Abstract: | Results derived from a time-varying parameterization of the AIDS model provide evidence of a structural change in Canadian meat demand (beef, pork, chicken). The structural change was accompanied with significant changes in some of the parameters of the model, and was biased in favor of chicken at the expense of beef. |
