Label information on food items is seen as a tool to facilitate better choices. Merely, provision of label information may not lead to the desired outcome. Comprehension and processing of label information during consumer decision making is crucial for better food choices. Based on the primary data obtained from 150 consumers of pre‐packaged food items, the research proposes a conceptual model for healthier food choices. Previously, a number studies related to consumer decision making have employed ‘label reading’ and ‘label use’ interchangeably. Present research advocates that label reading does not amount to label use. Findings from ordered probit model and path analysis suggest that comprehension of label information leads to increase in its perceived usefulness. Further, increased perceived usefulness facilitates better food choice. Instances of better food choices can be maximized by enhancing perceived usefulness and comprehension of label information through educational and awareness campaigns, especially in context of developing countries such as India.  相似文献

Two experiments show that the role the consumer plays in the creation of their food can affect the consumption experience. When guilt is present in the consumption of the food item, namely an unhealthy food item, having someone else create the food item increases taste evaluations, attitudes, and behavioral intentions. However, when guilt is not present, as in the case for healthy foods, there is no difference in food evaluations when the end consumer or another creates the food. These results have important implications for food retailers, food service establishment, and food delivery companies.  相似文献

This article seeks to review the present state of research on established SME's international involvement. Based on a literature review of 121 articles, we develop an integrative framework that examines the antecedents, outcomes and moderators of SME international involvement. We critically assess and examine how the literature has evolved over the last three decades. Particular attention is paid to discussing the main findings, theoretical and methodological inconsistencies, and to providing suggestions for future research. The review reveals that while international involvement research has made considerable progress over the last few years, its advances have been uneven and leave important areas of research unexplored.  相似文献

This paper documents a comprehensive theoretical framework that has been developed to understand conspicuous consumption behavior. The proposed framework identifies three antecedents and two consequences of conspicuous consumption. We tested hypotheses concerning this framework using a meta-analytic approach. We also meta-analytically tested the effect of contextual, methodological, and individual-level moderators on the relationship between conspicuous consumption and its consequences. Additionally, we examined the mediating role of conspicuous consumption behavior in the relationship between its antecedents and consequences using meta-analytic structural equation modeling. After an extensive literature search based on multiple selection criteria, we use 59 independent research studies and 97 unique effect sizes to test hypotheses. The findings theoretically contribute to the stock of knowledge on conspicuous consumption and provide new insights for practitioners.  相似文献

The relationship between seven types of food safety concerns and the corresponding change in food consumption habits of 236 households in Georgia, USA was evaluated. Results showed a gap between food safety concerns and food consumption habits. Gaps were particularly evident in the cases of pesticide residues, animal drug residues, growth hormones and bacteria. For example, more than 54% of sample households were extremely concerned about pesticide residues, but only 35% actually took extreme precaution in buying items considering this perceived threat. The study indicated that educating consumers about preventive methods to reduce food safety threats will lead to reduced concerns and changes in food consumption habits.  相似文献

Although food platforms are witnessing greater competition and shrinking margins in emerging markets, consumer multihoming remains an underexplored phenomenon. Previous studies highlight the inverse relationship between consumers' commitment to service providers and their multihoming behaviour. Also, behavioural studies confirm the relationship between consumers' commitment and gender. In this vein, we ask a fundamental question: whether gender is associated with user multihoming predisposition? Based on the questionnaire survey of 493 food platform users and the Kruskal–Wallis H (K–W–H) analysis used, we establish a direct association between gender and multihoming. The probit analysis suggests higher multihoming promiscuousness among male consumers than among female consumers. Moreover, we conclude that the frequency of platform usage positively affects multihoming behaviour among female consumers, while education affects multihoming in males. The study thus builds upon existing food platform literature and provides an epistemological connection between gender and multihoming. Further, it outlines strategies that platform firms can use to restrain their clientele from multihoming.  相似文献

Based on a qualitative study with 20 respondents in France and 20 respondents from the Czech Republic, this study aims to better understand how consumers’ concern about food waste, culture, social norms and emotions contribute to consumers’ attitudes and behaviors related to doggy bags. Results highlight a double paradox between conflicting norms and emotions: personal norms encourage not to waste while salient social norms encourage leaving leftovers; asking for a doggy bag generates immediate shame while leaving leftovers produces anticipated regret and guilt. Finally, the study sheds light on obstacles to overcome for the adoption of this social innovation.  相似文献

