This study explores the coping strategies that families apply when under time pressure and stress (time stress), and how such strategies affect food consumption at dinnertime. The data were based on photo interviewing methodology with a sample of 12 Norwegian children (ages seven and eight) and their parents. In this case, the children were asked to take photographs during their dinners at home and while shopping for groceries with their parents. The findings show that the most dominant explanation for time stress was the children’s participation in sport activities. In this regard, the families applied several coping strategies, such as skipping dinner and eating snacks instead, consuming convenience food, avoiding preference conflicts, planning for healthy dinners, involving children and grandparents in food preparation, and practising compensatory health beliefs and behaviours. This might be the first study that identifies parents’ use of compensatory health beliefs to justify children’s diets. More specifically, the parents stated that the children’s high activity levels could compensate for unhealthy food consumption. The strategies that were applied had varying influences on the families’ food consumption, depending on the parents’ confidence in cooking and meal-planning skills. It was found that parents with high confidence and skills were more likely to make healthy cooking a priority. Consequently, they served more healthy dishes at dinnertime, compared with other parents. Unlike previous studies, the findings indicate that children’s active lifestyles might not be directly related to healthy diets.  相似文献

Fruit and vegetable consumption of Native Americans was compared with that of non‐Native Americans and determinants of fruit and vegetable intake for both populations were found based upon the Theory of Planned Behavior. A one‐time survey was conducted as part of a larger research project funded by the South Dakota Department of Health. The survey was administered in local grocery stores and supermarkets in six South Dakota communities, including two located on Native American reservations. Of the 1000 distributed surveys, 499 were returned with 230 being usable, resulting in a response rate of 49.9%. Wilcoxon signed‐rank test and two regression models were tested using SAS 9.2 software. Dependent variables were fruit and vegetable intake. Attitudes towards health, fruit and vegetable consumption, perceived difficulty, subjective norm and intention were also measured. Community size, family income, employment status and participation in food assistance programmes [Supplemental Nutrition Assistance Program or Women, Infants, and Children (SNAP or WIC)] were socio‐demographic control variables. Overall, Native American participants consumed more fruit and vegetables at home and had a more positive attitude towards healthy diets than non‐Native American participants. SNAP or WIC participation, family health, exercise, intention to live healthier than parents, buying healthy food, and fruit and vegetable consumption when eating out were positively associated with fruit and vegetable consumption among Native Americans, while participation in the SNAP or WIC programme had a negative influence on consumption among non‐Native American participants. Family health, exercise, buying healthy food, fruit and vegetable when eating out, and intention to buy healthy food were positively associated with fruit and vegetable consumption among the non‐Native American population. Theory of Planned Behavior variables (e.g. attitude towards healthy food) significantly contributed to the model explaining fruit and vegetable consumption. The fact that SNAP and WIC participation had an opposite influence on the two populations warrants further research.  相似文献

Seafood in the adolescent diet has many benefits, yet a number of adolescents do not consume the recommended levels. Despite this the consumption of seafood by younger consumers has received scant attention in the extant literature. Previous studies on adolescents’ food‐related behaviour tend to focus on general choice mechanisms or perceptions of food and mainly relate to fruit and vegetable intake. The present study seeks to address this gap through investigating the impact of family upon the consumption of seafood by younger consumers through exploring adolescents’ attitudes and behaviour in regard to eating seafood. Utilizing an exploratory qualitative methodology, seven focus groups of adolescents aged 13–19 years were conducted at two schools in South West England. Discussions covered a range of issues related to adolescent seafood consumption. The use of thematic content analysis found that the family, and parents in particular, exert high levels of influence over adolescents’ consumption of seafood both at home and when dining out. The parent who does the shopping and cooking has the greatest role. Sibling preferences and dietary choices also influence whether seafood is served in the home. Of value to researchers and management are the insights gleaned into the influences on adolescents’ attitudes towards and behaviour in regard to eating seafood. In particular, encouraging seafood consumption will rely upon interventions aimed at both parents and children and need to take into account adolescents’ diet and lifestyle preferences, while also acknowledging the influence of peers and the school food environment.  相似文献

Children’s daily consumption of food in childcare institutions has an impact on their public health nutritional status. The collaboration of parents and employees of kindergartens is important to ensure healthy eating habits among the next generation. Consequently, evaluations of lunch schemes are important to provide a good foundation for enhancing communication between home and institutional settings. The aim of this article is to assess parental satisfaction and identify themes related to parental perceptions of lunch schemes in Danish kindergartens. A survey was developed and distributed in four kindergartens with lunch schemes. A combination of closed and open questions were used to evaluate satisfaction and identify positive and negative aspects of the lunch schemes. Parents of 93 children participated in the study and the response rate was 55%. Eighty-nine percent expressed satisfaction with their children’s lunch scheme. According to parents, the most positive aspects were that lunch schemes serve a variety of food, their ability to prevent neophobia, that children learn that eating is a social occasion, and that the arrangements offer convenience to parents. The negative aspects identified were the lack of communication between the kindergarten childcare institutions and the parents regarding the food. Overall, parents are very satisfied with their children’s lunch schemes; however, the information between institutions and parents could be improved.  相似文献

