousness or brand love. Furthermore, of the two proposed moderators (environmental concern and household size, only environmental concern had a moderation effect on the association of brand love with its antecedents. This study thus provides useful, practical, and managerial implications.  相似文献

The study aims to provide a critical review of the literature on the consumer interest in the UK in organic food, with a particular focus on organic meat. Given that people are more likely to purchase products if they have faith in them, the regulation of organic food standards is reviewed to explore issues affecting consumers. This is followed by a review of the organic meat sector. Aspects of the consumer interest considered in this paper include consumer information, consumer access, consumer safety, consumer choice and consumer representation. As the literature on organic food/meat in the UK is extensive, it was therefore necessary to be selective with regard to the publications suitable for this review. Most of the literature selected for this paper has been drawn from UK publications, although several European and international sources have also been used. The review found that there is a considerable level of interest in the UK organic meat sector. As the regulation of organic food produced is set at varying standards across the European Union, this could lead to consumers being misled regarding the quality of products offered. It was also found that, although consumers perceive organic foods as healthier, more nutritious and tasting better than non‐organic products, the literature shows that this may have only a limited basis on fact. Contamination of organic products with pesticides and even genetically modified ingredients is always possible. Organic farmers are permitted to use other ingredients in organic meat products that may be harmful to health. Escherichia coli and Salmonella risks associated with conventional meat also appear to affect organic meat. Consumers need clear, accurate and reliable information about organic meat. They also need to be provided with safe products, a choice of organic products, access to organic products and to be represented effectively.  相似文献

One distinct change in Malaysians' food consumption behavior has been the preference toward meat products. Thus it is meaningful to gain insight of meat consumption patterns. As the market becomes increasingly market-led, information on current meat consumption patterns is required to assess how they are likely to change as prices and incomes change. This study attempts to provide a better understanding of demand for meat products in Malaysia. By utilizing data from Household Expenditure Survey 2004/2005, Engel curve analysis was conducted to derive income elasticities of meat products from QUAIDS model. The estimated income elasticities show that current food consumption patterns are showing signs of convergence toward a Western diet, exhibiting tendency for preference toward red meats (mutton and beef) over white meats (poultry and pork). The estimated elastic own-price elasticities indicate that Malaysian consumers are sensitive to the change in prices of the meat products, with other things remain constant.  相似文献

Food retailers are important actors in the development of a more environmentally sustainable food system. They are powerful in their procurement role and have the potential to promote and encourage consumers to buy climate smarter food. While food retailers have developed environmental visions, policies and goals, a major question is to what extent these commitments translate into action in the products sourced and promoted. This paper aims to explore the ways and extent to which food retailers assist consumers to make climate smarter food choices, more specific to reduce their meat consumption, and to identify potential and perceived difficulties towards doing this. The empirical data is based on interviews with 17 Swedish food retail representatives. The findings indicate that food retailers address climate change in their environmental policy statements and have environmental targets for retail operations, such as energy and transport efficiency and recycling of waste. Moreover, retailers promote and encourage consumers to buy organic, local, and seasonal food and to minimize food waste. No initiatives are taken to help consumers reduce their meat consumption. Yet, there is a growing consensus among scientists that meat production is a large contributor to greenhouse gas emissions. Food retailers seem reluctant to guide consumers to climate smarter food choices if it means reducing the meat range or the promotion of meat. To broaden the range of high quality and more expensive meat is seen as a more feasible option. The meat category is perceived as important to attract new and keep loyal customers.  相似文献

This research investigated the determinants of bottled water consumption using household survey data from a small, poor town in Guatemala. Hurdle (two‐part) models were estimated to account for 73.3% of sampled households that did not consume bottled water. Findings indicated that the vast majority of respondents perceived minimal health risks from drinking bottled water. In contrast, few respondents (3.2%) believed that tap water is totally safe to drink. Estimation results indicated that bottled water consumption was positively associated to health risk perceptions, household income, education and market access. Household size had a negative effect on the likelihood of consuming bottled water. However, once the household had decided to consume bottled water, its consumption increased with each additional household member.  相似文献

This paper addressed consumers’ attitude towards food labels and the influence of different aspects of meat labels on beef, poultry and seafood consumption using data from a national survey in the USA. Approximately 70% of the respondents reported that food labels helped in the purchases of beef and other meat products. While 50% thought that the present level of information on meat labels was about right, about 30% thought that it was insufficient. Similarly, 80, 81, 60, and 80% of the respondents thought that it was very important that meat labels contain information regarding nutrition, ingredients, health claim, and production process respectively. Those respondents who thought that nutrition and ingredient information on food labels were very important also thought that meat labels helped them select beef and other meat products. Consumer preferences for nutrition and ingredient information on food labels were positively related with meat consumption frequency.  相似文献

