The present work is focused in some aspects of the adoption process of unfamiliar foods. We make a distinction for the concept of unfamiliar food based on consumers’ degree of knowledge of the ingredients, therefore, we categorize unfamiliar food in two different types: unknown food (unknown ingredients) and novelty combination food (known ingredients combined in a novel or unusual way). Based on this distinction, we analyze the effect of this different source of food unfamiliarity on the intention to try it, considering personal traits such as food neophobia and consumer ethnocentrism. Our results show that the degree of food unfamiliarity has a higher impact on intention to try in consumers with low levels of consumer ethnocentrism, and that type of unfamiliarity moderates the effect of level of unfamiliarity on intention to try only in consumers with high level of consumer ethnocentrism.  相似文献

In recent years, a significant amount of research has focussed on the analysis of consumers' aversion to new technologies in food production and processing. At the same time, research has shown that environmental attitudes may be related to purchasing behaviour of consumers. This paper presents the result of an investigation into Canadian attitudes towards nanotechnology, in general, and in applications in the food industry. The relationship between the food technology neophobia scale, environmental attitudes and nanotechnology is examined. The results suggest that food technology neophobia is significant in explaining attitudes towards nanotechnology, in general, and for food packaging and foods. Environmental attitudes are important in explaining respondents' attitudes towards nanotechnology in general but not in explaining attitudes towards nanotechnology in food packaging or food applications. Survey respondents' views of the role of science and technology in society (makes society worse or better off) are a more important determinant of attitudes towards nanotechnology than whether they had heard of nanotechnology prior to the survey.  相似文献

Although dining out is viewed as a favorite activity among international tourists visiting South Korea, it is one that may cause concern due to their unfamiliarity with new circumstances and offerings. In an attempt to promote Korean food, the purpose of this study was twofold to examine: (1) the effect of food neophobia on tourists’ variety-seeking behavior, and (2) if the acquisition of local food information offsets the negative effect of food neophobia on tourists’ variety-seeking behavior. Using structural equation modeling, this study confirmed that food neophobia limits tourists’ variety-seeking behavior in food consumption. Further, when more food information was acquired, tourists were more willing to try foods in comparison to those who searched for relatively little information. These findings advance the understanding of the food consumption behavior from the international tourist perspective, thereby providing the theoretical and practical groundwork for future studies. Useful insights will be provided for use by destination marketers and foodservice suppliers in promoting their gastronomic products.  相似文献

Food preferences can be established in young children and these food preferences could extend into adulthood. This article is about MyPlate Food Group Books which are five nonfiction books. Each book covers one food group. The books were developed with input from 4‐year‐old children, preschool educators, and specialists in nutrition education and child development. The books were tested for acceptance and potential for behavior change with a small group of 3‐year‐old children. After the books were read once a day for 2 weeks by teachers, the authors tested the effect of book exposure on food consumption by measuring aggregate plate waste. Although changes in food consumption behaviors were not observed, the teachers indicated changes in the preschooler's attitudes toward trying new foods. Positive attitudes toward new foods could result in increased familiarity and eventually changes in food behavior.  相似文献

This research is aimed at investigating consumers' willingness to pay (WTP) for conventional, organic and functional yogurts in two different information treatments. The basic information treatment provided respondents with yogurts labelled conventional, organic or functional while the second treatment included additional information. To elicit values for these specific products, 100 Italian consumers participated in an experimental auction using the Vickrey fifth‐price sealed‐bid mechanism. Findings reveal that providing additional information through a specific health claim increases consumer's perceived value of the functional yogurt, while for the organic counterpart additional information on organic regulation does not add much to the premium. Moreover, our study shows that specific socio‐demographic variables (as gender, age, presence of kids in the household and the need to follow a specific diet) positively affect WTP for functional and organic yogurts.  相似文献

Abstract

This paper focuses on the evolution of Russian food retailing and linkages between and among firms in the food supply chain. Intermediation theory is used to develop a conceptual framework. Intermediaries have played an important role throughout the Russian food supply chain fulfilling the function of matching sellers and buyers. Tighter vertical linkages between firms in the Russian food industry are becoming more prevalent, and the roles of intermediaries may be performed by agents acting on behalf of a vertically integrated principal. The food retailing sector in the Russian Federation is evolving to be a source of information from the consumer to upstream firms.  相似文献

