摘    要:啤酒中的高级醇成分主要指正丙醇、异丁醇和异戊醇,它在啤酒中的适宜范围为50~100μg/ml,含量过低影响口感与风味,含量过高易引起头痛、头晕的现象。开展啤酒中高级醇含量检测方法的研究有助于提高啤酒的质量。

Abstract:The higher alcohol ingredient in beer mainly refers to propyl alcohol, isobutanol and isoamyl alcohol, and its suitable range in beer is 50-100μg/ml, low content affects the taste and flavor, high content easily causes the phenomenon of headache and dizziness. Research on detection methods of alcohol content in beer can help to improve the quality of beer.
