The yellow fats sector comprises butter, margarine and a number of newer dairy-and low-fat spreads. In analysing the transmission of policy prices (e.g. the intervention price of butter) in this sector, which is characterised by concentrated processors and retailers, it is unrealistic to assume that marketing margins are competitively determined. The empirical estimates in this paper suggest that, since the mid-1980s, processors and retailers of margarine take into account the price of butter when setting margarine prices, which they can only do if they possess market power. This implies that the benefits of CAP reform (in the form of lower butter prices) may be seriously underestimated if the resulting fall in margarine prices is ignored; the increase in butter consumption would be overestimated.  相似文献

In this paper, we empirically evaluate strategic pricing behavior and shareholder delegation of financial market objectives in the U.S. butter and margarine market. Shareholders are assumed to maximize the value of firm assets according to a certainty equivalent capital asset pricing model (CAPM). The delegation setup instructs managers to maximize a linear combination of firm profits and shareholder equity values. A key result from the analysis is that a test of financial market influences cannot be rejected in the product market for butter and margarine. Product market competition is best described using a conjectural variation model of industrial organization. Estimates of Lerner Indexes suggest significant market power and counterfactual simulations point toward significant biases in estimated Lerner Indexes when capital market dimensions are ignored or if the wrong market structure is assumed. Dans le présent article, nous avons effectué l'évaluation empirique de comportements stratégiques dans la détermination des prix et la délégation d'objectifs financiers de la part d'actionnaires sur le marchéétatsunien du beurre et de la margarine. Nous avons supposé que les actionnaires maximisent la valeur de l'actif d'une firme selon l'équivalent certain du modèle d'évaluation des actifs financiers (MEDAF). La structure de la délégation amène les gestionnaires à maximiser une combinaison linéaire des profits de la firme et de la valeur nette des actions. L'un des principaux résultats de l'analyse est qu'un test des influences du marché des capitaux sur le marché des produits ne peut être rejeté pour le cas du beurre et de la margarine. La concurrence sur le marché des produits est plus adéquatement caractérisée par un modèle d'organisation industrielle à variations conjecturales. Les estimations de l'indice de Lerner ont indiqué la présence de pouvoir de marché, et les simulations contrefactuelles ont montré des biais significatifs dans les valeurs estimées des indices de Lerner lorsque l'on ne tient pas compte du marché des capitaux ou que l'on suppose une structure de marché erronée.  相似文献

In this study, Canadian household meat consumption behavior in exotic (deer and elk meat) and traditional meats (beef, pork, chicken, turkey, bison, and seafood) is examined. This research introduces some differences in public response to transmissible spongiform encephalopathies (TSE) risks across consumer segments from different sources of meat supply, including hunted meat. The analysis uses a combination of survey and household meat purchase data that include a balanced household panel of 2,393 households per year across time. A two-step estimation procedure is used with a probit model in the first step (consume or not) and a doublelog–translog two-stage demand system in the second step (level of consumption). It is assumed and tested that household sociodemographics, consumers’ risk perceptions/attitudes, and media coverage of bovine spongiform encephalopathy (BSE) and chronic wasting disease (CWD) are underlying demand shifters in consumers’ daily meat purchase decision. The results suggest that households who obtain venison from hunting show the highest confidence in venison safety. Exotic meat preferences negatively affect traditional meat consumption in the daily diets of households who purchase traditional meats from stores and obtain venison from hunting. In response to the media coverage of BSE and CWD, exotic meat eaters are less sensitive to animal disease media information than the general population.  相似文献

Farm operators are an integral part of some rural economies. The businesses they operate support jobs and purchase goods and services from local implement and input suppliers. Farm household spending on food, furniture and appliances, trucks and automobiles, and a range of consumer goods also supports local jobs and retail businesses. Based on the 2004 Agricultural Resource Management Survey, the linkages between farm household and business expenditures and communities are explored. Farms in urban areas purchase household goods in markets closest to the farmstead, but traveled further to purchase farm business items. The opposite pattern was observed in rural locations.  相似文献

The objective of this study is to analyze the main determinants of alcoholic beverages consumption at home. Data comes from the latest Spanish Household National Survey, which provides information on expenditure and quantities of different food products by household. Because households are interviewed only 1 week, a large number of zeros have been recorded. Among the existing censured demand models (the double hurdle (DH) model; the purchase‐infrequency model; and the Tobit purchase‐infrequency model, among others) and after carrying out model selection tests, the DH model has been finally estimated. All expenditure elasticities are positive, corresponding the highest value to spirits. Own price elasticities are negative and also in this case the spirits exhibit the highest value. Socio‐economic variables also play an important role in explaining consumer purchase and consumption decisions.  相似文献

