Use of safe food handling practices in the home could reduce the number of foodborne illnesses. The objective of this project was to obtain baseline data on the safe food handling knowledge and practices of consumers to aid in the development of effective educational programmes. A food handling questionnaire was developed and completed by 426 Nebraskan respondents. Knowledge and practice questions were based on the most important contributory factors in reported foodborne illness outbreaks. Knowledge scores (correct responses) ranged from 2 to 29 with a mean of 20 ± 4. When compared with the knowledge score, the respondents' education level, where they lived and their sex were statistically significant. Almost all (96%) of the respondents stated that they practised safe food handling when persons were infected. Approximately half of the respondents indicated that they practised safe food handling when handling contaminated raw foods and using foods from unsafe sources. About 45% of the respondents inappropriately left foods at room temperature. One-third of the survey respondents improperly held hot foods. Cross-contamination was a concept understood by 75% of the respondents. Results indicate that food safety education should be targeted on specific groups who are less knowledgeable about safe food handling practices. Results also indicate that a number of respondents knew proper food handling concepts but did not put those concepts into practice. Therefore, increasing the adoption of safe food handling practices by consumers should become an important aspect for educators in food safety educational programmes.  相似文献

A substantial proportion of foodborne illness is associated with food prepared in households. The primary understanding of how foods are handled in private homes comes mostly from questionnaire based studies and direct observation. The aim of this survey was to examine consumers' perceptions and knowledge of safe food handling practices in Greece. More specifically, their attitudes, opinions and self‐reported practices were studied. Data were collected from a total of 399 consumers living in Greece by the use of a self‐administered on‐line survey. The questionnaire consisted of four positive and five negative statements according to the 5‐point Likert scale, which grouped into three constructions using principal component analysis in order to investigate food safety perceptions of consumers. Furthermore, the survey included 11 demographic questions, two close‐ended questions (type yes/no) and four questions that are related to self‐reported food‐handling practices. The results showed that the most commonly known bacterium causing food‐related illness according to respondents' knowledge is Salmonella (99.7%), followed by Escherichia coli (73.9%) and Listeria (58.4%). The overall consumers' score concerning food safety was 32.8 ± 5.37 (full score was 45). No significant differences to the mean score of food safety knowledge were found according to gender, age or the incidence of foodborne illness over the past 12 months. Knowledge and awareness of safe food handling practices was enhanced at higher education levels, while homemakers were found to have deficiencies at this level. Information obtained from consumers can be used to shape educational programs and determine where food safety educational efforts would be most effective and the needed content of the messages.  相似文献

Abstract Vendors of meals and snacks, granted the realities of the present changing economic and social lifestyles, will continue to feed large numbers of people despite the insanitary conditions under which most of them operate. This study sought to find out the degree of patronage of food sold by vendors, items purchased, reasons for patronizing, views and opinions on the services patronized. Two-hundred and forty-five students resident in five halls at the University of Ghana completed a self-administered questionnaire each. Eighty-six per cent purchased cooked meals and snacks regularly from vendors. Over two-thirds consumed their meals at the selling sites. However, the services and facilities offered by vendors were judged as inadequate and poor. Nineteen per cent reported having suffered diarrhoea, stomach aches, indigestion and other gastrointestinal problems as a result of eating vendored foods. Three outstanding reasons emerged for the high patronage of vendored foods. They are food always being available (69%); food being cheaper (62%); and more variety to choose from (42%). These findings portray the great influence of money and time on consumer choice of food in our present harsh economic environment. Patrons indicated several unhealthy practices by vendors that pose health threats to patrons. These observations together with several recommendations made regarding the safe handling of food, water and the environment indicate consumers' awareness of the need for safe delivery of the food they consume. There is the urgent need therefore to organize and train vendors, pass a food law, supervise operations of vendors and also educate consumers to choose only safe food and water and insist on a clean food environment.  相似文献

The objectives were to evaluate consumer perception and awareness of safe food preparation practices at homes. A questionnaire was self‐administered to 124 consumers who were primarily responsible for preparation of foods and owned a refrigerator at home. Data were analysed by frequencies and chi‐square. Most (97.6%) consumers considered safe food practices as ‘very important’. Few (8.9%) related Hazard Analysis and Critical Control Point to safe food preparation practices. Microbiological hazard was ranked as a most serious threat to food safety (80.5%). Salmonella was most well known (79.8%). Diarrhoea (23.7%) was a common symptom of food‐borne illness. More than 50% would ‘always’ check for expiry dates on labels, seals and would never purchase swollen cans. Only 48.4% consumers used separate cutting boards for meats and vegetables ‘always’. Some (6.5%) felt it was appropriate to give unfit food to someone else. The study identified critical points in safe food preparation practices for effective public health education.  相似文献

