The Structure,Evolution and Prospect of Food System in China

China’s food system is not only the fundamental guarantee of food security for the Chinese,but also has an important impact on global food security,food safety and so on.To better understand the evolution of China’s food system and its importance in ensuring that 1.4 billion people well and healthy feed,this paper deconstructs the concept and characteristics of food system,measures the economic scale and structure of food system in China,constructs the flow chart of China’s food system for the first,and clarifies the position of China’s food system in the national economy.Using the several input-output tables,this paper analyzes the structural changes of food system during recent 30 years in China,analyzes the evolutions of food system,and examines the evolutions of subsystems of food production,food processing,food distribution and catering,and food waste disposal.Then,this paper analyzes the driving forces of evolution from the aspects of consumer demand,technological progress and policy support.Finally,this paper identifies the challenges of China’s food system according to the demand orientation,and provides the future trend of China’s food system.
