溶血磷脂及其衍生物的应用研究进展

摘    要:溶血磷脂在食品加工中可作为乳化剂及抗菌剂使用,溶血磷脂衍生物可以促进果实成熟的同时能够保持果实的硬度,延长货架期。围绕国内外对溶血磷脂及其衍生物在食品、农产品和医药上应用的研究进展进行阐述,并提出存在的问题和发展趋势。

Abstract:Lysophospholipid can be used as emulsifier and antimicrobial in food processing. Lysophosphatidyl derivants can accelerate the ripening of fruits, retain rigidity and prolong the shelf life of fruits. Research progresses on applications of lysophospholipid and lysophosphatidyl derivants reported by scholars throughout the world are summed up. And the problems existing in current research and the developing trend are also put forward.