Abstract

Public awareness and concern regarding foodborne illnesses have increased rapidly over the past decade. This increased concern may cause consumers to avoid certain stores, products or brands, particularly following a publicized incidence of foodborne illness or a large recall. Many firms have undertaken costly efforts to improve the safety of their products yet find communicating such improvements difficult because of potential alarmist responses by consumers to food safety issues. To identify if differences in food safety risks can be effectively and credibly communicated, we conducted eight focus groups. This article summarizes these focus groups and reports how consumers frame the issues surrounding the food safety problem and how consumers react to label-based communications of food safety characteristics. We find consumers have broad, moderate food safety concerns, a wide but spotty understanding of foodborne illness prevention and consequences, and a healthy skepticism concerning food safety claims. We identify two forms of labeling that show promise with regard to consumer acceptance and credibility in communicating brand-level and package-level differences in the risk of foodborne illness and discuss implications for consumer valuation of such differences.  相似文献

The aim of this research is to segment Indian consumers based on their attitudes toward food safety and to demographically characterize each segment with sound risk communication strategies and outreach program may be developed to target vulnerable groups. This article uses exploratory factor analysis and hierarchical cluster analysis to find the factors that accentuate consumers’ attitude toward food safety and generalizes the heterogeneity of consumer attitudes based on five factors: apprehension, trust, appetence for a high degree of regulation, acknowledgment from foodborne illness, and propensity for the right to purchase foods that are not guaranteed to be safe.  相似文献

Consumer education on food handling behavior is regarded as an effective method to improve domestic food safety and prevent foodborne illness, but is usually overlooked in rural areas. Using a presurvey and two rounds of postsurveys targeted at rural consumers from China included in a randomized controlled trial, this study investigated the effectiveness of two information interventions—a leaflet with tips for best practices and the leaflet plus consumer education sessions conveyed by phone—and compared them with a control group. Cloth use behavior was the target in the trial and five specific aspects were evaluated: (1) whether the cloth was made of old clothes, (2) whether the one used to clean kitchen tables was also used to wash dishes, (3) whether it was hung to dry, (4) how it was disinfected, and (5) how long the cloth was used before being discarded. Firstly, consumers' behavior was scored by summing the above-mentioned five behaviors. The results estimated using the difference-in-difference model showed that respondents in the leaflet-only group improved to a greater extent than those in the control group, but their difference in progress was not statistically significant until the second round of the postsurvey. Respondents in the leaflet-plus-phone group were quicker to adopt suggested practices and made discernible improvements compared with those in the leaflet-only group in the first round of the postsurvey, but the gap between these groups narrowed to statistically insignificant in the second round of the postsurvey. It was concluded that one consumer education session was effective and made a difference in the long term, whereas more education sessions produced normative behavior at faster rates, showing a significant improvement in the short term. Then, the study estimated the effectiveness of interventions on the five specific behaviors separately. The results were estimated using a probit difference-in-difference model and showed that the suggested behaviors with lower costs or a greater difference from past behaviors were more likely to be adopted by consumers. Consumer education facilitates proper food handling practices among rural households, which should be considered by policy makers.  相似文献

Nakhon Si Thammarat province is one of the largest cities in Thailand and offers various types of street foods in the city. However, the number of street vendors that pass food safety certification is very low. Nevertheless, there are many consumers who still purchase street food because of their lifestyle who are exposed to food safety risks. Therefore, this research aims to evaluate how consumers make their decisions about the safety of the street food. This study investigates the importance of the need recognition and pre-purchase evaluation stages in consumers’ decision-making in relation to their purchasing of safe street food. The results from the structural equation modeling analysis found that, at 95%, the confidential need recognition would act as a partial mediator between consumers’ motivation → pre-purchase evaluation on purchasing safe food and consumers’ food safety knowledge → pre-purchase evaluation. In turn, pre-purchase evaluation would act as a full mediator between consumers’ motivation and safe street food purchasing. The findings signify that the stages of need recognition and pre-purchase evaluation in the decision-making process are important in order to reduce consumers' food risk while purchasing street food. Therefore, encouraging consumers to recognize the importance of purchasing safe food and convincing them to be concerned when selecting food is necessary to prevent consumers from unsafe food consumption.  相似文献