Access to healthy food and its marketing have been asserted as limitations on changing behaviour to improve diet. A retailer survey in Scotland is reported that considered availability and affordability of a basket of indicator healthy food items, termed the Healthy Eating Indicator Shopping Basket (HEISB). It comprised 35 items drawn from 5 major food groups. A census of HEISB availability in 466 stores was undertaken in a sample of locations that varied on dimensions of urban-rural and affluent-deprived. Around half of the supermarkets surveyed stocked all the items. Availability of healthy food items was generally seen to be adequate but there were notable variations in availability for specific items. There were large variations in price for the HEISB items across the stores and the survey areas. The total HEISB median price varied by store type. Basket price tended to rise with deprivation with a caveat of the lowest prices in the most deprived areas. Accessibility to a range of healthy food depends more on the presence of medium and large stores than being in a deprived or affluent area.  相似文献

The motivations and barriers of the actual green purchase behavior are as real as the product itself, which makes it a systematic process to examine the inconsistency between consumers' motivations and their actual behavior (motivation-behavior gap). The study aimed to clarify the direct and indirect effects of motivations on the purchase behavior of green food. The proposed conceptual model was adopted from the Motivation-Opportunity-Ability (MOA) framework and was extended by adding the serial mediation of consumer perceived knowledge and trust as major constructs. Data were collected from 1788 consumers in China. Results provided support for the model and showed that perceived knowledge about the food supply chain could be both barrier and a positive factor of consumers’ purchase behavior, which mainly depends on the trade-off between certification and planting knowledge. Differences in trust exist and consumers hold authorities and certification bodies more accountable than farmers and retailers. For the direct effects, food safety concern is positively associated with behavior, whereas environmental concern is not. Policymakers shall use the results to narrow the motivation-behavior gap, especially for emerging economies.  相似文献

The aim is to clarify the impact of values on the general attitude towards collaborative consumption in a Chinese context, and the impact of the general attitude towards collaborative consumption on the intention to use and actual use of various specific collaborative consumption services. A total of 600 responses were collected in 2019. The results showed that non-ownership orientation, guanxi networking orientation, materialism, novelty orientation, and frugality orientation significantly influenced positively collaborative consumption attitude. It was also found that the impact of guanxi networking orientation on collaborative consumption attitude was mediated by non-ownership orientation. The results also showed that general collaborative consumption attitudes positively influence the intention to use all specific collaborative consumption, such as shared bicycles, shared cars, shared goods, carpooling services, and peer-to-peer accommodation. Moreover, the predictive power of the intention to use collaborative consumption on actual use is only strong in shared bicycle and carpooling services.  相似文献

We examine how VCFs' forecast of an IPO exit affects their breadth of advising and the likelihood of founder–CEO replacement shortly after they invest in a new venture. Moreover, we examine how the expected time-to-exit moderates these relationships. Our findings show that the likelihood of founder–CEO replacement upon receiving venture capital funding is significantly greater if a VCF perceives this company as a potential IPO as opposed to a trade sale, and this likelihood increases if the forecasted time-to-exit is short. We also illustrate how the breadth of advice varies as a function of the forecasted IPO and time-to-exit.  相似文献

The purpose of this research is to determine how a manufacturer's reduction in export involvement barriers may moderate the effect of transaction cost drivers on control mechanisms (monitoring and information sharing). Utilizing Transaction Cost Analysis and internationalization literature, asset specificity and environment diversity are the transaction cost drivers and economic knowledge and psychic distance are the moderators. The results indicate that as manufacturers increase export involvement through reduction in economic knowledge differences it strengthens the positive relationship between asset specificity and monitoring and diversity and monitoring and weakens the corresponding relationships with information sharing. Psychic distance reduction weakened the positive effect between asset specificity and information sharing only. The results of the other three hypotheses were in the direction hypothesized but non-significant. Manufacturers may continue export involvement through intermediary usage provided they regulate their monitoring and information sharing practices in accordance with the overall influence of asset specificity, diversity, economic knowledge, and psychic distance.  相似文献

It is important to reduce food waste by successfully promoting ugly food consumption. Thus, this study uses the food quality attribute model to investigate certain key factors - motivators and demotivators that can influence consumers’ attitudes toward and subsequent purchases of ugly produce. This study further examines differences in these key factors between ugly food buyers and non-buyers. The results indicate that price consciousness and environmental self-identity stimulate ugly food consumption, but physical appearance discourages its purchase. The influences of the motivators are more salient for buyers, while the influences of the demotivators are more salient for non-buyers.  相似文献

