| 摘 要： | 研究了褪黑素联合硫酸锌处理下西蓝花芽苗中异硫氰酸酯含量的变化,结果显示:芽苗经褪黑素联合硫酸锌处理后,其硫苷、异硫氰酸酯含量、黑芥子酶活性及总抗氧化能力均明显增加。10μmol·L^-1褪黑素联合4 mmol·L^-1硫酸锌处理4 d芽苗是最佳措施。

| Abstract: | The effects of exogenous melatonin combined with ZnSO4 on ITCs content in broccoli sprouts were studied.The results showed that glucosinolate and ITCs content,myrosinase activity and total antioxidant capacity in broccoli sprouts increased significantly under melatonin and ZnSO4 treatment.The best way was treated with 10μmol·L^-1 melatonin combined with 4 mmol·L^-1 ZnSO4 fot 4 days. |
