The purposes of this study are to analyze developmental trends, hospitality curricula structures and strategies of curriculum development for planning the integrated curriculum of foods and beverage (F&B) management of the vocational and technological educational system in Taiwan. The qualitative and quantitative research methods – theoretical analysis, document analysis, focus group in-depth discussion, and questionnaire investigation – were applied to this study. The vertical curriculum design – from vocational high school level to college and university level – and contents were developed by this study. The major findings of the research provide a basis for curriculum development of F&B management education. 相似文献

Abstract This article examines the effective risk relievers for different dimensions of perceived risk on mail-order purchase of food products. The sample comprised 1,600 active and inactive mail-order specialty food shoppers in the UK. The analysis focused on the correlation coefficients between consumers' levels of perceived risk and their weight on the importance of the risk relievers. Amongst 15 risk relievers, the results implied that there are certain risk relievers attached to higher levels of importance by consumers, who perceive higher levels of risks in certain aspects of mail-order purchase. Therefore, mail-order companies should promote the effective risk relievers to reduce specific dimensions of perceived risks. 相似文献

In this paper we present the results of an experimental auction conducted to examine the influence of health and nutritional information on food choice and in particular estimate consumer willingness to pay (WTP) for bread that contains functional ingredients. Employing a sandwich we find that consumers are WTP more for a whole grain and whole grain granary bread sandwich than other bread types including white bread that contains a functional ingredient. We also find that consumers react positively to the provision of nutritional and health benefit information but that this effect occurs regardless of whether we supply specific or non-specific health benefit information. We discuss information provision and health policy implications that emerge from our analysis for bread products in the sandwich market. 相似文献

Organic certification represents a growing business in international food market. In this article, an analysis of the factors influencing the purchase of organic extra-virgin olive oil is done for Italian consumers. A k-means cluster analysis was used to identify market segments. Results showed that it is possible to classify the Italian market into three clusters, respectively, indicating high, intermediate, and low willingness to pay a premium price (WTP) for organic certification of extra-virgin olive oil. Safety, nutritional, and health aspects appear to influence WTP. Factors concerning environmental sustainability and the supports to Italian food system are considered important, but do not play a fundamental role in increasing the consumer’s WTP. 相似文献

It is widely believed that the rate of profit across industrialsectors, while not in fact uniform as stipulated in the theoryof prices of production, is independent of the sectoral organiccomposition of capital. It follows that the simple labour theoryof value must be systematically in error as a predictor of actualsectoral aggregate prices. We offer empirical evidence fromthe US economy (1987 inputoutput table) suggesting thatthis is not so: there is a substantial and statistically significantnegative association between organic composition and profitrate across sectors. 相似文献

目前各国对转基因食品采取了“不加贴标签”、“自愿加贴标签”以及“强制性加贴柝签”等三种标签管制方式。本文应用消费者拟线性效用函数模型,对强制性加贴标签管制方式对消费者福利的影响进行了深入探讨。在此基础上通过对现有三种标签管制方式的比较分析,确定了各种标签管制方式实施的条件与影响,并认为在我国现有条件下,只要检测成本不高到难以承受的地步,对转基因食品应采取强制加贴标签管制方式。 相似文献