This article values the groundwater recharge function performed by the Hadejia–Jama'are floodplain which is threatened by planned upstream water utilization schemes. Domestic consumption of groundwater resources for households dependent on groundwater resources is analyzed. Three types of households are identified as ( i ) those which collect all their water, ( ii ) those which purchase all their water, and ( iii ) those which both collect and purchase water. A behavioral model using a household production function approach is developed to model water demand and a panel formed by pooling contingent behavior and observed data is used to estimate demand. Welfare changes are calculated based on these estimates and on hypothetical reductions in the groundwater recharge rate.  相似文献

Many governments in developing countries distribute fertilizer at subsidized prices in an effort to stimulate small farmers' agricultural productivity and food security. Prior fertilizer demand studies have largely failed to account for the effects of government programs on farmers' commercial purchases. Using a double hurdle model and nationally representative rural household panel data in Zambia, we distinguish between these sources and measure the contemporaneous "crowding in" and "crowding out" effects of government input programs on commercial fertilizer sales. Where the private sector is relatively active and average wealth is higher (areas seemingly more likely to be targeted by government programs), results indicate that subsidies have substantially crowded out the private sector, in some cases to the point that such programs could actually lower overall fertilizer use. On the other hand, in poorer areas where the private sector is relatively inactive, subsidies help to generate demand and crowd in private sector retailers. Empirical studies explicitly modeling farmers' fertilizer purchase behavior within a dual marketing framework can provide important insights for agricultural policy discussions in developing countries.  相似文献

Abstract

The dichotomous-choice Logit model is applied on data from the Malaysian Household Expenditure Survey (1998/99) to examine household purchase decisions of food-away-from-home (FAFH). Results indicate that younger, higher educated, wealthier, smaller-sized families, urban residents, or Malay and Chinese households have a significantly higher likelihood to purchase FAFH, ceteris paribus. In addition, gender does not impact FAFH purchase decisions in a statistically significant manner. Based on these findings, several observations are noted to provide policymakers and food industry analysts with a better understanding of the habits and attitudes of Malaysian households visa-vis FAFH.  相似文献

Multivariate analysis of variance and econometric analysis are used in conjunction to analyze China's rural household consumption behavior across households that differ in the level of self-sufficiency relative to the production/purchase of fruits and vegetables. There is a significant difference in consumption patterns for different households with different levels of self-sufficiency. Households that purchase but do not produce fruits and vegetables exhibit a notably more market-oriented price responsive behavior. The consumption decisions of households that produce fruits and vegetables, but do not purchase them, are influenced more heavily by implicit income effects than by implicit price effects.  相似文献

The impacts of generic cheese advertising on U.S. household cheese purchases are examined via the use of a unique household panel. Modest gains in overall at-home cheese purchases from generic cheese advertising appear to be largely the result of strong gains in purchases of natural cheese rather than processed cheese. Results indicate that relatively larger gains in household cheese purchases from generic advertising may be realized by targeting infrequent purchasers to increase purchase frequencies, rather than by targeting households in general to increase their conditional purchase levels.  相似文献

The use of household level data for food demand analysis requires the researcher to address issues such as purchase censoring and the impacts of household age/gender composition on such demand. This analysis adopts an estimation approach to modeling censored food expenditures. The major methodological contribution of this analysis is our incorporation of an endogenous equivalence scale measure within the expenditure system. Our empirical application is concerned with Brazilian household food expenditures. We use the estimated adult equivalence scales to evaluate a measure of household welfare represented by per-adult equivalent food expenditures. We find a significant shift of the distribution of per capita food distributions when comparing member count versus adult equivalent-based per capita distributions.  相似文献

Econometric analyses of demand for butter in a number of countries have produced results which appeared to conflict with expectations. Specifically the sign of the co-efficient for margarine price was negative rather than the positive sign expected with a presumed substitute product. Gollnick (1954), who was the first econometrician to meet this problem, advanced the hypothesis of a constant fat budget to explain the paradox. Among other works which reported similar paradoxical results were Hesse (1967), Wierenga (1968 and 1974), Oskam and Wierenga (1974), Upton and Wittenberg (1974) and Vertessen (1979). The markets studied were Germany, Netherlands and Belgium. In this paper we discuss the Gollnick hypothesis (it appears to have been ignored in English language economic journals), explore its mathematical implications, present some recent results which appear to support it and discuss whether the hypothesis might be valid for other products.  相似文献

