Surplus food management plays a key role in food waste reduction. This paper addresses the multifaceted concept of food supply chain sustainability by presenting a model of surplus food generation and management (called ASRW, Availability-Surplus-Recoverability-Waste), which encompasses the integrated food supply chain (i.e. business, environmental and social players). The model was developed using a bottom-up approach, by conducting 30 exploratory case studies and iterating theory development and data analysis. Three confirmatory case studies, from different food supply chain stages, are also presented to demonstrate how the model can be used to identify food waste reduction strategies.  相似文献

The paradox that tonnes of food is wasted while people go hungry has raised concern from national and international authorities. In developed countries, reducing these problems has focused on surplus food distribution as a ‘win-win’ solution contributing to sustainable development goals. While the existing literature acknowledges the role of third-sector organisations, research on the supply chain of surplus food distribution and the coordination among actors is limited. This research explores actors and organisations in the value chain of surplus food distribution at the city level. Based on semi-structured interviews and participant observation, our findings highlight the need for a coordinated effort between actors as an essential arrangement to capture the value of surplus food. Despite the close cooperation, hierarchical power relationships exist between organisations in the supply chain. We unpack challenges in the surplus food supply chain, such as lack of a legislative framework for food donations and organisational sustainability issues that have forced third-sector organisations to work independently to reduce the uncertainties of food quality and quantity. We shed light on the practical implications by highlighting how multiple stakeholders could improve the efficiency of surplus food distribution.  相似文献

We consider that production and logistics facilities in the supply chain are positioned between the origin and the supply market or in a part of it. Any changes in time-distance or temperature in the chain could cause the net present value of the activities and their added value in the supply chain to be perturbed. In reality the perturbations can be robust. The natural question arises is to what are the effects of some perturbations in a supply chain, in its production or distribution part, on the stability of perishable goods in such systems and what is the appropriate control which keeps the product on the required level of quality and quantity at the final delivery. These analyses are especially important to assure the stability of cold chains in the cold chains management (CCM). What conditions should be fulfilled to assure that after such robust perturbations of parameters and especially time delays (lead times and some other delays) the behaviour of the logistics chain would still be within the prescribed limits. The formulation obtained in the time domain will be compared with the formulation in the frequency space introduced by Grubbström in his paper “On the Application of the Laplace Transform to Certain Economic Problems” (Manage. Sci. (7) (1967) 558) and with the later studies of his school. Their model was extended by the authors to the complete logistic chain, where location — and with it also the distance between the activity cells of logistic chain — play an important role.  相似文献

The Common Agricultural Policy (CAP) of the European Union, in effect since January 2023, seeks to differentiate products on quality, provide greater transparency on food origin, and on the transactions and the actors involved in the supply chain. At the same time, in Spain, the adoption of new technologies for the digitization of the agri-food sector has been proposed as a solution to address structural issues such as lack of competitiveness and innovation. In fact, systems using blockchain-related technologies for food control and traceability have seen great progress in recent years and, currently, the use of blockchain in supply chain management is almost doubling year on year. In this context, this paper investigates the level of development of blockchain technology in the agri-food sector in Spain and its applications for certifying food production conditions within the supply chain, and how it is supported by public policies. It identifies several challenges that need to be addressed for a widespread adoption could take place, such as data recorded on the blockchain, lack of standards, limited scope of projects, and integration of data capture automatically or with other technologies like RFID and AI. The document proposes to reorient public development policies to address these challenges, such as reusing data from, already in place, European data collections for production control and food traceability, educating users and stakeholders about the use of blockchain technology, and fostering legal and technical provisions which ensure system transparency to facilitate a successful implementation of blockchain.  相似文献

Urban and peri-urban farming and supply chains are becoming increasingly important for delivering perishable produce to the urban centers of the developing world to meet the demands of a growing population. However, some production and handling practises and a short supply chain may expose consumers to substantial health risks. This study of consumers, peri-urban farmers, and traders attempts to quantify subjective risk judgments with regard to food safety hazards, and examines the extent of discrepancies in perceived risk relating to vegetables in domestic urban markets among the three groups. A conceptual model was developed to elicit subjective risk perceptions for a multidimensional construct. In general, differences were found between respondent categories in terms of both specific source risks and overall risks. Differences were also found with respect to the socio-demographic and structural determinants of the levels of perceived risks. These findings can help improve policies to promote food safety and reduce risky food handling along the supply chain, and present opportunities for change.  相似文献

