Adapting responsible food marketing practices to different customer types can make a valuable contribution to reducing food waste. The current study investigated the relation between food (waste)-related lifestyle patterns and self-reported food waste, choices for suboptimal food, and food waste awareness using a survey with 4214 consumers across five Northern and Western European countries. Results show differences in food wastage, suboptimal choices, and awareness for five clusters of consumers identified on the basis of food (waste)-related lifestyle patterns. Findings of commonalities allow deriving food marketing actions targeted to these different consumer lifestyles.  相似文献

Past studies have considered the impact of fashion on consumer textile disposal behaviour, but have focused mainly on drivers of clothing waste. There is a lack of research that examines consumer attitudes towards fashion and their disposal methods. This study conducted an online survey of 410 people in Ontario, Canada with varying demographic characteristics to assess how they currently manage their textile waste including resell, swap, take‐back, donation and disposal. Respondents were asked about their fashion interest and shopping frequency and were assigned a fashion index value. The fashion index value is not a means of grouping consumers but is instead a continuum to model interest in fashion, with one extreme representing fashion consumers and the other representing non‐fashion consumers. Statistical analysis was then used to establish whether there is a link between textile waste behaviour and fashion index. The results indicate that consumers with a high fashion index (i.e. fashion consumers) and consumers with low fashion index (i.e. non‐fashion consumers) manage their textile waste differently. While the majority of participants donate and dispose of unwanted clothes, fashion consumers are more interested and more likely to participate in alternative methods (e.g. resell, swap, and take back) for removing unwanted textiles. Although fashion consumers produce more textile waste than non‐fashion consumers, textile consumption cannot be directly equated with textile waste since fashion consumers were found to have a lower disposal rate than non‐fashion consumers (38 percent to 50 percent, respectively). The distinct disposal characteristics of fashion and non‐fashion consumers (i.e. interest and willingness to participate in alternative channels) allows strategies to be tailored accordingly so that the amount of waste going to landfill can be reduced.  相似文献

ABSTRACT

Recently, there is growing focus on quantifying food waste problem and analyzing its causes due to an imminent challenge: feed nine billion people by 2050. Among developing countries, we focus on Pakistan which has the sixth largest population in the world and faces serious issues of food insecurity and malnourishment. Astoundingly, despite the gravity of the situation the available research on the issue is almost non-existent. Here, in this first-of-its-kind study for Pakistan we attempt to measure the quantum of food wastage and study its underlying reasons across restaurants in the country’s second largest urban center, Lahore, which is also popularly designated as “the culinary capital of Pakistan”. Segmenting restaurants according to the niche markets they target—as high-end, medium-end, and low-end—and using actual measures of daily wastage, we find overproduction and liability concerns as the prime reasons of excess food preparation and its improper disposal.  相似文献

A primary cause of food waste in households is a lack of food capabilities. Yet, the antecedents of food capabilities and its relationship with causes of food waste across different situational contexts remain poorly understood. We apply self-efficacy theory in combination with convenience orientation and good provider identity in a mixed-methods study. Findings reveal that the sequential structure of self-efficacy explains how capabilities contribute to food waste avoidance. A good provider identity, however, increases food waste, and also turns out to further convenience orientation. Food capabilities, in turn, reduce convenience orientation. Qualitative insights shed light on consumer's own accounts of their abilities. The findings contribute to a theory-based understanding of how consumers manage the complex issue of food waste. Findings imply that public policy and marketing should aim to strengthen consumers' self-efficacy beliefs and redefine the good provider identity, in particular in social contexts, to reverse its effect on waste.  相似文献

Even without official quality standards, food retailers generally do not offer abnormally shaped food based on the assumption that consumers reject food that deviates physically from some norm. Because this practice contributes significantly to food waste, the current study tests this assumption experimentally. A representative sample of 964 Danish consumers indicated their purchase intentions for two fruits and two vegetables with varying levels of food shape abnormality (normal, moderately abnormal, and extremely abnormal) and organic labels (organic label, no label). Food shape abnormalities influence consumers’ purchase intentions, but only if the food deviates extremely from the norm; no differences in purchase intentions emerge for moderately abnormal food. Awareness of food waste issues and proenvironmental self‐identities also drive purchase intentions, such that participants with high levels of these traits express significantly higher purchase intentions for abnormally shaped food. Thus, increasing awareness of food waste issues, particularly among those with strong proenvironmental self‐identities, might encourage more consumers to purchase abnormally shaped fruits and vegetables.  相似文献

