Recent developments in environmental and animal welfare issues, and the introduction of new production practices may have affected consumer attitudes and preferences toward differentiated product choice. Factors such as animal well-being, environmentally friendly production, and the use of antibiotics appear to be increasingly core consumer concerns. We link the aforementioned with Maslow's hierarchy of needs suggesting that the higher income consumers should be more altruistic in their consumptive behavior and test this by evaluating consumer preferences for these attributes in pork chops. We also test whether social consciousness of the consumers translates into choice behavior. Data was obtained by choice experiment surveys and mixed logit estimation was used to estimate consumers' willingness-to-pay for the credence attributes. Results reveal that both, higher income and socially aware consumers are on average willing to pay higher premiums for the antibiotic-free attribute, but not for other two social attributes. Also, the group of higher income consumers is highly heterogeneous in their preferences, whereas socially aware consumers tend to be more homogeneous in their preferences.  相似文献

Abstract

Direct sales of wine and winery souvenirs to winery visitors is important in a number of regions throughout the United States and around the world. The attributes that influence winery visitors' beliefs can have a significant impact upon wine purchases, repeat visits, positive word-of-mouth comments, and upon future purchases at restaurants and other retail outlets. A study of winery visitors found four underlying factors from a list of 17 attributes. Regression results indicated that several wine, environment, and service attributes have a significant impact upon consumer attitudes and purchases. Product and purchase involvement were also found to impact purchase behavior.  相似文献

This study examines (1) the differences in Russian consumers' attitudes toward European and domestic household goods and associated unethicality of firms' marketing practices, as well as the differences in consumers' buying and using preferences and (2) the effect of consumers' attitudes toward the products and associated marketing efforts on their buying and using preferences. The findings indicate that country of origin has a substantial effect on the attitudes of Russian consumers toward all product/marketing cues examined, whereas consumers' attitudes toward products and associated marketing unethicality are important determinants of their buying/using preferences. Local food systems providing high‐value products are seen as a tool to sustain economic activity on family farms in rural areas. The objective of this study is to investigate the role of gastronomic, externality and feasibility characteristics in consumers' demand for local and for organic foods. An Internet questionnaire survey was conducted in 2010 among Danish consumers. 3211 respondents completed the questionnaire, which included questions about respondents' food‐related values and their specific perception of organic and local varieties of honey and apples. Variables related to consumers' food‐related values and product perception were analysed using principal component analysis, in order to identify overall dimensions (factors) in these variables. Although statements about gastronomic attributes (e.g. taste, appearance, quality) were quite strongly represented in three of these factors, externality and availability concerns also contributed significantly to the overall variation in the variables. Multinomial logit choice modelling was used for describing the relationship between these dimensions and respondents' stated choices regarding organic and local varieties of honey and apples. Results suggest that although both organic and local food supply chains are often associated with special attributes such as gastronomic characteristics and relatively beneficial externality attributes, these attributes are perceived differently for the two types of supply chains. Perceived gastronomic quality is the most important determinant for food choice, but externality and feasibility aspects are also important correlates.  相似文献

Customer satisfaction with a service experience is often determined by several critical attributes. Prior studies have suggested that food, physical environment, and employee service impose an important effect on diners' satisfaction with restaurant services. Although much research has looked at the direct effect of these attributes individually, little is known about them when they are considered together. This study investigates the relative importance and combined effects of the determinants of customer satisfaction in China's hospitality industry. The results show that food taste, employee service, and physical environment (in that order) all significantly contribute to diners' satisfaction, and that one attribute may substitute for another attribute in the satisfaction formation process. Generally, humanic attributes (employee service) can effectively substitute for less humanic attributes (physical environment).  相似文献

Abstract

This study examined the effects of consumers' internal shopping motives and external store attributes on excitement that shoppers may experience at discount stores in Korean markets and the mediating impact of excitement on selected behavior outcomes. Among three types of shopping motives (socialization, utilitarian and diversion), diversion significantly affected the level of excitement that shoppers experienced at the discount store. Store attributes of facility-related convenience and a neat, spacious atmosphere had an impact on shoppers' excitement at the discount stores. Excitement positively affected shoppers' satisfaction and repatronage intentions in discount store retailing in Korea. The empirical study results have major implications for multinational retailers as well as for future research in the area of international retailing.  相似文献

This study utilizes the Total Food Quality Model to gain a better understanding of how Malaysian consumers make their decision to purchase fresh/chilled meat. We examine the association between quality cues and desired values (quality attributes) with regard to food that is guaranteed Halal, safe to eat, healthy and nutritious, has a good taste, represents good value for money, and is produced in a way that protects the environment and worker welfare. The findings reveal that different quality cues assume different levels of importance when pursuing different desired values.  相似文献

The aim of this research is to identify ways of increasing sales by understanding how household food buyers choose fresh produce items. Three hundred responses were obtained from a questionnaire randomly distributed in one city in Australia. Fresh produce items are frequent, low-value purchases. Their most important attributes are taste, price, and freshness, and the buyer choice method used for individual products varies from occasional “impulse” purchases to regular “planned” purchases of staples. With planned purchases some are seen as “destination” products whereas for others “substitutes” are available. In order to optimize sales, retail outlets should avoid becoming out-of-stock for destination products and co-locate substitute products. Sales may also be increased by displaying impulse products in prominent positions.  相似文献