Consumer willingness-to-pay for informational attributes of food products is important information for food producers and supply chain participants and policy makers. We examine consumer demand in the pork sector of the Republic of Georgia. Results of conditional and mixed logit estimation, conducted on choice experiment data, reveal that Georgian consumers treat quality certification and product traceability attributes as substitutes. We also find that producers and other supply chain participants should be concerned primarily with maintaining the appearance of pork products. Retailer specific factors such as location and type of outlet can also substitute for product traceability. Store location and product appearance, however, are complementary attributes. In light of the recent turbulence in Georgia these consideration may be of paramount importance as participants in the supply chain seek to rebuild damaged infrastructure.  相似文献

The supply chain operations reference model model (SCOR) is developed and maintained by the Supply Chain Council (SCC). The SCOR model is a reference model that can be used to map, benchmark, and improve supply chain operations. SCOR template is a simulation based analysis tool, developed to capture the dynamics of supply chain operations. The first version of the SCOR template was presented in a previous article by Persson and Araldi (2009). Since the finalisation of the first article concerning the SCOR template, a second version of the SCOR template has been constructed and tested in at a case company; Alfa Laval at Ronneby, Sweden—a manufacturer of heat exchangers. Version 2 of the SCOR template is more complete than the previous version. More metrics were introduced and the return processes included. Emphasis has been on making supply chain analysis simple with the introduction of a new building block—the metric module. The case study at Alfa Laval has been based on data from a value stream mapping (VSM) and aimed at comparing different scenarios in the production networks for one specific product. The results of the comparison are one of the pieces of data that the company managers will use when deciding where to allocate production resources in the international production network.  相似文献

Inefficient locations for production, distribution and reverse logistics plants will result in excess costs no matter how well material requirements planning (MRP), inventory control, distribution and information sharing decisions are optimized. In this paper we study ways in which aspect of activity cell location decisions can be analyzed within an extended MRP model. This model has previously been extended by including distribution and reverse logistics components in a compact form, presented in Grubbström et al. (2007). Our aim is to demonstrate the basic differences between an approach to location problems with MRP “under the same roof” as the global supply chain, in which transportation time delays and direct transportation costs have substantial influence. We discuss possibilities of how to present location aspects in the supply chain model obtained from combining input–output analysis and Laplace transforms in four sub-systems, namely manufacturing, distribution, consumption and reverse logistics, and show how the transportation costs and lead time influenced by the location of all these activities affect the resulting net present value (NPV). Our aim is to build a model supporting decisions concerning the structure of a supply chain as an alternative to a mixed integer programming formulation. The model developed is based on the use of continuous functions describing spatial distributions of cost and customer demand. Continuous functions are embedded in the MRP extension previously introduced in Grubbström et al. (2007).Location decisions influence (i) production costs, because timing influences the cost of activities involved in creating a product, cf. (Grubbström and Bogataj, submitted for publication), and (ii) logistics costs, which refer to the procurement and physical transmission of materials through the supply chain. In this current paper we wish to combine both of these aspects into a comprehensive model, where we show the interaction between the “space of flows” and the “space of places” as Giovanni Arrighi distinguishes one from the other in his book The Long Twentieth Century.  相似文献

Imperfect items in the raw material and production stages of a supply chain directly impact the coordination of the product flow within a supply chain. In response to this concern, production and inventory lot sizing models, which incorporate imperfect items into their formulation have become an important and growing area of research. The contribution of Salameh and Jaber (2000) is one of the fundamental models on lot sizing when procured items are of imperfect quality. Over the past decade, there has been a noticeable amount of interest in the EOQ model for imperfect items that was set forth in Salameh and Jaber (2000). Several researchers have published adaptations and extensions of this original model that address supply chain coordination, quality improvement and yield management, and the impact of human error on production and inventory systems. In this paper, we summarize the current body of research that has extended the Salameh and Jaber (2000) EOQ model for imperfect items. Some possible future research directions are identified at the end of the paper.  相似文献

