This paper examines some basic issues associated with supply chains in the context of acquiring local ingredients as part of producing a culinary tourism experience. Based on data collected from Executive Chefs at Relais & Châteaux restaurants through surveys and personal interviews, the authors document producer-to-chef relationships, why and how local ingredients are featured in menu listings, and how chefs communicate their use of local ingredients to their guests. The results also describe chefs’ beliefs about the use of local ingredients, as well as potential issues related to the use of suppliers and their perceptions of their guests’ expectations for their meals.  相似文献

ABSTRACT

Tourists’ hotel event experiences have received little attention in tourism research. By proposing an integrated model of expectation–confirmation theory (ECT) and the experience economy concept, this research explores the relationship between tourists’ event experience and their satisfaction regarding the hotel event setting. The hypothesized model was empirically validated using a sample of 663 tourists who experienced a holiday event at a resort hotel. Results confirmed that the integration of the experience economy and ECT provided a better understanding of tourists’ post-satisfaction in a pleasure-driven setting. This affective–cognitive approach advances the knowledge of tourists’ experiences and satisfaction at hotel events.  相似文献

Union member attachment research has generally examined large unions organizing large employers. The present study presents a conceptual model and related data concerning various aspects of the union attachment expressed by individuals in small bargaining units. The results show differences among individuals in commitment based on their union experiences and demographic characteristics. Résumé Les études traitant de la loyatué qu'éprouvent les membres envers leur syndicats examinent généralement des syndicats importants au sein d'entreprises de taille. La présente étude offre un modèle conceptuel et les données relatives aux divers aspects de la loyauté exprimée par des individus appartenant à de petites unités de négociations. The behavior of charter yacht tourists in the British Virgin Islands can be viewed as a symbolic expression and an inversion of the central sexual and social ideologies of the tourists' home culture. The paper analyses the behavior as a form of play, following Huizinga and Norbeck, and in terms of liminality and communitas, following Victor Turner. The conspicuously “anti-structural” mores and behavior allow the tourists licensed suspension of everyday rules, while reinforcing the latter. The tourists' image of the Caribbean as a sensual playground and the hosts' image of the tourists as self-centered and frivolous are established and perpetuated in this liminoid context.  相似文献

The serious leisure inventory and measure (SLIM) was tested with 348 chess players to confirm the factors, assess the effects of method bias, and propose a set of the best-performing items for the 18 factor SLIM. The 54-item SLIM demonstrated acceptable fit and reliability values. The effect of method bias was evidenced in the sample and explained one-third of the variance. Inspection of factor loadings, when controlling for method bias, yielded one best-performing item per factor. Findings indicate method bias continues to be problematic for self-report measures such as the SLIM.  相似文献

This article reflects on aligning leisure research with the local foods movement while placing the local foods movement into the larger framework of sustainability and the fields of leisure and recreation. The local foods movement has persisted during difficult economic times; growth in local foods venues and young people endeavoring to establish small-scale sustainable farms continues to flourish. Given the history of leisure research and its continued success alleviating participation barriers and constraints, the need for leisure researchers to focus on local food systems is imperative and timely. This essay highlights the notion of leisure in living through local foods and the serious leisure aspects of small-scale sustainable agriculture. This article also encourages leisure researchers to explore and assess the relationships between the local foods movement and small-scale farming as embedded in the larger framework of sustainability.  相似文献

Researchers have noted the utility of the Investment Model in explaining the formation of loyalty. This study extends the Investment Model in a leisure service context by including two additional constructs of quality and value. Quality and value are proposed as antecedents of satisfaction, with their effects on loyalty mediated by satisfaction. Results from an online panel survey of American cruise passengers support these hypotheses. The study provides a model of loyalty building that may shed new insight on loyalty research.  相似文献

This paper illustrates the problem of “unequal weighting of cases” which is present in the use of correlation analysis. Does exporting make firms more productive, or do more productive firms choose to become exporters? This paper considers the link between exporting and productivity for a sample of firms in US business services. We find that larger, more productive firms are more likely to become exporters, but that these factors do not necessarily influence the extent of exporting. This conforms with previous literature that there is a self-selection effect into exporting. We then test for the effect of exporting on productivity levels after allowing for this selection effect. We model both the relationship between exporting and productivity, and a simultaneous relationship between export intensity and productivity after allowing for selection bias. In both cases we find an association, indicating that productivity is positively linked both to exporting and to increased exposure to international markets.  相似文献
