摘    要:随着社会经济的不断发展,人们逐渐提高了对食品安全的重视度,而食品微生物检验技术的应用频率逐渐提高,检验方法和技术也越来越精准。本文介绍食品微生物检验检测的主要内容,即食物的污染程度和内部的致病菌。探究PCR技术、生理生化技术、免疫学检测技术、质谱技术和光谱技术这5项新技术在食品微生物检验检测中的应用情况,并总结提升应用效果的措施。

Abstract:With the continuous development of social economy,people pay more and more attention to food safety,and the application frequency of food microbial testing technology is gradually increased,and the methods and techniques of testing are becoming more and more accurate.This paper introduces the main contents of food microbial testing,namely,the degree of food contamination and internal pathogenic bacteria.Explore the application of PCR technology,physiological and biochemical technology,immunological detection technology,mass spectrometry technology,spectrum technology in food microbial testing,and summarize the measures to improve the application effect.
