This study aims to examine whether the presence of an organic food menu can positively influence diners’ decision-making. A 3 (restaurant segment: quick service vs. casual dining vs. fine dining) by 2 (price discrepancy between competing restaurants: small vs. large) scenario-based experiment was conducted with 405 U.S. consumers. MANCOVA results indicate that using organic ingredients offers a greater advantage for the quick-service segment regarding perceived food quality, attitudes towards the restaurant, and willingness to select, compared to casual and fine dining segments. The magnitude of a premium price of organic ingredients negatively influences such advantage in the process of consumers’ decision-making. When a large (vs. small) premium price is charged for using organic ingredients, customers’ preferences for the restaurant (over its rival) significantly drops to such an extent that customers are more willing to choose the competitor (i.e., rival restaurant with a conventional menu). The present research attempts to understand the importance of altruistic and egoistic value in determining the young consumers’ intention to buy organic food. Environmental concern was considered as the altruistic value, whereas health concern as egoistic value. Using the convenience sampling method, a total of 304 usable responses was collected from young consumers, with the help of self administered questionnaire survey approach. Data analysis was done using two step structural equation modeling (SEM) approach, i.e. measurement model and structural model. Findings indicated that, both altruistic as well as egoistic value influences the intention to buy organic food among young Indian consumers. However, egoistic value was found to have more impact on the consumers’ organic food purchase intention. The present research is one of the initial attempts in the Indian context to understand the importance of values (altruistic and egoistic) organic food consumption among young consumers. 相似文献

Abstract Income growth in highly industrialised countries has resulted in consumer choice of foodstuffs no longer being primarily influenced by basic factors such as price and organoleptic features. From this perspective, the present study sets out to evaluate how and to what extent consumer choice is influenced by the possible negative effects on health and environment caused by the consumption of fruit containing deposits of pesticides and chemical products. The study describes the results of a survey which explores and estimates consumer willingness to pay in two forms: a yearly contribution for the abolition of the use of pesticides on fruit, and a premium price for organically grown apples guaranteed by a certified label. The same questionnaire was administered to two samples. The first was a conventional face-to-face survey of customers of large retail outlets located around Bologna (Italy); the second was an Internet sample. The discrete choice data were analysed by means of probit and tobit models to estimate the utility consumers attribute to organically grown fruit and to a pesticide ban. This paper aims to investigate organic food consumption based on the perspectives of an extended research model by integrating the theory of consumption value (TCV) and the theory of reasoned action (TRA). First, we tried to find out how five consumption values of functional, social, emotional, conditional, and epistemic in classic TCV influence consumption choice especially in the sustainable consumption domain of organic food, interpreted as green perceived value (GPV) in the reflective-reflective second-order latent. Second, as an attempt to extend the classic TRA, this study included trust and perceived knowledge in the research model in addition to the subjective norm, attitude, and behavioral intention. A partial least square structural equation method (PLS-SEM) was adopted to examine our research model with 251 samples. Our results revealed that GPV significantly affects consumer attitudes. Consumer attitudes and subjective norms also have a significantly positive effect on purchase intention. As an extended TRA, GPV has a significantly positive effect on trust while trust significantly impacts purchase intention. Further, perceived knowledge positively influences attitude and trust. By jointly considering TCV and TRA, this study proposes several implications emphasizing how GPV and perceived knowledge affects consumers’ organic food consumption choice based on the role of increased trust. 相似文献

Factors Affecting the Extent to which Consumers Incorporate Functional Ingredients into their Diets 总被引:1,自引:0,他引:1
This study considers the factors that explain the consumption of food and beverages with functional ingredients to avert or offset health problems. We use an instrumental variables Poisson regression model to deal with the endogeneity of perceived health status in functional ingredient use. The first stage results indicate that perceived health status is associated with attitude towards functional foods, food consumption motives and information seeking and being female. The second stage results suggest that individuals who consume more functional ingredients tend to have a positive attitude towards functional foods, are novelty‐seeking, female and older. As expected, consumption of functional ingredients is more likely when consumers’ self‐reports indicate that they are aware of functional foods’ nutritional value and the link with their own health. Consistent with previous research, most of the socio‐demographics are poor predictors of functional ingredient consumption. 相似文献

AbstractConsumers' needs have grown to such an extent that they are sought out of nutritious and pleasant organoleptic foods, as well as functional foods. This study explores consumer attitudes towards health nutrition products and particularly functional foods, using data from a survey to 325 consumers. The results designate that consumers recognize different kinds of functional foods, willing to pay a premium for their purchase. They perceive that functional foods may contribute to easily follow a healthy and balanced diet and reduce the risk of health problems but appeared anxious about the health benefits these foods communicate in their labelling. 相似文献

This paper analyses individual preferences regarding environmental and health improvement technologies in organic food production systems. The impure public model is applied to explore the implications of organic food preferences for environmental market provision. Empirical results from a survey reveal that consumers are willing to pay for both health gains and environmental friendly technologies in organic milk production, although the valuation of the health aspects is higher. Prior information about organic production systems and shopping convenience are key variables in interpersonal comparisons of willingness to pay. The perceived overall value of organic production systems was higher among individuals with stronger environmental preferences than among those who prioritise health concerns. The conclusions of this study may have implications for the analysis of efficiency in the organic produce market. 相似文献

Participatory plant breeding began in developing countries and now some European farmers and scientists are proposing its suitability in contributing to sustainable agriculture. This paper uses both genetics and sociology to determine the conditions required. A review of the sustainability of projects implemented in developing countries initiated discussion of an organic durum wheat participatory breeding programme, which is currently being implemented in the south of France. The analysis highlighted the need for the critical participation of experts from different horizons in a socio-technical network. Multi-level interactions and cross-linked learning processes about breeding methods and sociological concepts are needed for effective communication between different stakeholders and scientific disciplines. This approach enables implementation of a range of different action systems in which the production of relevant knowledge and rules addresses the issue of the sustainable development of diverse agro-food systems, rather than the generalization of one model. 相似文献
