摘    要:建立食品安全可追溯体系是确保食品安全的关键。本文从食品供应链和不对称信息理论的角度分析了食品安全可追溯系统的机理,阐明了建设食品安全可追溯系统的国内外现状,重点对我国如何建立可追溯体系提出了建议,并进一步分析了我国在建立可追溯体系过程中须深入思考的几个问题。

Abstract:It is the key to construct the food safety traceability system for ensuring food quality and safety. In this study, principle of food traceability was discussed from the aspects of food supply chain and asymmetry information theory, then the research situation of food safety traceability system at home and abroad was introduced. The emphasis was put on the suggestions on the system construction in China and several problems worthy of consideration.
