摘    要:生物酶制剂的应用是食品工业发展领域的一项重大技术突破,有效地改善了食品的风味、口感和组织结构等感官指标,增加了产品的附加值。本文概述酶制剂的特点和酶制剂在食品生产、加工、贮藏保鲜等环节的应用,并在此基础上讨论酶制剂在食品工业中的应用及前景展望,为生物酶制剂在食品工业中的进一步应用指明了方向。

The Application and Development Prospectof Biological Enzyme Preparation in Food Industry
Abstract:The application of Biological enzyme preparation is a major breakthrough in the ifeld of food industry development, effectively improve the food lfavor, taste and sensory indicators such as organization structure, added the value of product. This paper summarizes the characteristics of enzymes and enzyme preparation in food production, processing and fresh-keeping of application, on the basis of the application of enzymes in the food industry and prospect makes a brief discussion for the enzyme preparation pointed out the direction for the further application in food industry.
