反思中国饭店职业教育

摘    要:文章认为 ,中国饭店职业教育在以下三方面明显存在不足 ,即课程设置上基础课比重偏大 ,专业课比重偏小 ;在教材上强调理论有余 ,而重视实践不足 ;在教师来源上强调知识型而非实践型。文章认为职业意识和职业习惯的养成是饭店职业教育的灵魂。

Abstract:The paper holds that there exists obvious defects in China's hospitality vocational education;i,e,; the proportion of basic courses is too big while the proporation of specialized courses is so small in terms of curriculum-establishment; more stress is laid on theory and less emphais on practice in terms of teaching materials; knowledge-type teachers are emphasized rather than practice-type teachers. The paper holds that professional awareness and the forming of professional habits are the soul of hospitality vocational education.