Adopting an interpersonal communication perspective, this study examines the propositions that a salesperson's touch increases trust, which increases product evaluations and purchase intention. These relationships are evaluated in a contact and non-contact culture, with need for touch (NFT) examined as an additional moderator. An exploratory series of in-depth interviews provides an initial understanding of these relationships, followed by a 2 (touch/no touch condition) × 2 (consumers in France/Germany) experiment with wine serving as the example category. The findings indicate that touch does not uniformly instill trust in customers. Instead a salesperson's touch relates to greater trust only when consumers have an inherent NFT or when they are from a culture where personal touching behavior is less prevalent. Trust, in turn, relates positively to evaluations of product attractiveness, quality, and to purchase intention.  相似文献

Given current environmental concerns, the organic food market is an important issue in terms of sustainability. The consolidation of this market is based on trust. Many consumers rely on partial information to assess the quality of organic food and cannot determine its authenticity with certainty. They are led to trust the actors of the organic food chain and the government. In addition, numerous industrial and sanitary scandals have highlighted the need for the actors of the sector to establish relationships based on trust and transparency in order to guarantee the traceability of products and to protect the health of consumers. This research examines the impact of trust and confidence in producers and retailers on the intention to purchase organic food. To address this research issue, we conducted an online questionnaire survey of 316 organic food consumers in France. The results show the central role of quality as a strategy for building and maintaining trust with producers and retailers. They show for the first time the positive impact of trust in producers on trust in retailers. The results of this research allow us to provide advice to growers and retailers to maintain trust and promote purchase intent.  相似文献

ABSTRACT

This study has twin objectives. Firstly, it explores the antecedents of retailer’s trust and its effect on organic food purchase intention. Secondly, it explores the relationship between word of mouth and retailers trust and the effect of word of mouth (WOM) in organic food purchase intention in the context of a developing economy. Cluster sampling method combined with judgement was used for survey in India. 541 usable questionnaires were analyzed. Findings indicated that Trust in retailer develops on the basis of perceived food quality, perceived service quality and perceived fairness in price. Perceived fairness in price is more important for building trust followed by perceived service quality. Both trust and WOM lead to purchase intention of organic foods. Among the two predictors of purchase intention, trust in retailer emerged as a bigger explanatory variable as compared to WOM. The current study adds word of mouth as a significant antecedent in developing purchase intention for organic foods along with the role of retailer trust. Implications for managers and researchers are emphasised.  相似文献

This research presents a qualitative exploration of food-related nostalgia experienced by individuals from Russia and the former Soviet Union in the context of diasporic waves. By varying time and space dimensions associated with nostalgia, the analysis is conceptualized around three “locations”: (1) Russia and the Commonwealth of Independent States, (2) Brighton Beach, New York, and (3) cyberspace. Weblogs, demonstrated here to be objects of inquiry, are analyzed according to their nostalgia content, social connections, and community interaction. Nostalgic evocation through traditional cuisine is evident in all three settings. Personal, interpersonal, and cultural nostalgia are apparent in web content, demonstrating a technological role in the creation, sharing, and dissemination of nostalgia. Implications of the study relate to the sociology of food and interdisciplinary food studies, culinary tourism, online and offline marketing, and product distribution into ethnic and international markets.  相似文献

Although consumer interest in organic food has risen over time, resulting in a generally positive attitude toward these organic food products, scholarly research suggests a comparatively low volume of its consumption in the market. This has resulted in an urgent need to study the motivations which enhance consumers’ proclivity to purchase food items produced organically. The current research attempts to understand potential associations between motivations (intrinsic and extrinsic), attitude, and buying behaviour towards organic food. Self-determination theory (SDT) was applied to develop a theoretically grounded framework which was evaluated with 378 organic food consumers. The hypotheses were tested by analyzing the data through structural equation modelling (SEM), wherein environmental concerns and trust were the moderating variables. The study results demonstrate the significant influence of intrinsic motivation, integrated and external regulation on consumer attitude, and buying behaviour. But, attitude had no significant association with buying behaviour. The findings indicate consumers’ motivation may be stimulated to encourage higher frequencies of purchasing organic food by emphasizing values that reflect motivations arising from ethical or green consumerism, health, and social benefits. Furthermore, policymakers should focus on avenues to integrate organic food as permanent parts of individual lives and a socially exalting behavioral action.  相似文献