Food claims invite controversies on account of their potential to mislead consumers while at times masquerading as health information devices. In the United States, Europe, and Australia/New Zealand, scholars have extensively studied the prevalence of food claims, the regulatory repercussions, and effects of such claims on consumers’ food perceptions and dietary choices. Our study is an attempt to address a gap in related research focused on Asia by situating the inquiry in Singapore where consumers are exposed to a wide variety of such claims due to the universality of food imports. This study examines the state of food claims by the food product’s region of origin, and focus specifically on the use of terms “natural” and “fresh” on food labels. We present recommendations for food marketing policymakers and practitioners.  相似文献

The World Trade Organisation's 2004 Trade Policy Review of Singapore (WTO‐TPR Singapore 2004) depicts the small and outward‐oriented economy as one of the most open countries to international trade and investment. The review highlights the benefits of the outward‐oriented strategy that has enabled the Singapore economy to weather recent external shocks such as the Asian financial crisis to the SARS and to the recent unfavourable conditions in the Middle East. In particular, the report commended Singapore's efforts on its liberalisation of the services sector and its economic benefits to consumers and global trade. However, the WTO‐TPR Singapore 2004 highlights several key areas of concerns: (a) the commitment to multilateral agreements with the rising number of bilateral free trade agreements signed by Singapore and (b) the lack of growth of total factor productivity, a key indicator for long‐run efficiency of the economy. The paper addresses the above key concerns raised in the WTO's TPR of Singapore in terms of its commitment to global trade in terms of WTO‐plus bilateral FTAs, which intends to support a multilateral trading system, and its overall industrial strategies to raise its competitiveness.  相似文献

ABSTRACT

Consumer households and consumer behavior have been identified as the major cause of food waste in the supply chain. Food marketing might offer products and services that help consumers to reduce their food waste or reduce the consumer-related food waste at the consumer–retailer interface. However, such strategies require consumer acceptance and targeting the right customers. Through an online survey of 800 Danish consumers and a measure of food-related lifestyle, four clusters of consumer segments are identified. The segments are compared with regard to their acceptance of a number of actions consumers can take to reduce food waste or their acceptance of food marketing services they would need to pay for. Acceptance differs with food involvement and the role of the price criterion, as well as with gender, education and age. The findings show how food marketing can help consumers to reduce food waste, through actions targeted to specific segments of consumers characterized by food-related lifestyle differences.  相似文献

Ethical attitudes in relation to meat purchases were studied among urban and rural consumers in Scotland. All subjects perceived at least some ethical issues in relation to animal production systems, in particular, systems keeping animals in close confinement. Welfare friendly production systems were viewed as adding value to a food, but this value was not necessarily realisable to producers if purchases occurred only when foods were on special offer. Statements made by a particular individual were often contradictory, revealing ambivalence, unresolved value conflicts and a general lack of involvement in the nature of meat production. A number of barriers to the establishment of stable attitudes and behaviours in relation to the ethical treatment of food animals were identified, including a lack of transparency of competing production systems, problems with product availability and a general aversion to confront animal production. Whilst adequate labelling implies that labels are transparent and revealing all the essential features of a food, this is not the case with most farm assurance quality marks. Free‐range chicken may be widely available as a complete carcass, but portions often are not. Attitude‐inconsistent purchasing behaviours were thereby related to a lack of perceived control on the part of the purchaser in certain food choice scenarios. A key finding of the study is that individuals can hold two views on animal welfare. On the one hand, they may think as citizens influencing societal standards, and on the other, as consumers at the point of purchase. As citizens, they support the notion of animals being entitled to a good life, as meat consumers, they avoid the mental connection with the live animal. The paper explores this citizen/consumer relationship and strategies used by consumers to resolve any resultant value conflicts. Lessons for public and commercial policy are highlighted in the context of the Curry Report (2002), which advocates more effective market segmentation where markets are finely attuned to their customers, with the development of higher‐level assurance schemes based on the existing ‘Little Red Tractor’ standard.  相似文献