When faced with conflicting information, consumers often wonder what the “right” consumption level is. A highly relevant context that is often associated with such uncertainty is food consumption (e.g., of meat or dairy products), where consumers seek information to determine whether and how much to consume, and often a recommended goal from health experts is to reduce overconsumption. We apply the theory of goal settings as reflecting such information, focusing on specific goals (e.g., “eat meat twice a week”) versus general goals (“eat less meat”). Based on a series of three experiments in both online and field settings with 674 participants overall, we show that in food consumption contexts with conflicting information, general goals set by health experts are less effective than specific goals in battling overconsumption. Perceived value of information was identified as the underlying mechanism as it mediated the effect of conflicting information on reduced overconsumption. Prior work suggests conflicting information is typically disadvantageous for consumers. Our research demonstrates how consumers can benefit from communication emphasizing specific goals when information conflicts. It contributes to policymakers, health experts, and social marketers that search for effective marketing strategies to reduce overconsumption of items that may be associated with conflicting information.  相似文献

Households' changes in consumer debt from 1983–89 were examined using the panel dataset of the Survey of Consumer Finances. Logit models of the odds of an increase and a decrease in debt quintile revealed four factors hypothesized by Bryant (1990) to be symmetrically related—household size, respondents marital status, inflationary expectations, and time preferences. Asymmetrical effects of other variables, including life cycle consumption needs, present resources, expected future resources, and preferences were found for either the odds of an increase or decrease in consumer debt, but not both. Households' access to credit markets and changes in economic status between 1983 and 1989 also significantly affected the odds of change in consumer debt status, albeit not consistently across models. Household level change in consumer debt and the factors that affect it are more complex than hypothesized.  相似文献

This paper uses the binary choice model to identify the factors that are significantly influencing the household purchase decisions of seafood products for home consumption in Auckland, New Zealand. It is found that ‘quality’ and ‘cooking easiness’ are the main product attributes that significantly influence households’ choices of seafood in Auckland. Also, the representative household has shown a strong preference for fresh and other alternative seafood products, including processed, smoked and canned, over frozen products. Retail outlets are found to be more attractive to the household purchasing seafood for home consumption. The New Zealand seafood industry may find this baseline study useful as a guide to developing future research structure on the domestic market.  相似文献

The purpose of this study is to investigate the determinants of Halal meat consumption within Turkish Muslim immigrants in Germany using the theory of planned behavior (TPB) as a conceptual framework. The role of self-identity as a Muslim, dietary acculturation in the host culture, moral obligation to purchase Halal meat, and trust on the authenticity of Halal meat is explored. A quantitative research methodology using an online questionnaire survey was used. Cross-sectional data were collected through a survey of 464 Muslims originating from Turkey and currently living in Germany. A positive personal attitude toward the consumption of Halal meat, motivation to comply others, the perceived control over consuming Halal meat, and the availability of Halal meat predict the intention to eat Halal meat among Muslims. This study is one of the few studies investigating the determinants of Halal meat consumption in a Muslim population in Germany using the TPB within a food, religion, and migration context.  相似文献

Malaysia is currently enjoying an economic revival, resulting in a rising per capita income and an increasing urban population. There are consumers whose taste buds have become more accustomed to international cuisines, including meaty Western food, to satisfy their quest for diversity in their new lifestyles. This group of consumers in Malaysia plays an important role in shaping the rising trend in the consumption of meat products, and this changing attitude calls for empirical research to clarify factors shaping it. The results also indicate that there are three factors (attributes of beef cuts, quality and safety, and the variety of Malaysian dishes) that greatly influence the preference for beef consumers toward their consumption of beef cuts. It was also determined that four factors that influenced the preference for non-beef consumers are price of beef cuts, lifestyle, risk associated with beef cuts consumption, taste, and preferences influencing non-beef consumers.  相似文献

Consumers and institutions make purchase and potential consumption decisions on behalf of other product users on a daily basis. Pet foods are one example of a product in that situation. The objective of this study was to determine what aspects of pet food appearance characteristics determine higher liking among Thai consumers. Consumers (n = 120) evaluated a total of 30 samples that varied in color, shape, size, and kibble composition. Information on overall liking, shape liking, size liking, and color liking was collected. Additional information was collected using a check-all-that-apply question regarding product characteristics. The results indicated that color and shape were important for Thai consumers; specifically, a yellowish color and bone shape were liked best. These results are important for pet food manufacturers and marketers in developing new products, as well as for product marketers in other consumer goods, such as child food, medications, food aid, and other divisions.  相似文献

It has been reported that consumers in different countries have distinctive perceptions of, and attitudes to, products. This study investigated consumers’ thoughts on new food products in south‐east England (n = 222) and Beijing, China (n = 139), using a questionnaire‐based largely on the Theory of Reasoned Action. Results indicated that consumers in both countries believe it is necessary for the food industry in their respective countries to introduce new food products and they would like to try new products. There appears to be great interest in new products among the Beijing Chinese, with most interest in new healthy food products. The influences on choices suggest that a marketing focus on quality, utility and health benefits would be most fruitful, as personal beliefs were more important in intention to purchase than the influence of other people. Results point away from the expected result that the Chinese, as a collectivist culture, would place more emphasis on others’ opinions than their own beliefs. This may be linked to food not being an item of conspicuous consumption, or to a cultural shift among urban Chinese.  相似文献