The objective of this study was to expand on the limited awareness of the U.S. fish consumer. Measures were tested through a Web-based national survey. The final survey consisted of 40 questions, including environmental awareness, food neophobia, fish consumption, reasons for consuming fish, and demographic variables. Correlations and t tests were used to analyze relationships between eating fish in restaurants and other variables. Hierarchical cluster analysis was used to segment respondents into two groups based on their environmental awareness and neophylic/neophobic attitudes. EcoFish consumers were more likely to be male, eat fish for health and the environment, and eat fish at restaurants significantly more than the Indifferent Fish consumers. Restaurants can use these results to market to eco-friendly, health-conscious fish consumers.  相似文献

Although the organic food sector has been researched for around 20 years, still little is known about consumer behaviour when comparing developed and emerging organic markets. Therefore, the aim of this study is to investigate the determinants of organic food consumption in a mature (Germany) and an emerging (Chile) organic market using a model based on the theory of planned behaviour and partial least squares for parameters estimation. The reported results have implications for decision makers in both countries. The use of altruistic arguments in organic food marketing is a key aspect to increase organic food demand in both countries. However, egoistic motives might also gain importance in Chile, as they already have in Germany. In both countries, the barriers for organic food consumption have to be addressed with great attention—a lack of information and availability, especially in Chile, and scepticism about organic food in Germany.  相似文献

Factors such as raised consciousness about human health, development of the food industry, and medicine and branches of natural science studying the relation between nutrition and health have led to the popularization of foods with proven health effects. Such foods are called functional foods. Although there is growing interest in functional foods, there are several groups of consumers that are, more than others, interested in functional foods. To examine buying behavior and attitudes toward functional food of young consumers (18–30 years old) and to determine the most interested consumers, we conducted a survey using a self-administered questionnaire on a sample of 570 Croatian students. The majority of the respondents purchase functional foods, usually in supermarkets. Apart from taste, the most important functional food attribute is price/quality ratio. Respondents are buying functional foods because they believe that those foods are healthier and safer than other products. Examined market segments were based on respondents’ attitudes toward functional foods. The results of this research could be used in planning further development of the functional foods market for young consumers.  相似文献

Trust in animal farming is a complex phenomenon and it is expressed in heterogeneous ways in different cultural contexts. Nordic countries are typically known as high‐trust societies in terms of food issues. Based on group interviews among Finnish consumers, this paper explores how citizen–consumers express trust and distrust regarding animal farming practices and whether it is possible to identify different forms of trust among different consumer groups. The foundations of emotional trust in animal farming have been weakening due to urbanization and the structural change in agriculture. Ordinary shoppers responded to this situation by transferring responsibility for farm animal welfare to public authorities, relying on habitual policy‐generated trust in animal farming. In contrast, gastronomes and organic consumers actively cultivated their emotional trust in livestock production by creating new kinds of contacts to farming. Gastronomes, organic consumers and vegetarians especially acknowledged the complexity of the claims made in farm animal welfare politics. As trust in food has arguably become a subject of active negotiation in Finland, the foundations for the habit‐based policy‐generated trust may be partly weakening, creating more space for the politicizing of food issues and the developing of alternative sources for regaining trust in food production.  相似文献

The purpose of this study is to determine the dietary patterns and prevalence of food insecurity in low‐income families participating in community food assistance programs. A total of 236 head of households are selected as a convenience sample and interviewed using the Radimer/Cornell Hunger Questionnaire and food frequency table. Pearson Chi‐square is used to analyze the prevalence of food insecurity and the association between food insecurity and dietary intake. Fifty‐one percent of households with children are food secure, 24.3% are food insecure without hunger, 12.2% are food insecure with moderate hunger, and 12.2% report food insecurity with severe hunger. Ten percent of households without children are food insecure with moderate hunger, and 5% report food insecurity with severe hunger. Results also show that consumption of foods from the food groups recommended by the U.S. Department of Agriculture decreases as the presence of food insecurity increases.  相似文献
