Abstract: | Although gastronomy has a strong territorial component, the link between territorial products, their perception and evaluation by residents and visitors is a topic which has been barely studied. This article discusses these issues for such a product as territorially rooted in Andean culture as it is controversial: the Guinea pig. Following the application of a methodology that combines the use of structured surveys with in-depth interviews, the results show a very different valuation among residents and tourists in the city of Cuenca (Ecuador). |