The food sector has taken on an unprecedented dynamism in recent years. The processing and distribution of food, although heavily influenced by tradition, have seen intensive innovations, leading to changes in the way individuals consume. One of these changes is the consistent growth of the habit of eating outside the home. Consuming food outside the home involves a number of practices such as eating at commercial establishments that specialize in food (restaurants, fast food restaurants and snack bars) and those that offer food as a part of their services (hotels, in‐flight meals), and non‐commercial alternatives such as the homes of family and friends. In order to describe the eating habits of consumers in the town of Lavras in Minas Gerais State, Brazil, especially when it comes to eating outside the home, a quantitative study was conducted, with 413 questionnaires being distributed by convenience sampling. Among the main results are: (a) a search for variety as a motivator for eating outside the home; (b) convenience as an important element on many occasions of consumption; (c) more intensive consumption and more favourable attitudes towards eating out on the part of younger people, people with higher incomes, no children and a higher degree of schooling; (d) importance of paying for food by the kilo. When compared with a study conducted in England, important similarities were identified in socio‐demographic influences, although the cultural factors are notable when it comes to dishes and the types of eating establishment. The growing habit of eating out has therefore become a worldwide phenomenon, but with cultural and regional differences that have led to different rhythms in terms of change and the way food is supplied. The recovery of embedded cultural habits, with increased value being given to slow food, traditional dishes and tradition itself, appears to co‐exist with a productivity model of food courts, pasteurization and accessible prices. The occasion for consumption, which may be understood as the dichotomies of ‘weekday versus weekend’ or ‘convenience versus leisure’, is an important element that influences consumer behaviours. The undertaking of a cross‐cultural comparative study can be seen as an important step in this field of research.  相似文献

Cultural omnivorousness has gained relevance as a suitable theory to explain contemporary patterns of consumption, but the actual dealing of omnivorous taste by economic actors and businesses has been mostly overlooked. Through ethnographic research, this article explores how Italian gourmet food truck operators concretely produce claims of authenticity for omnivorous seekers. First, the adoption of the perspective of food truck operators highlights the reflexive and market-bounded nature of the omnivorous taste reproduction. Moreover, “being authentic” becomes an imperative for tastemakers, imposed by the economic imaginary. Finally, the centrality of regionalism in the Italian production of authenticity suggests that localism, too, has been subsumed by global food imaginaries and that regionalism expresses a cosmopolitan attitude. Taken together, these findings allow the integration of existing theory of food cultural omnivorousness: “gourmet” food must be authentic to be recognised by omnivores and distinctive to be successful on markets.  相似文献

An exploratory study approach was used in this research to examine the use of local and organic food in Toronto’s food truck industry, the rationale for its use, and the challenges that food truck owners face in sourcing it. Results showed that all-but-one of the food trucks sourced local or organic food for their menu and were motivated by fresh taste/quality, social responsibility and customer preference. While there were challenges with utilizing organic/local food due to seasonality and cost, food trucks found they can derive benefits by way of increased patronage, menu differentiation, and competitiveness.  相似文献

The ongoing process of globalization in food provision is transforming the relationships between producers and consumers as well as the conventional role of governments in regulating the environment. Consumers are increasingly concerned about the environmental and social impacts of food production in developing countries and many are willing to take action. Conceptualizing globalization as the coming about of the network society offers an adequate basis for analysing transitions in food governance including new ways of consumer involvement. The case of shrimp produced through aquaculture in Thailand and consumed worldwide shows how innovative food governance arrangements appear in the context of global modernity. Authority and power in such arrangements are shifting away from national governments and towards producers, processors, traders and consumers along the supply chain.  相似文献

This article aims to identify antecedents of food waste among lower‐middle class families – a paradox, given the financial constraints this population faces. The importance of this research is evident in escalating environmental pressures for better use of our planet's scarce resources. Given that most of the world is low‐income, any behavioral change in this population is likely to have a considerable impact. Empirical data were collected from 14 lower‐middle income Brazilian households, based on observations, in‐depth interviews, photographs and a focus group (n = 6). Five major categories of food waste antecedents were identified: (1) excessive purchasing, (2) over‐preparation, (3) caring for a pet, (4) avoidance of leftovers and (5) inappropriate food conservation. Several subcategories were also found, including impulse buying, lack of planning and preference for large packages. Surprisingly, findings show that strategies used to save money – such as buying groceries in bulk, monthly shopping trips, preference for supermarkets and cooking from scratch – actually end up generating more food waste. This mitigates the savings made during the purchasing phase.  相似文献
