摘    要:杏为落叶小乔木,蔷薇科,李属,在我国已有数百年的栽培历史。果胶酶处理的目的主要是使果汁澄清,提高果蔬汁的出汁率,提高超滤时的膜通量;本文是以浓缩杏浆为主要原料,利用果胶酶对杏浆进行处理,通过单因素试验得出最佳酶解条件是:pH3.0、温度55℃、果胶酶的用量为80ml/t、处理时间为2h。

Abstract:Apricot is small deciduous tree,rosaceae,and prunus.It has hundreds of years of cultivation history in China.Through processing,fruit juice will be clear,juice extraction rate and flux when filtrating will be improved.The article takes concentrated apricot pulp as main material,use pectinase to process apricot pulp,achieves the best zymolysing condition by single-factor experiment: pH3.0,temperature is 55℃,dosage of pectinase is 80ml/t,and processing time is 2h.
