摘    要:传统的食品质量和食品安全被定义为不变色、不变昧、不变形等外在的商品特征;而新的食品质量的内涵包含了食品生产、加工、流通、销售等若干环节。民以食为天,要确保食品安全,必须加强食品冷链管理,对食品的加工和流通全过程进行控制。在经济持续发展和生活质量不断提高的形势下,冷链物流应如何快速健康发展,已成为一个紧迫的课题。发达国家在这方面有许多值得学习和借鉴的经验。通过调查研究,我们把发达国家食品冷链物流的主要做法和经验加以总结,希望为我国食品冷链物流的健康快速发展和食品冷链物流方面的政策措施制定提供参考依据。

Abstract:Traditional food quality and food safety are defined as not changing color,the same ignorance,not external deformation characteristics of the merchandise; And the new food quality content includes food production,processing,distribution and marketing of a number of sectors. To ensure food security,the need to strengthen the food cold-chain management,food processing and circulation of the entire process under control. The sustained economic development and constantly improve the quality of life of the situation,how cold-chain logistics,rapid and healthy development has become a pressing issue. Through research,we sum up practices and experiences cold-chain food logistics of developed country. We expected it to provide a reference for enact ding policy of food cold chain logistics and developing Chinese cold-chain.
