A growing body of literature now demonstrates the importance of behavioral factors in individual food consumption. However, whether addressing hunger, nutrition, or obesity, food policies are often created to target changes at the aggregate level. These policies ignore such behavioral tools or effects and their potential heterogeneous effects on consumers. In this article, we review the most important results examining food consumption and behavioral economics and provide a thorough discussion of how such tools are now being added to the lexicon of effective policy tools. In addition, we discuss how traditional policy tools that ignore the individual behavioral effects can miss the mark or even backfire. The implication is clear: a thorough understanding of behavioral economics is necessary to create efficient food policy. 相似文献

本文使用CHNS2000、2004年的个体膳食调查数据,估计60年代和70年代生人的四大类食物(谷类、蔬菜类、畜肉类和蛋类)的消费函数。对回归结果进行分析发现,食品消费对于价格因素并不敏感,收入是影响消费决策的重要变量;并且代际差异确实存在。就收入弹性而言,两者在畜肉类食物上的差异最大。同时,对于收入引致的畜肉类食物消费增量与身体质量指数(BMI)增量之间关系的研究认为,两者存在显著正相关关系,这有助于解释70年代生人超重和肥胖人口比例迅速上升的现象。 相似文献

Abstract. Obesity rates have increased dramatically over the last 30 years. Rising obesity has developed into a considerable worldwide public health problem with significant economic and social consequences. Accordingly, obesity has become a subject of economic research. This paper provides a broad survey of the recent and growing economic literature on the causes of obesity. The literature, both theoretical and empirical, overall aims to explain the rising obesity trend and to identify the factors that contribute to obesity. Also surveyed are non-economic causes and consequences of obesity and the interconnection with economic influences. An understanding of the causes of obesity allows policies to be considered that might stem the global increase in obesity. 相似文献

A sharp increase in obesity during the last 15 years in the United States became one of the nation’s main public health problems. The theory of rational addiction seems to explain human behavior in food consumption leading to obesity reasonably well. The interesting thing about our results is that the tax policy, normally used to correct various distortions, is to serve in this case as the preventive policy: additional taxes on future prices of the addictive (sweet) foods contribute to lower sugar consumption and BMI at present time. On the other hand, increasing education level is usually considered a preventive type of policy. In this case, it leads to lowering the levels of the BMI in already overweight and obese population. 相似文献

Non-communicable diseases (NCDs) are the leading cause of global mortality. As the social and economic costs of NCDs have escalated, action is needed to tackle important causes of many NCD’s: low physical activity levels and unhealthy dietary behaviours. As these behaviours are driven by upstream factors, successful policy interventions are required that encourage healthy dietary behaviours, improve physical activity levels and reduce sedentary behaviours of entire populations. However, to date, no systematic research on the implementation and evaluation of policy interventions related to these health behaviours has been conducted across Europe. Consequently, no information on the merit, gaps, worth or utility of cross-European policy interventions is available, and no guidance or recommendations on how to enhance this knowledge across European countries exists. As part of the Joint Programming Initiative “A Healthy Diet for a Healthy Life” (JPI HDHL), 28 research institutes from seven European countries and New Zealand have combined their expertise to form the Policy Evaluation Network (PEN). PEN’s aim is to advance tools to identify, evaluate, implement and benchmark policies designed to directly or indirectly target dietary behaviours, physical activity, and sedentary behaviour in Europe, as well as to understand how these policies increase or decrease health inequalities. Using well-defined evaluation principles and methods, PEN will examine the content, implementation and impact of policies addressing dietary behaviour, physical activity levels and sedentary behaviour across Europe. It will realise the first steps in a bespoke health policy monitoring and surveillance system for Europe, and refine our knowledge of appropriate research designs and methods for the quantification of policy impact. It will contribute to our understanding of how to achieve successful transnational policy implementation and monitoring of these policies in different cultural, demographic or socioeconomic settings. PEN will consider equity and diversity aspects to ensure that policy actions are inclusive and culturally sensitive. Finally, based on three policy cases, PEN will illustrate how best to evaluate the implementation and impact of such policies in order to yield healthy diets and activity patterns that result in healthier lives for all European citizens. 相似文献

Obesity is described as the fastest growing public health challenge facing developed nations (Prentice, 2006). This research introduces the topic of obesity to the retailing literature by examining the interplay between obesity in frontline employees and customer evaluations of service transactions. Baseline effects are established that show customers evaluate employees and firms more negatively if the frontline worker is obese compared to average weight. Two follow-up studies identify means by which firms may offset the negative obesity effects. Specifically, signaling theory is drawn upon in Study 1 to justify the introduction of observable quality cues as a means to offset negative stereotypes. Results indicate that the presence of unambiguous quality cues attenuate unfavorable judgments of the obese employee and the affiliated retail store. In Study 2, a countervailing, jovial stereotype is primed as a means to offset the more prominent negative ones. Retail managers can use this research as a means to understand an important caveat to frontline service evaluations and as the basis for managing a prominent negative stereotype. 相似文献

In this research, the authors examine the effects on preschool-aged childhood obesity rates associated with the direct and moderating influence of fast food restaurant density levels, consumer poverty, and urbanization. Results show that higher levels of fast food restaurant saturation are associated with increased levels of childhood obesity in both urban and poor areas, with the largest negative effect of fast food availability on obesity occurring in more economically disadvantaged, urban areas. Findings highlight why the societal impacts of targeting vulnerable populations through corporate location selection strategies should be fully considered in social marketing initiatives, especially given that unhealthy products with long term health risks are increasingly accessible. 相似文献