Although incidences of foodborne illness caused by chemical hazards are increasing, the studies on public awareness of food chemical hazards are limited. This study was conducted to assess mothers’ knowledge, behaviour and concerns on diverse food chemical hazards. A total of 960 mothers sending their preschool‐aged children to child care centres in Gwanak‐Gu, Seoul, Korea were surveyed, and 633 (65.9%) returned the questionnaires. After excluding inappropriate questionnaires, 364 (37.9%) were analysed. The majority of the mothers were able to identify food categories containing acrylamide (83.2%) and trans fat (80.2%), while slightly over half of the mothers named food categories containing allergen (56.3%) or pesticide residues (57.1%). Less than two thirds of mothers were knowledgeable of human exposure pathway to environmental contaminants (59.3%), acrylamide (55.2%) or heavy metals (65.9%). A significant number of mothers showed familiarity on health risk from dietary exposure to environmental contaminants (82.4%), trans fat (91.5%) or heavy metals (96.7%) (P < 0.05). The data on safe food behaviour towards environmental contaminants (81.8%), acrylamide (98.0%), heavy metals (96.7%) and trans fat (90.6%) showed high levels of right behaviours. About 47.2% and 22.8% of mothers read label of food additives and ingredient statement on allergen when purchasing processed foods, respectively. Mothers seemed to be concerned about food chemical hazards. Among the sociodemographic characteristics, only age significantly differentiated mothers’ concerns on chemical hazards in foods (P < 0.05). This study suggests that mothers needed to be educated on food chemical hazards regardless of their education levels, occupation status or the number of child.  相似文献

Back in 2002, the United States Department of Agriculture (USDA) implemented the final national standards and began certifying foods as having met the criterion in the production, handling, and processing of organically grown agricultural products. Consumers began seeing the USDA seal displayed as well as, the word “certified” and various levels of organic content on the front display panel of the product. The USDA stresses that the organic standard and label requirements do not imply organic foods are healthier. This research analyzes possible implications of consumers incorrectly inferring that food products with the USDA-organic certification label are healthier than food products without that certification.  相似文献

ABSTRACT

In this paper, we examine how actors within what we conceptualise as an emerging wild food alternative network are navigating through the foodscape to find alternatives to homogenous and standardised food products. Drawing on data from different research engagements with wild food consumers and producers over the last decade in Canada, we use the context of wild foods to explore how the ‘alternative’ is being articulated and negotiated. Inspired by scholarly work exploring the pedagogical promise of food, we also explore the transformational potential of the ‘alternative’ – how bringing wild foods to the table can both inspire and teach consumers about sustainability and alternative consumption practices. We conclude with directions for future marketing research on alternative food networks.  相似文献

There is a strong trend to market products that promise improved health in the United States. Functional food is a rather new concept promoting the healthfulness of foods. Functional food manufacturers should provide motivating and trustful marketing messages. However, since the term “functional foods” lacks definition, communication to consumers is challenging and can be confusing. This study investigates how U.S. consumers understand the concept of functional foods. An online survey containing 64 questions was structured to measure awareness, consumption, and trust toward functional foods. Based on a definition provided in the survey, a clear minority (15%) of the respondents (n = 1027) stated they had heard of functional foods before the survey. Compared to the respondents who had not heard of functional foods, they more often used whole wheat cereals, vegetable juice, carrots, toast with high fibre and green tea (Chi-square –test, p < 0.001). Food and drug administration (FDA), health associations, and dieticians were the most trusted sources of information for functional food decisions with 28%, 24%, and 20% shares of the respondents, respectively. Food producers, food retailers and media together were chosen as the most trustworthy source by less than 1.5%. We concluded U.S. consumers find functional foods confusing and even unreliable. To strengthen their confidence, we suggest clear and transparent collaboration with nutrition and health specialist and product- specific marketing messages based on solid scientific documentation.  相似文献

A community‐based food hygiene initiative was piloted in the Toxteth–Granby area of Liverpool between December 2001 and March 2002. The project aimed to increase awareness and behaviour, related to poor food purchase, storage and handling practices, by actively involving members of the local community in home‐based peer‐facilitated training. Facilitators (23) were actively recruited from within the Toxteth–Granby community, and undertook a 4‐day induction and training programme, which included successful completion of the CIEH Basic Food Hygiene course. Facilitators subsequently recruited and visited nearly 1000 households (992) within the Toxteth–Granby electoral ward, undertook an observation sheet, a detailed questionnaire, and spent approximately 1 hour delivering food hygiene training. Facilitators returned to all households within an 8‐week period, and completed further observation sheets and questionnaires, for use in a comparative analysis. Facilitators and householders received incentives for their involvement in the project. Analysis of the data collected showed that general awareness of a range of food hygiene issues was high (such as hand washing before handling food), and most participants (73.8%) were able to recognise the main symptoms of food borne disease. As a result of the home‐based hygiene training there were significant changes in knowledge, attitudes, and food handling practices, including the use of refrigerators, purchase of chilled and frozen foods, washing or peeling of fruits and vegetables, and the cooking of meat‐based products. The project demonstrates that it is possible for communities to improve their food hygiene awareness and food handling behaviours through home‐based peer‐facilitated training programmes, with minimal input from professionals.  相似文献

