Abstract

People are making food choices based on fat, calories, and cholesterol, while demanding products that are appetizing. Due to such health issues and the convenience of alternative meat products, consumption of beef has declined among American consumers. In this study emu meat and US Select grade beef ribeye steaks were compared for palatability by a 10-member trained sensory panel. Tests for fat (ether) and moisture (vacuum dry) were performed, along with Warner-Bratzler shear tests. Emu meat was rated as more tender, juicier, and more flavorful than the beef ribeye steaks. Wamer-Bratzler shear measurements were consistent with sensory panel findings. Proximate analysis showed the emu steaks contained less fat and more moisture than the beef ribeye steaks. Emu meat is a “red meat” that may ease consumers' concerns about the consumption of red meat. Its potential as a red meat alternative is due to its tender, juicy, flavorful, and lean qualities.  相似文献

Abstract

Consumers are familiar with evaluating the acceptability of fresh and cooked ground beef in grocery stores and restaurants. Consumer acceptability of either fresh or frozen ground beef or ground beef blended with ground turkey has, however, received little attention. The acceptability of the blended beef turkey product is assumed to be relatively high given its origin from the traditional ground meats. Several different combinations of ground beef and ground turkey were evaluated for sensory color/texture differences in frozen and grilled forms by a 115-member consumer taste panel. Their evaluations of both frozen and grilled samples were influenced by previous experience with the combined product in the home and willingness to purchase the new product prior to evaluation of actual samples.  相似文献

Abstract

Little research has examined how consumers respond to sales promotions in new product categories. This article fills this gap by integrating research on reference prices with literature on sales promotions for new product categories. Existing research suggests that consumers respond more favourably to non-monetary promotions (e.g. extra free promotions) than monetary promotions (e.g. price discounts) because non-monetary promotions are framed as segregated gains rather than reduced losses. However, both kinds of promotions are widely used in practice, suggesting the importance of other contributory factors. With a consumer experiment on a national panel of consumers, this research demonstrates that extra free product promotions are most preferred for existing products, and introductory low-price promotions are preferred for innovative products. The moderating effect of a product's innovativeness is explained via a new relationship in the marketing literature, whereby perceived risk mediates the relationship between perceived innovativeness and a consumer's tendency to stockpile.  相似文献

ABSTRACT

This study aims to measure the effects of market demand and seasonality on new product introduction. Major factors contributing the variability of market demand and seasonality of new products have been discussed in reference to timing of introducing new products, variability of consumer preferences, retail sales, and product promotion. The study is based on 243 new products in selected self-service stores in Mexico, which belong to major food products sectors for the reference period 2002–2006. Results of the study reveal that market demand and seasonality factors are most important for the timing of new product introductions, as such conditions determine success of the new products in a given market.  相似文献

ABSTRACT

This article focuses on a consumer comparison of fresh tofu and frozen tofu, and the investigation of consumer perceptions of and responses to, both products. A literature review of consumer perceptions and attitudes toward soy products was carried out. Consumer perceptions and affect were then qualitatively investigated using separate focus groups composed of “soy-users” and “health conscious” consumers. Extensive taste tests of the product, using five different recipes, comparing and contrasting frozen versus fresh forms of tofu were conducted to obtain sensory evaluations. The results indicate that many consumers are unfamiliar with the product, yet tofu is perceived to be an acceptable food for those inclined to use soy-based products, as well as those who are otherwise healthy eating conscious. In taste tests, it was found that the recipes in which tofu was disguised were preferred. In addition, frozen tofu was generally found not to be perceived as markedly different from the fresh product. Implications of the findings for marketing fresh and frozen forms of tofu are discussed.  相似文献

Abstract

Trade shows have long been recognized as an important marketing tool when introducing new products. This study examines the effectiveness of trade shows across the product life cycle (PLC). The results indicate that trade shows are an effective promotion tool for products in any stage of the product life cycle, but the nature and objectives of show use change over the life cycle.  相似文献

ABSTRACT

This study extended current understandings of the relationships among domain specific innovativeness (DSI), the desire for unique consumer products (DUCPs), perceived new product characteristics (PNPCs), and Chinese consumers’ new product adoption behavior. It also investigated the indirect effect of vicarious learning behavior on Chinese consumers’ acceptance of new products. Data was collected in Shanghai, China. The results demonstrated that DSI and PNPCs were the primary drivers of new product adoption. The study also showed that PNPCs played a mediating role in the relationship between vicarious learning and the adoption of new products by Chinese consumers. The results confirmed the predictive power of DSI and how PNPCs affect Chinese innovative buying behavior. The results also suggest that PNPCs facilitate Chinese consumers’ new product learning behavior.  相似文献

