食物过敏原蛋白家族分类及其结构特点

摘    要:简述了食物过敏原的现状,并对重要的植物源性食物过敏原和动物源性食物过敏原蛋白质家族及其结构特点进行了总结。目前只有少量的蛋白质家族能够诱发IgE介导的过敏反应,而且蛋白质过敏原的空间结构对于引起过敏症状非常关键。此外还指出了未来食物过敏源的研究方向以及建立食物过敏原数据库的重要作用。

Abstract:The current situation of food allergens is stated briefly and the knowledge about the most important food allergen protein families from plant and animal and their 3D structures is summarized in this review.Only a few protein families are able to cause IgE-mediated allergic reaction,and their 3D structures are very critical to the induction of the allergic symptoms.The future researching orientation for food allergens and the importance of building a data base of food allergens are proposed.