Where clothing consumption has continued to rise around the world, a deeper understanding of how and why garments are disposed of is critical in regard to addressing the issue of textile waste by consumers. The purpose of this study was to explore the garment management processes of young, fashion sensitive consumers, examining their disposal behaviours as well as motivations towards garment end‐of‐life extension through maintenance or repair of damaged fashion clothing. A survey of 161 South Korean young consumers (18–34 years) was conducted, utilizing a fashion sensitivity scale to measure impact on unsustainable garment disposal practices and garment repair behaviour. Further, general recycling behaviour of these individuals was examined, as linked to garment repair propensity. Results indicate that fashion sensitive consumers dispose of garments more rapidly, and with less ethical consideration. However, these same consumers are motivated to repair items that support their fashion identity. The study contributes some useful insight into encouraging garment life extension practise among heavy consumers of fashion, thus extending what is known about fashion garment disposal in the sustainability context.  相似文献

This paper investigates food waste at the consumer stage of the food chain. The authors conducted a questionnaire survey with 259 respondents to identify the key characteristics of food‐wasting consumers and to suggest strategies to improve food‐wasting behaviour. The results of the survey confirmed that the rate at which food is wasted depends on the age, economic status and education of the person managing food in a household, on the household's income per person and on total household income. Younger people, students, economically active people and people from higher‐income households (both per household and per person) waste more, while pensioners waste much less than other groups. However, the sex of the food manager is not associated with food waste. These demographic characteristics should be considered when designing consumer education campaigns focussed on changing consumer motivation and behaviour. This paper also recommends other solutions tailored for specific demographic groups: Younger people and students may be influenced by the actions of opinion leaders within social networks, and technical devices enabling better food management could help them reduce waste. Supporting work‐life balance, broadening the network of food delivery services and implementing corporate initiatives that support food waste prevention could help economically active people reduce their food waste. Additionally, offers of ready‐to‐eat food should be expanded for people with higher incomes.  相似文献

Household food waste originates in three predictable stages – when shopping, storing, and serving. That is, food can be purchased and never prepared, prepared and never served, or served and never eaten. Building on behavioral economics insights, this framework focuses on why consumers waste food in these three stages and how marketers can help consumers reduce food waste and thereby help them get more value from their products by enjoying them more and wasting them less. It is important to reduce food waste by successfully promoting ugly food consumption. Thus, this study uses the food quality attribute model to investigate certain key factors - motivators and demotivators that can influence consumers’ attitudes toward and subsequent purchases of ugly produce. This study further examines differences in these key factors between ugly food buyers and non-buyers. The results indicate that price consciousness and environmental self-identity stimulate ugly food consumption, but physical appearance discourages its purchase. The influences of the motivators are more salient for buyers, while the influences of the demotivators are more salient for non-buyers.  相似文献

The purpose of this study is to determine the effect of Hispanic consumer acculturation on concerns about food safety and pesticide residues, and attitudes toward pesticide-related agricultural practices. Two 3-min bilingual, English and Spanish, videos presenting information on integrated pest management (IPM) farming practices were shown in controlled settings to Californian Hispanic consumers (n = 91). Findings reveal that acculturation among Hispanic consumers, language of use and length of residency in the United States, are significant factors associated with consumer concerns about the safety of domestic grown and imported produce at the supermarket. Overall, however the research suggests a substantial lack of information by Hispanic consumers regardless of level of acculturation. Pre- and post-video survey results show significant change in attitude among Hispanic consumers toward food safety, farming practices, and university efforts to help farmers control pests and assist with other management techniques. These findings suggest that bilingual educational programmes on food safety and the use of pesticides by farmers would be appropriate.  相似文献

This article discusses some weaknesses in current research into young consumers’ abilities to comprehend and successfully manipulate food label information and describes the development of a research project through to an analysis of the pilot phase. The research programme identifies a method of measuring the effectiveness of state education in enabling the next generation of consumers to make informed food choices through the provision of appropriate tools and skills, both of which are necessary to fully understand a label's informational elements within a marketing context. The article also discusses the appropriateness of a quantitative questionnaire to measure the abilities and skills of individuals through the identification of some key comprehension dimensions required by modern food consumers. Finally, the article questions the appropriateness of the context in which information is provided to food consumers. Through a continuing programme of research, it is envisaged that a more appropriate context for certain elements important in the choice of a diet that is relevant to an individual's lifestyle may be proposed.  相似文献

