摘    要:对新型白酒的特点、理化指标等进行了简要介绍。从原辅材料的进厂、生产工艺、勾兑和贮存等几个方面对质量控制措施进行了讨论。指出,质量控制是保证白酒产品质量高低及稳定的关键措施,白酒生产厂家应根据自身的特殊情况和产品等级采取相应的控制措施。

Abstract:The characteristics and chemical and physical specifications of the new type of distilled spirits are briefly introduced. The quality control measures of various processes, including selecting raw material, brewing and converting techniques,are discussed. Quality control plays an important role in the quality and stability of distilled spirits. The distilled spirit factory should take corresponding measures according to its situation and product grades.
