浅谈食品质量管理学课程案例教学与实践教学的研究

摘    要:随着人们对食品安全问题的关注,全国相继有很多院校增设了食品质量与安全专业,食品质量管理学作为一门应用性学科,其教学对象主要是高等院校食品科学与工程、农产品加工与贮藏、食品质量与安全专业及相关专业的在校大学生。针对食品质量管理学这门课程与实际案例联系紧密这一特点。我们在教学过程中实施案例教学和实践相结合的学法,通过经典案例、分析案例结果产生的原因;深入企业分析问题解决时适用的原理与方法,帮助同学们掌握课本知识加强实践能力。

Abstract:With the people's focus on issues of food safety, many institutions successively add food quality and safety major across the country. As an applied discipline, food quality management's teaching object is college students of food science and engineering, processing and storage of agricultural products, food quality and safety and related majors. We implement the learning method of case teaching combined with practice in the teaching, aiming at the characteristics of food quality management closely linked with actual cases, and analyze idoneous principles and methods when problems are solved by entering enterprises and help students master the knowledge of textbook to strengthen practice ability through classical case and the generated causes of analyzing case results.