The skewed allocation of food across the world population is a major concern, as the result is that some of us live in abundant supply while others spend their life in constant scarcity. While researchers have studied a variety of issues related to the amounts of food being wasted, or the waste of edible food across consumers with different demographic characteristics, less is known about the drivers of attitudes toward food waste. Based on survey data from a sample of affluent Norwegian consumers, we test how subjective food knowledge, environmental concern, age, and income are related to consumer attitudes toward wasting edible food. We find that all variables except income drive consumer attitudes. Implications for theory and public policy are offered.  相似文献

In South Africa there has been a paucity of data on food and nutrition labelling since the publication of the new food‐labelling legislation. This study aimed to explore whether the nutrition information on food products influences consumer purchasing behaviour; reasons for reading or ignoring nutrition information on labels, and to investigate expectations regarding food / nutrition labelling. Nine focus‐group discussions were held with adult consumers (N=67) in Cape Town, South Africa. Food price was sometimes the only consideration when selecting food products, irrespective of quality and nutritional value. When buying products for the first time, consumers were more inclined to read the nutrition information compared to habitual purchases or buying known brands. The list of ingredients, nutrient content claims and specific health endorsement logos were considered important. Reasons for reading nutrition information were mainly to assess the nutritional value or health properties, to avoid certain ingredients/allergens and to determine quality. Consumers struggled to understand the information on labels, specifically the nutrition information table. A lack of time or interest, price concerns and trust in labelling information also emerged as reasons why consumers ignore the nutrition information. There is a need for simpler food labelling, more graphics, and less complex terminology, information overload and quantitative information. It is recommended that a standardised front‐of‐package labelling scheme and a single health endorsement logo for South Africa be considered. More should be done to educate consumers on utilising the information on food labels correctly, in order for them to make healthier food choices.  相似文献

基于中国省际面板数据,重点考察由于政府竞争财政分权是否明显削弱了环境治理投资,验证财政分权以及财政分权通过政府竞争这两个渠道对中国省级政府环境治理投资的负面影响。通过对废水、废气、固体废物的省级面板数据采用系统GMM方法进行实证检验,发现财政分权通过政府竞争显著减少了环境治理投资,财政分权并不是环境治理投资偏低的主要原因,关键是由于政府竞争,财政分权对环境治理投资的负面影响被明显放大了。  相似文献

Although local food consumption is growing in importance, there remains a lack of research addressing local food consumption preferences in less developed countries. This article aims to examine the drivers of local food purchase intentions for Chilean consumers. A model of local food behavioral intention was developed from consumer behavior theory. The model was tested using structural equation modeling with data from Chilean shoppers located in Santiago (n = 283). The analysis revealed that Chilean consumers are willing to purchase local food based on their positive attitude toward buying local food and their feelings of connectedness with the environment, but not because they have a desire to support local businesses. These findings have implications for retailers, marketers, and food producers.  相似文献

The purpose aims to examine the key factors influencing Chinese consumer’s purchasing behaviour of eco‐friendly food in China giving its context as an emerging economy and its rapidly rising importance in the world eco‐friendly food market. This paper adopts and extends the Responsible Environmental Behaviour (REB) theory by empirically testing key psychosocial factors influencing the purchase intention of eco‐friendly food and the moderating effects of consumers’ demographic characteristics on the relationship between the key psychosocial factors and the purchase intention. A number of hypotheses are proposed. A questionnaire was designed and distributed via online survey in Beijing, China. A total of 239 valid responses were received. The empirical data were used to test the research hypotheses using the hierarchical multiple regression analysis. The research finds that the personality factors in the REB model (i.e., pro‐environmental attitudes, the internal locus of control and personal responsibly) have significant positive effects on the consumers’ eco‐friendly food purchase intention. Such effect is stable across consumers with different income levels. On the other hand, the knowledge–skill factors in the REB model do not have significant effect on the purchase intention of consumers. This study contributes to a better understanding of factors affecting eco‐friendly food consumption intention in China and the behavioural characteristics of consumers in developing countries. Moreover, the findings also shed light on the applicability of the REB theory in emerging economies and a specific industrial context.  相似文献
