摘    要:以山楂和决明子为主要原料,以感官评分为指标,通过单因素试验,确定了山楂决明子混合汁与水的比、白砂糖添加量、柠檬酸添加量、蜂蜜添加量。通过正交试验优化,确定山楂决明子饮料最佳配方为:山楂决明子混合汁与水的比1∶1,白砂糖的添加量5%,柠檬酸的添加量0.08%,蜂蜜的添加量22%。研制出的复合饮料风味独特,具有益肾的功能。

Abstract:In this paper, hawthorn and cassia seed were used as the main raw materials to developed a compound drink. First of all, the hawthorn cassia seed juice and water ratio, sugar addition amount, the content of citric acid, honey adds were determined by single factor test with sensory score as the index. Through orthogonal test, the ratio of main raw and auxiliary materials was optimized,and the optimum ratio was: hawthorn cassia seed juice and water ratio of 1 ∶ 1, sugar addition amount is 5%, the content of citric acid is 0.08%, honey adds 22%. The natural drink with unique flavor has been developed, and has the function of benefiting kidney.