Food safety, alongside food quality, remains a primary concern of both consumers and those along the whole food supply chain, leading to regulation by government alongside private third party certification. Much has been written about the value of these systems primarily from the perception of the consumer. This paper reports on a study that examined industry perceptions on the regulatory and assurance systems within the dairy sector of England and Wales. It found that the primary producer found value in both systems, although from a food hygiene focus regulation was seen to be more rigorous. Other stakeholders along the dairy food supply chain saw the assurance scheme as more rigorous. All stakeholders recognised the need to reduce duplication in delivering food safety through combining key elements of both systems with the added potential for better communication of both food safety and quality to the final consumer.  相似文献

A framework for assessment of the potential of nanotechnology for enhancing food security in India is developed. Agricultural productivity, soil health, water security, and food quality in storage and distribution are identified as the primary determinants of food security that can be impacted by developments in nanotechnology. The framework is developed in two stages: (i) mapping nanotechnology to agri-food thematic areas across the agricultural value chain and (ii) from the thematic areas to the food security determinants. Using published literature and patents data, a model to organize and map nanotechnology research to the agri-food thematic areas and food security determinants is developed through a specially designed database. The model allows identification and prioritization of potential areas for nanotechnology applications to enhance food security. Comparisons of this technology with green revolution technologies and agricultural biotechnology indicate a possibility of greater and faster impact on all components of the agri-value chain with concurrent social, ethical, legal and environmental implications. There is a need for investments in capacity building and development of an agri-nanotechnology infrastructure in India, and for ex ante assessment of its implications for society.  相似文献

There is increased interest in greater localization of food supply chains but little evidence about the effects of localization on supply-chain costs. Assessing these effects is complex in multiple-product, multi-process supply chains such as the dairy industry. In this study, we develop a spatially-disaggregated transshipment model for the US dairy sector that minimizes total supply-chain costs, including assembly, processing, interplant transportation and final product distribution. We employ the cost-minimizing solution as benchmark to compare alternative scenarios of increased supply chain localization. Our results indicate: (1) short-run limits to increased localization, (2) modest impacts on overall supply-chain costs, and (3) large cost re-allocations across supply chain segments, regions and products. We find that increased localization reduces assembly costs while increase processing and distribution costs. Cost increases are larger in regions with smaller raw milk supplies and during the season when less raw milk is produced. Minimizing distances traveled by all dairy products results in tradeoffs across products in terms of cost and distance traveled. The relationship between increased localization and costs appears to be nonlinear.  相似文献

本文主要探讨了回收质量不确定下的竞争性闭环供应链的政府政策机制,建立了4种情形下的竞争性闭环供应链分散式决策模型,研究了3种政策机制对闭环供应链回收率、总碳排放量和制造商利润的影响,模型由两个制造商和一个第三方回收商构成。结果表明:回收率和制造商利润受到回收质量的影响,存在最佳回收质量系数使回收率最高以及制造商总利润最高,最佳回收质量系数受到碳税的影响;补贴与碳税相结合机制更能有效的引导回收、降低总碳排放量以及激励一般制造商进行再制造。最后,通过算例分析进行了验证。  相似文献

This study proposes an integrated, reverse logistics supply chain planning process with modular product design that produces and markets products at different quality levels. A mixed integer programming (MIP) model formulates the overall planning process required to maximize profit by considering the collection of returned products, the recovery of modules and the proportion of the product mix at different quality levels. This paper proposes the collection of returnables (end-of life, defective, product under warranty) through retail outlets combined with the recovery of modules from the collected products using a network of recovery service providers. The proposed modular product design approach would create a design criterion that provides an improved recovery process at a lower cost. This study uses a total supply chain view that considers the production, transportation and distribution of products to customers, while a numerical problem illustrates the applicability of the models.  相似文献

With reference to the performance management research agenda, this article focuses on the politics of production in food manufacturing and distribution companies in the supermarket supply chain. Burawoy's concept of ‘factory regimes’ is utilised to explore the broader context of labour process change in inter‐linked organisations in the retail supply chain. The article examines the extent to which new despotic or coercive regime characteristics are emerging that weakens the power of both suppliers and labour. In revealing changes in the nature and dynamics of performance regimes within these organisations, the article exposes the connections and linkages between workplaces as distinct moments in the integrated circuit of capital.  相似文献

