| 摘 要： | 馒头和面包的比容测定方法相同,本文以馒头为例,采用面包体积测定仪法和体积置换法对馒头进行比容测定。通过大量实验,对2种方法进行了比较分析,并对体积置换法的操作步骤进行优化。结果表明,优化后的体积置换法能够更准确、高效地测定馒头的比容。体积置换法有较强的实践意义和应用价值,其操作规范和标准测定器具有待进一步研究和优化。