ABSTRACT

Dot.com stocks skyrocketed to unparalleled heights in 1999. Many pundits proclaimed Dot.coms the “industry of the new millennium.” In contrast, 2000–2001 ushered in a shocking Dot.com collapse. Today, many are asking what went wrong? This study examines a model that may help identify failure points and forecast Dot.com success and failure. The results of the study indicate that shopping products are a category of products that consumers are very willing to purchase online. Convenience products, specialty products, and unsought products are categories of products consumers are very unlikely to purchase online. The study concludes with some intriguing and important implications for Dot.com retail managers and researchers.  相似文献

SUMMARY

Laws and regulations govern many aspects of life in order to guide and protect individuals. The Food and Drug Administration regulates the development, production and marketing of foods, pharmaceuticals, and biotechnologies to maintain safe and high quality products for consumers. However, in recent years, food manufacturers seem to have forged ahead of the FDA's regulations and entered uncharted, unregulated areas. This paper examines the impact the FDA has on new food product development, particularly the impact on new technological food products and suggests the use of a team-based approach in evaluating and establishing regulations in the food industry.  相似文献

Abstract

Understanding the consumer’s tendency to adopt new products is an ever-present essential for successful marketing campaigns. This paper presents the findings from two empirical studies that investigate the relationship between consumer innovativeness, price-prestige sensitivity, and need for emotion. A questionnaire survey was used to collect data in both studies from a sample of 668 respondents in two cities in England. The findings show that consumer innovativeness is determined by an individual’s sensitivity to price and their need for emotion. While innovative consumers are sensitive in relating price to prestige, this dispositional relationship varies across products. Furthermore, the findings suggest that enjoyment, which facilitates emotional openness and receptivity, influences innovative consumers to take the emotional route, besides the price-prestige route, to the adoption of new products. These findings have a number of important implications for marketers, particularly for the success of marketing campaigns targeted at innovative consumers who find enjoyment in using new products and are prestigiously sensitive to price.  相似文献

Abstract

This study evaluates the reasons why new products fail, and recommends a Strategy for New Product Development to avoid such failures. Using a sample of four products, the Ford Edsel, Coca-Cola's New Coke, the Sony Betamax, and the RCA Videodisc, where the introduction of a new product was unsuccessful, as research data, it is determined that the most common reasons for a products failure are poor planning, poor management, poor concept, poor execution, poor use of research, poor technology, and poor timing. A recommended strategy for successful new product development includes a sound concept, an environmental assessment, management and planning, technological feasibility, research, quality assurance, and customer feedback.  相似文献

ABSTRACT

Taking inspiration from assemblage thinking and the vitality of matter, this study examines the negotiated, contested and nonlinear formation of highly marginalised and stigmatised alternative food market. The analysis of an ethnographic case study shows that tensions of disorder, abjection and dangerisation spark when components of an alternative food market assemblage misaligns with prevailing social norms, values and institutional arrangements. Although these tensions threaten the alternative food market assemblage, further analysis reveals the capacity of food to assuage these tensions and this occurred, in part; because food catalyses human engagement through visceral encounters, bodily interactions and contagious magic. To that end, the study sets a new agenda for alternative market research to consider the sensory, corporeal and magical capacity of matter to provoke in humans a new sensitivity to our wasteful practices, endangered planet, social inequalities and prejudices.  相似文献

New product development is an important aspect of service marketing. Information, however, is sparse on the actual development processes that are used by service firms to develop these new products. Utilizing a case study approach this article traces the development of a new service for a major UK based financial institution. Through an in‐depth examination of the processes it was found that a complex development system was used. The authors were able to identify a number of factors that were essential to the successful development of this new product.  相似文献

ABSTRACT

Purpose: This research examines how satisfaction toward a product and its associated services offered together by a single provider jointly affects behavioral intentions toward the provider.

Design/methodology/approach: In this study, empirical tests were conducted using longitudinal data spanning 5 years from a multinational company that offers both products and associated services as part of a consumption system to their customers.