Pesticide Free Production™ (PFP™) is a new crop production strategy that has emerged in the Canadian prairies. Emphasis is placed on substituting human capital for chemical inputs in field crop production. Consumer response to the introduction of food products containing PFP™ inputs is unknown. A consumer survey was developed and implemented to assess what food products consumers would purchase if available in a PFP™ form and what factors affect demand for PFP™ food products. Results from a probit model suggest strong consumer interest in food products containing grains and oilseeds produced in a PFP™ cropping system. Respondents concerned with pesticides in the environment and/or food products, who would switch grocery stores to purchase a PFP™ food product, who were less than 36 years of age, had higher average household income and who would pay a premium for a PFP™ food product were more likely to choose food products with PFP™ ingredients.  相似文献

The need for additional information on household demand for meat and fish in Cameroon is addressed. Probit analysis involving the Heckman selectivity correction procedure is used to estimate the effects of individual and household characteristics on demand for beef, chicken, pork and fish. Results indicate that fish is a relative necessity in Cameroon and is often substituted for beef and chicken by households whose profiles include being of low income levels, having large household sizes, are of middle age and are less educated. Whereas chicken and pork substitute each other, they are each complementary to beef. The profiles of households likely to purchase beef include being married, middle age, educated and of the Muslim faith. Profiles for households most likely to increase their purchases of chicken include being of high income levels and are public sector employed. Some policy implications are provided.  相似文献

Spain currently is experiencing rapid cultural and economic changes that influence food markets. In this paper, the selection and purchase of food away from home and at home in Spain are modeled in a two-stage process using switching regression techniques with explicit accounting for the value of women's time available for household production. The empirical results show that the value of women's time, income, and household demographic variables are important determinants of both participation in the market for and expenditures on food away from home. The paper concludes that high-income, young families with few children and employed family heads are more likely to consume food away from home and also to spend more than others on food away from home.  相似文献

We evaluate the current structure of food demand in urban China by using household expenditure survey data from five provinces. Two complementary analyses are undertaken. First, an aggregate analysis based on a fractional logit model is used to examine how households allocate food expenditures across the food‐at‐home (FAH) and food‐away‐from‐home (FAFH) categories. This is followed by a disaggregated analysis of how households allocated their FAH expenditures across 12 commodity categories. A Quadratic Almost Ideal Demand System (QUAIDS) is used. We find evidence of significant food purchase substitution and complementarity.  相似文献

By endogenizing unit value and coupon redemption, we estimate U.S. household cheese purchase, quality choice, and coupon redemption equations simultaneously. Zero purchases and missing values on coupons and unit values are taken into account in the model to correct for selectivity bias. Correlations among the three equations are found to be significant. Empirical findings show that high-quality choice significantly decreases cheese purchases, while cheese coupon usage significantly increases purchases. We find that higher income households select higher quality cheese, while larger households choose lower quality cheese. For coupon redemption, we find that African-American and Hispanic households redeem less, while Asian households have no significant difference compared to Caucasian households.  相似文献

We develop a reduced-form model of price transmission in a vertical sector, allowing for refined asymmetric, contemporaneous and lagged, own and cross-price effects under time-varying volatility. The model is used to investigate the wholesale-retail price dynamics in the U.S. butter market. The analysis documents the nature of nonlinear price dynamics in a vertical sector. It finds strong evidence of asymmetric retail price responses, both in the short term and the longer term, but only weak evidence of asymmetric wholesale price responses. Asymmetric retail responses play a major role in generating a skewed distribution of butter prices. The empirical results indicate the presence of imperfect competition at the retail level.  相似文献

In this article we examine which farmers would be early entrants into weather‐index insurance markets in Ethiopia, were such markets to develop on a large scale. We do this by examining the determinants of willingness to pay for weather insurance among 1,400 Ethiopian households that have been tracked for 15 years as part of the Ethiopian Rural household Survey. This provides both historical and current information with which to assess the determinants of demand. We find that educated, wealthier individuals are more likely to purchase insurance. Risk aversion is associated with low insurance take‐up suggesting that models of technology adoption can inform the purchase and spread of weather index insurance. We also assess how willingness to pay varied as two key characteristics of the contract were varied and found that basis risk reduces demand for insurance particularly when the price of the contract is high, and that provision of insurance through groups is preferred by female headed households and individuals with lower levels of education.  相似文献
