摘    要:目前我国食品安全已得到了前所未有的重视,要确保食品的安全性,建立和执行有效的食品安全控制体系是必须的。文章介绍了HACCP和食品安全的概况,HACCP和食品安全的关系,以及我国食品安全的现状和存在的问题,重点阐述了HACCP操作过程中容易忽视的概念、原则和方法,并提出了相应的观点。

Abstract:Currently our country' s food security has already got the unprecedented recognition,it is necessary to insure the safety of food and to build up and to carry out the valid food security control system.This paper introduced HACCP and the general situation of food security,the relation between HACCP and food security, the present situation and existent problem our ccuntry's food security,focusing on the concepts,principles and methods which ignored in HACCP operation.
