基于价值链视角的非遗餐饮产业数字化转型研究——以三明沙县小吃为例

数字化与价值链的双向赋能逐步成为非遗餐饮产业发展的重要组成部分。非遗餐饮具有悠久的传承历史和浓厚的文化底蕴,但部分非遗餐饮产业在价值链数字化转型方面仍然相对滞后,营业状况不容乐观。基于价值链视角,以非遗餐饮三明沙县小吃为例,分析数字化对价值链重构的重要性,以及沙县小吃价值链数字化转型方面存在的问题。在此基础上,提出沙县小吃价值链数字化转型若干路径。

Research on the Digital Transformation of Intangible Cultural Heritage Catering Industry from the Perspective of Value Chain: A case study of Sanming Shaxian Snacks

Two-way enabling of digitalization and value chain has gradually become an important part of the development of intangible cultural heritage catering industry. Intangible cultural heritage catering has a long history of inheritance and strong cultural deposits, but some intangible cultural heritage catering industry is still relatively backward in the digital transformation of the value chain, and the business situation is not optimistic. Based on the perspective of value chain, taking Sanming Shaxian Snacks as an example. The importance of digitalization to value chain reconstruction and the existing problems in the digital transformation of Shaxian Snacks value chain are studied. Based on this, several paths of digital transformation of Shaxian Snacks value chain were proposed.