Findings: Results show a joint congruent effect of product and services satisfaction on behavioral intentions is linear and positive. It appears that offering great service cannot compensate for less-than-adequate satisfaction toward the product. The results further highlight decreasing customer sensitivity to improvements in both sources of satisfaction and imply that focusing on too high levels of one type of satisfaction for their customers can actually be counterproductive for firms.

Research Limitations: Our model was tested using the data obtained from a single firm. Future research could test this model with data from multiple firms in various different industries and establish broader generalizability to the findings.

Practical Implications: Findings provide managers with insights on how to allocate resources across product and service spaces and to manage product and services revenues over time. Results also indicate that customer behavioral intention ratings are more weighted on product quality over the service received by them. However, mere improvements in the product cannot provide the highest desired results and therefore quality improvements in the product need to be complemented by improvements in service quality.

Originality/Value: There is a rapid emergence of the phenomenon of manufacturers providing both products and services as an integrated consumption system to their customers. While the provision of both product and service subsystems by the same firm leads to certain synergies, there are obvious costs to the development of new service capabilities and coordination with existing product capabilities. Our research intends to address this issue.  相似文献

Abstract

With the advent of NAFTA and the liberalization of Latin American markets, Mexican firms have gained new strategic options, many of which revolve around exporting regionally or to the United States and Canada. The studies explore consumer reactions to Mexican products. The first study compares value perceptions of a cross-national sample of Mexican, US and Venezuelan respondents toward US and Mexican products. It also explores the moderating effects of product content and financial risk on value differentials. The second study, limited to Mexican and Venezuelan respondents, looks for evidence of a home country bias. While the strategy implications for Mexican products differ according to a product's level of content and financial risk, the studies indicate that inter-regional trade is a viable possibility.  相似文献

PurposeThe study models factors affecting brand category choice for generic as well as national brands, and next contrasts them to a new brand category: premium generic brands (PGB). PGB are a new occurrence in brand and product management, and consumer reactions to PGB are not yet well understood.Design/methodology/approachThree purchase motivation scenarios were presented to 553 consumers to test for their purchase intentions for self-consumption, family use or gift giving. A quasi-experiment was chosen where respondents were exposed to store-like presentations of actual real life products and asked for their likelihood to choose the national or generic brand over the new PGB. The study applied multivariate testing such as MANOVA.FindingsSeparate models were developed for food and non-food choice through backward deletion regression analyses, and the most parsimonious models revealed strong similarities for self as well as family consumption choices, but distinct drivers for gifts. Value for money, image and satisfaction are key factors in brand choice overall, but for gifts, ‘image’ overpowers all other predictors.Originality/valueThe study identified the Chinese as a distinct consumer segment for brand choice since they are more open to potentially consider PGB as gifts, whereas Caucasians only buy national brands for gift giving.  相似文献

Abstract

During the last fifteen years there has been a substantial restructuring of retailing in Europe. The implications of this reach beyond Europe. The restructuring involves not only competitive relationships amongst retailers but also involves new forms of relationships with suppliers. A new perspective of the role of retailing is emerging that places retailing in a global framework of international store operations, international sourcing of products, international flows of management and managerial know-how, and international awareness by consumers of the retailers who are becoming international brands. The aim of this paper is to place the restructuring in context, to consider the nature of it and to explore how the new global framework will begin to have effects for distribution industries in Asia.  相似文献

ABSTRACT

Marketing has been dramatically changed by the Internet, the old rules do not apply. The Web allows companies to create products using micro-segmentation for target markets that are extremely small. Firms that want to be successful have to learn about resonance marketing. Resonance marketing used in conjunction with cause marketing and/or multicultural marketing can help a company find new market niches, charge premium prices. It can also be of great value to those interested in starting a small business.  相似文献

Abstract

Following the causal complexity theory, fsQCA has emerged as an advanced methodology in examining hypotheses and creating new theories in social science. However, fsQCA falls short dealing with structural associations and with latent variables when multi-faceted scales are combined into a single indicator by mean. To extend the application of fsQCA, the study demonstrates an approach to investigate a multi-layered problem of eWOM, social influence, and product adoption intention. The findings from fsQCA successfully confirmed the results from the statistical approach that eWOM and social influence have structural associations with customer adoption intentions of new high-tech products.  相似文献