Determining the best way to persuade consumers to consume more healthy foods is challenging. In Bangladesh, however, daily newspapers consistently show that various hazardous chemicals (e.g. calcium carbide, sodium cyclamate, cyanide and formalin, etc.) are mixed with or added to foods and foodstuffs. These chemicals are very dangerous to humans. This present study examines the reasons behind the use of hazardous chemicals in foods as well as the extent to which food producers/sellers use such chemicals. In addition, this study assesses consumer perceptions of and attitudes towards these contaminated food items and explores how adulterated foods and foodstuffs affect consumer health. The empirical data were collected from 110 consumers, 25 sellers or producers, seven doctors and seven pharmacists in Dhaka, the capital of Bangladesh. This study shows that nearly every consumer (93.7%) is aware that various foods and foodstuffs contain hazardous chemicals, and that 95.5% of consumers are aware that these adulterated foods and foodstuffs are harmful to their health. This paper explores the myriad reasons why consumers nevertheless feel compelled to consume such chemically treated foods.  相似文献

Factors such as raised consciousness about human health, development of the food industry, and medicine and branches of natural science studying the relation between nutrition and health have led to the popularization of foods with proven health effects. Such foods are called functional foods. Although there is growing interest in functional foods, there are several groups of consumers that are, more than others, interested in functional foods. To examine buying behavior and attitudes toward functional food of young consumers (18–30 years old) and to determine the most interested consumers, we conducted a survey using a self-administered questionnaire on a sample of 570 Croatian students. The majority of the respondents purchase functional foods, usually in supermarkets. Apart from taste, the most important functional food attribute is price/quality ratio. Respondents are buying functional foods because they believe that those foods are healthier and safer than other products. Examined market segments were based on respondents’ attitudes toward functional foods. The results of this research could be used in planning further development of the functional foods market for young consumers.  相似文献

In developed countries, choosing and purchasing food is today perhaps more complex than ever. In recent years, European consumers have experienced several food crises. We face a rapidly expanding range of novel food products, the food chain has become longer, and the origin of food more anonymous. At the same time, consumers confront increasing amounts of information on food every day. Consumers build their conceptions of modern food‐related risks on the basis of their everyday knowledge and coping strategies. Hence, the focus of this paper is on consumers’ food choices and everyday practices in relation to food safety and quality as well as food‐related risks. The paper is based on a Finnish study 1 examining consumers’ food choices. The data for the study were collected in September 2004 using an Internet‐based food diary accompanied by open‐ended questions on food‐related views and strategies. Altogether, 92 consumers completed the diary. The method combining the tradition of dietary intake and food consumption surveys with open‐ended questions was developed in order to gain an insight both on the types of foods purchased and on consumers’ conceptions of food‐related issues. In this paper, we focus on the key findings of the study as regards to consumers’ notions on food quality and safety issues and the practices they use in their everyday lives. We found eight everyday strategies consumers use. We suggest, first, that the strategies are important in simplifying food choice and making daily life easier, and second, that consumers use food‐related information flexibly in creating these strategies.  相似文献

Worldwide incidence of food‐borne disease has increased in recent years and data suggest that inadequate food‐handling behaviour in the domestic environment may be an important factor. As a consequence of this, research into aspects of consumer food safety has been undertaken, especially in the UK and USA. The overall aims of conducting such research have been to investigate aspects of consumer food safety behaviour and to utilize information in the development of effective food safety education initiatives. In the past 25 years, 87 consumer food safety studies have been undertaken using different research methodologies; 75% utilized survey techniques (questionnaires and interviews), 17% were based on direct observation, and 8% utilized focus groups. The advantages and disadvantages of the different research methods used are discussed. Similarly, different forms of reliability and validity have been considered in the context of each research method used. A comparison of results from consumer food safety studies has shown that use of different research designs and approaches has resulted in differences in the findings about consumer food safety behaviour. Survey responses have provided a more optimistic portrayal of consumer food safety behaviour than data obtained from focus groups and direct observation. Although consumers have demonstrated knowledge, positive attitudes and intentions to implement safe practices, substantially larger proportions of consumers have been observed to implement frequent malpractices. This suggests that observational data provide the most reliable information denoting consumers’ actual food safety behaviour and should be used preferentially with risk‐based data for the design of communication strategies.  相似文献

研究服务型制造企业在生产方式方面的转变,结果表明企业对服务的依赖性正在增强,价值链也在向服务延伸,逐步向消费者提供面向全生命周期的服务,而且服务型制造企业在选择供应商时更加注重供应商的环保绩效、服务能力和质量以及成本柔性。在此基础上运用模糊相似优先比方法建立供应商评价模型,实例的分析结果表明该模型为服务型制造背景下,供应商选择问题提供了有效的技术经济分析方法。  相似文献
