采用正交试验探讨了原料乳的杀菌方式、稳定剂(耐酸CMC)和抑菌剂(乳酸链球菌素Nisin)的使用对搅拌型酸乳货架期的影响,在此基础上对加糖量,发酵剂的接种量和发酵时间对产品货架期的影响进行了探讨.结果表明延长搅拌型酸乳货架期的最佳工艺和配方参数为原料乳的杀菌方式为80℃、30min,耐酸CMC的添加量为0.1%,乳酸链球菌素(Nisin)的添加量为0.05%,蔗糖的添加量为7.5%,发酵剂的接种量为5%,发酵时间为3.5h.  相似文献

[目的]调查江苏地区生产的酸奶中酵母菌的污染状况以及受酵母菌污染的酸奶在货架期内的状态变化。[方法]在一年的四个季度分别对从企业成品库抽取酸奶进行酵母菌计数检验,并对在不同环境下保存的酸奶中酵母菌生长速率进行比较。[结果]受调查酸奶的酵母菌总体合格率为90%,其中第三季度(7-9月)的合格率为80%,为四个季度中最低;风味(果粒)酸奶的酵母菌污染率(19.15%)明显高于原味酸奶的酵母菌污染率(1.89%);货架期内20℃环境下保存的酸奶中酵母菌生长速率明显高于4℃保存环境下的生长速率。[结论]环境温度及果粒的杀菌工艺对酸奶中酵母菌的污染数量具有重要影响。应该加强高温季节生产环境的消毒和温控,并且对投入的水果原料应该进行巴氏杀菌预处理。  相似文献

Prior investigations have indicated that relationships between price and product quality are considerably weaker for non-durables than for durables. Among non-durables, packaged food products frequently have exhibited the poorest correspondence between price and quality. This study, utilizing data from Consumers Union, analyzes the relationships between price and a measure of product quality for 679 brands in forty packaged food product classes over a fifteen year period. The study generally confirms earlier preliminary conclusions that the correlation between quality and price for packaged food products is near zero. In addition, the findings indicate that convenience foods, particularly frozen foods, display the poorest correspondence between price and product quality with more than 43 percent of all frozen food product classes exhibiting negative relationships between price and product quality. Some possible explanations for these findings and their implications for public policy are advanced.  相似文献

The objective of the present study was to examine the effect of friendly food labels on packaged food consumption intention. A questionnaire method was adopted for data collection. The data were collected from 14 Pakistani universities. The systematic random sampling technique was used to draw the required sample size. The sample size was 365, where 730 questionnaires were distributed among students of 14 universities to achieve the required sample. Findings disclosed that a friendly food label has a positive and significant relation with packaged food consumption intention. But in the intervening effect of personality traits between exogenous and endogenous variables, only three personality traits have positive significant mediation—extraversion, conscientiousness, and openness—whereas no mediation was found with neuroticism and agreeableness. Studies have unveiled the fact that there is need to investigate the decisiveness of personality traits for the selection of healthy food (Friedman & Kern, 2014).  相似文献

ABSTRACT

During the past decades, various technological applications relating to an extension of the shelf life of food products have been introduced. The adoption of such technologies in the fresh-cut salad sector is a key issue for the sustainable management of the supply chain. The aim of the study is to analyse consumers’ attitude towards fresh-cut salad with an extended shelf life date. The analysis was based on face-to-face interviews with 351 consumers living in Lombardy, one of the Italian provinces where the consumption of fresh-cut salad is high and characterized by good margins of development. Principal component factor analysis with varimax rotation was used as preliminary data preparation for market segmentation. Cluster analysis revealed the presence of three different consumers groups. Only the cluster of ‘favorable’ shows a positive attitude towards the extended shelf life date. Consumers grouped in the cluster of ‘skeptical’ associate such innovation to a low level of product freshness. The cluster of ‘mistrust’ reveals the presence of consumers with safety concerns towards the prolongation of the shelf life date. Such consumers do not reveal a high level of trust in processing firms and their related brands.  相似文献

Prices of packaged and unpackaged items sold in the same retail out-let were compared in 19 northern California supermarkets. The magnitude of potential price savings depended upon the size and type of product purchased. Savings would most likely accrue to the purchaser of small rather than large quantities of unpackaged products. The future of unpackaged foods is linked to technical developments in sealed dispensers that limit customer access to the product.  相似文献

The study analyzes the impact of advertising, goodwill, and other intangibles on investor returns in the consumer packaged food and beverage industry during 2008–2012, a timeframe during which smaller brands wrestled $18 billion in sales away from large manufacturers of processed foods. The findings demonstrate that those firms that were able to allocate a greater percentage of their revenue to their ongoing advertising efforts were able to enhance investor holding period returns (HPR). In addition, those firms with a higher ratio of intangible assets other than goodwill to total assets were also able to enhance HPR. However, there was not a significant positive relationship between the ratio of acquired goodwill to total assets and HPR. Hence, packaged food and beverage manufacturers are advised to seek competitive advantages through their own brand-building efforts rather than seeking to enhance investor returns through a strategy based on company mergers and acquisitions.  相似文献

本文运用数据包络分析方法(DEA)和Malmquist指数对我国13家寿险公司2002~2007年的技术效率、纯技术效率和规模效率以及全要素生产率变动进行了测度.结果发现,我国寿险公司技术效率普遍较低,整体上是由纯技术效率和规模效率的低下共同导致的,而规模效率对技术效率的影响更大.在DEA无效的寿险公司中,合资企业居多数.分为SE主导型和PE主导型.同时,本文运用Malmquist效率指数刻画了我国寿险公司生产效率的动态变化,并将各公司划分成四种增长类型,并通过对生产有效性的"追赶效应"和"前沿面移动效应"的分解,得出不同增长类型公司效率动态变化的推动因素.  相似文献