The issues of food loss and waste (FLW) in the global supply chains have recently gained attention. However, causes for FLW and their mitigation strategies for curbing FLW at different stages of the supply chains remains under researched. Our research aims to address these research gaps in a three-fold way: i), we identified key causes (through root-cause analysis) of FLW in the supply chain of developed and less developed countries; ii), systematically classified measures and policies, which have been implemented to mitigate FLW; iii), developed an interdisciplinary conceptual framework for waste utilisation practices that can contribute towards the triple bottom-line in food system. A root-cause analysis was performed, and mitigation strategies identified by systematically analysing and synthesizing the extant research published over the past 20 years (1998 to 2018) in the areas of food loss and waste in the supply chain. A conceptual model for the prevention of FLW utilising a systems approach through the circular economy concept has been proposed. Since the agri-food sector is largely interdisciplinary, we have also demonstrated a method of integrating contributions from multiple disciplines in our proposed model towards achieving a total depollution (zero waste supply chain).  相似文献

Incentive scheme and co-ordination policy are substantial components for the co-ordination of a decentralized supply chain system, but there is little work combining the two components as a single decision model (Li and Wang, 2007). This paper proposes a model which incorporates both incentive and co-ordination issues into a single co-ordination model for a single-vendor multi-buyer supply chain. In the proposed model, the co-ordination is achieved by synchronizing ordering and production cycles while price discount, which is based on the buyers’ order intervals, is used as the incentive to motivate buyers to participate in the co-ordination. While the vendor is benefited from the co-ordination by synchronized cycles, the proposed price discount scheme can guarantee that a buyer’s total relevant cost of co-ordination will be reduced when compared with independent optimization. More importantly, the proposed price discount scheme does not require any cost information from the buyers.  相似文献

This study introduces a framework and model, although applied in a practical setting, sets the stage for further theoretical development of mid-range theory. The methodology applied in the study has four main stages, namely interviews with managers from an online food retail supply chain, analysis of soft and hard data using questionnaire-based surveys of customers and suppliers, archival and factual information gathered from the supplier and the online food retailer to measure food waste across the supply chain and analytical models to quantify various effects. A number of propositions emerged from our multiple methodologies and observations. The major research contribution of this work is to advance Natural Resource Based View (NRBV) to the supply chain and various complexities involved in food waste management. Dynamic capabilities were clearly evident and necessary in rapidly changing industrial contexts such as online food supply chains. This paper also proposes a food waste minimization-and-mitigation model, establishes the direct and indirect outputs of food waste and brings attention of the food waste debate in the context of an exemplar online food supply chain, as well as provides a middle range theoretic framework to enhance understanding on theory and its application to this field informed mainly NRBV.  相似文献

Manufacturers need to satisfy consumer demands in order to compete in the real world. This requires the efficient operation of a supply chain planning. In this research we consider a supply chain including multiple suppliers, multiple manufacturers and multiple customers, addressing a multi-site, multi-period, multi-product aggregate production planning (APP) problem under uncertainty. First a new robust multi-objective mixed integer nonlinear programming model is proposed to deal with APP considering two conflicting objectives simultaneously, as well as the uncertain nature of the supply chain. Cost parameters of the supply chain and demand fluctuations are subject to uncertainty. Then the problem transformed into a multi-objective linear one. The first objective function aims to minimize total losses of supply chain including production cost, hiring, firing and training cost, raw material and end product inventory holding cost, transportation and shortage cost. The second objective function considers customer satisfaction through minimizing sum of the maximum amount of shortages among the customers’ zones in all periods. Working levels, workers productivity, overtime, subcontracting, storage capacity and lead time are also considered. Finally, the proposed model is solved as a single-objective mixed integer programming model applying the LP-metrics method. The practicability of the proposed model is demonstrated through its application in solving an APP problem in an industrial case study. The results indicate that the proposed model can provide a promising approach to fulfill an efficient production planning in a supply chain.  相似文献
