| 摘 要： | 从食品安全要素的特性看,食品属于经验品和信用品,食品安全是企业对利益相关者的道德承诺,企业违背道德承诺与企业的效用函数有关系。从宏观层面看,食品安全问题不可能彻底解决,只能主动应对。从微观层面看,可以解决某一个具体的食品安全问题。当食品安全的监督、防治成本等于不安全食品的影响成本时,食品安全防治的效率最优。在食品安全防治中,要考虑道德因素的作用,把伦理决策纳入食品安全防治工作,降低食品安全伦理风险。
