摘    要:为开发市售羊肚菌资源,探讨其营养价值,以云南和四川市售羊肚菌为材料,利用酸度计和自动氨基酸分析仪对其游离氨基酸和水解氨基酸组分进行检测,为市售羊肚菌的开发提供数据支撑.结果表明,云南源羊肚菌游离氨基酸显著高于四川源羊肚菌;2种市售羊肚菌均含有17种水解氨基酸,7种人体必需氨基酸,氨基酸总量为20.54~22.93 g/...

Abstract:In order to develop the resources of commercially available Morchella esculenta and explore its nutritional value,the Morchella esculenta sold in Yunnan and Sichuan were used asmaterials.Using acidity meter and automatic amino acid analyzer to detect its free amino acids and hydrolyzed amino acid components to provide data support for the development of commercially available Morchella esculenta.The results showed that content of free amino acids was significantly increased in Morchella esculenta in Yunnan,in comparison to Morchella esculenta in Sichuan.The two commercial Morchella esculenta contain 17 kinds of amino acids and 7 kinds of essential amino acids for human body.The total amount of amino acids is 20.54~22.93 g/100 g,the content of essential amino acids is 7.42~8.64 g/100 g,and the first limiting amino acids are leucine and isoleucine.The ratio coefficient of amino acid is 80.67~85.48,and the index of essential amino acid is higher than FAO/WHO recommended nutrition model.From the perspective of applied value level analysis,it is more suitable to develop Sichuan source morels with taste and functional amino acids as the development targets.It is more suitable to develop Morchella esculenta Yunnan with medicinal amino acid as the target.
