Abstract: | This article introduces the specific applications of micro-biotechnology to vinegar production and elaborates on the applications, fermentation and cultivation of microorganism in vinegar. Biotechnology is conducive to not only food diver-sifieation but also the production of specific healthy food. Furthermore, it can be used in therapy and body building and also environmentally conducive to the sustainability of food industry. |
