摘    要:中国加入WTO后,给餐饮业和高职教育都带来了机遇和挑战。餐饮业遇到的竞争更加激烈,并从区际扩展到国际,同时引发人才的竞争,对人才的数量和质量提出更高的要求,这给高职教育的发展创造了空前机遇。但餐饮业的人力资源现状不容乐观,我们应积极采取相应的对策,通过高职教育培养餐饮后备人才,这是促进我国餐饮业经受住竞争性挑战、产生质的飞跃的当务之急。

Abstract:China's entry into WTO brings both opportunities and challenges to its catering trade and vocational colleges. The catering industry will face more fierce competition from both home and other countries, and will compete for qualified employees. The competition will create more opportunities for vocational colleges to develop while they are training a large number of qualified food service workers. Most of the present food service workers in China are far from being qualified, so vocational colleges are to share the task of training them and to improve China's catering industry.
