微生物发酵食品的保健功效

摘    要:微生物在食品中的应用能够使食品的口感与成分发生变化,使人们对食品的多样化需求得到满足.微生物发酵工程的历史非常悠久,在食品加工生产期间应用微生物发酵工程,可使食品的营养和保健功能进一步提升.因此,本文介绍了微生物发酵工程,分析其应用优势,探索微生物发酵食品的保健功效,判断微生物发酵工程的未来发展情况.

Abstract:The application of microorganisms in food can change the taste and composition of food, and meet people’s diversified needs for food. Microbial fermentation engineering has a long history. The application of microbial fermentation engineering during food processing and production can further improve the nutrition and healthy function of food. Therefore,this paper introduces microbial fermentation engineering, analyzes its application advantages, explores the healthy function of microbial fermented food, and judges the future development of microbial fermentation engineering.