This exploratory study generated a grounded theory of factors influencing children's diets, particularly those that contribute to suboptimal eating and ultimately child obesity. The study involved 124 children (aged 6–12 years) and 39 of their parents from three separate junior schools (including a lower, middle, and higher socioeconomic school). Research methods included (i) interviews with children and parents and (ii) observations, drawings, and lunchbox audits with children. The findings suggest that children and parents prioritize psychosocial needs over physiological needs during food selection and consumption. This tendency toward psychosocial eating appears to be strongly reinforced by food advertising.  相似文献

Children’s media socialisation, parental concerns, and mediation styles have been studied mainly in the US and Europe. The present research aims to extend media socialisation theory by investigating children’s media behaviour and parental concerns and mediation styles in Iran, and then to compare the findings with the research based on parents in Western countries. Based on in-depth interviews with parents from Iran, we put forth propositions and a media socialisation model. We find that parental concerns and behaviour are influenced by their cultural practices and expectations, government regulations, and media dominant in the local region.  相似文献

The literature on the factors influencing children’s consumption behaviour is vast; however, gender-specific consumption behaviour and the determinants driving these discriminative decisions are largely unknown. This article contributes insights to the role of gender in food preferences using the example of school milk consumption by German primary school children. Study subjects included pupils, their parents, teachers, and other school personnel. The results of the multilevel model reveal that there are various factors influencing the probability that a child will decide to order school milk. In addition to individual factors such as socio-economics, eating habits, and preferences, consumption behaviour is also affected by social environmental factors. These factors include the preferences of parents, the consumption behaviour of teachers, teachers’ attitudes, and the attitude of the school principal. Additionally, policy-driven aspects (e.g., school milk price, product range) were included in the analysis and proved to have an impact on a child’s decision to order school milk. Although the results are limited to consumption behaviour for school milk, they can be used in the development of new or the revision of existing school food programmes. The example of school milk may shed light on how specific measures affect boys’ and girls’ consumption, e.g., how they react to price reductions or specific school settings.  相似文献

The article looks into how parents see their children’s consumption. The data material consist of focus group interviews with parents and children living in relatively affluent Scandinavian society. The result shows that parents are not necessarily negative towards their children’s consumption, and in some fields they are willing to spend more than the children expect or want. Parents have two approaches towards their children’s consumption. The child perspective puts the child in the centre with the child’s need for development and protection. The consumer critical discourse dominates and children are seen as vulnerable. In many situations parents will stretch beyond the children’s expectations if they see the consumption as useful. In the parent’s perspective parental skills is exhibited. The parent’s economic status as well as their parental skills and competence are exhibited, and the child’s consumption demonstrates if you are caring and responsible parents.  相似文献

The recently published ‘Scottish Diet’1 emphasizes the importance of diet in Scotland's poor health record, and sets dietary targets for the year 2000. Fruit and vegetable intake is considerably lower in Scotland than in the rest of the U.K. This paper gives details of the low levels of fruit and vegetable consumption in Scotland in relation to the rest of the U.K., and then goes on to review the factors affecting consumption of these foods, and in particular to discuss them in terms of the Scottish situation. Finally, an agenda for research in this area is outlined, emphasizing the need for further information on the interrelationships between the different factors affecting fruit and vegetable consumption, in order to inform future strategies for increasing fruit and vegetable consumption in Scotland.  相似文献

The adolescence period is the stage in the life cycle in which individuals begin to develop independent decision making related to their social environment including their dietary intake. The period is fundamental in the development of longer term eating habits that may be reflected in adulthood. This study aimed to investigate the decision‐making process of adolescents and their dietary behaviour in the achievement of a balanced diet and to determine the underlying factors that may affect these choices. To meet this aim, a three phase data collection was utilized. In phase 1, a baseline questionnaire (n = 239) measured factors affecting dietary behaviour and the barriers in the achievement of a balanced diet. Phase two employed and measured respondents’ (n = 235) independent decision making by rating nineteen menu choices which reflected all options of dietary guidelines. This was analyzed through conjoint analysis. In phase three a subsample (n = 55) from the first two phases completed a food map which determined underlying reasons for food decisions and choice behaviour. Results revealed that when adolescents are given free choice they tend to follow an unbalanced diet with some diets raising concerns for their current and future health. Fifty‐seven percent of respondents displayed serious concerns in their dietary choice of which 18% were identified as requiring immediate intervention. The most noticeable factors affecting dietary choice were the desire to eat foods high in fat and carbohydrates and low in fruit and vegetable consumption. Food‐mapping indicated prior knowledge and attitudes had no effect on the choices made but that that behaviour of parents in the preparation of meals at home and peers in the selection of snack choices had the most influence on the unbalanced diet.  相似文献

Abstract

A widespread concern in the child-marketing literature, and indeed at a societal level, is that of pester power. There is a prevailing school of thought that holds that where children pose purchasing requests to their parents, pestering and unhappiness may result if those requests are denied. This paper approaches this issue by accessing children's views on pester power, as opposed to previous research studies that have tended to prioritise parental perspectives. Findings are presented from an interpretive study involving children aged between seven and nine years. The study suggests that children understand the various responses that parents make to purchase requests, for example, agreement, refusal, procrastination, and negotiation, and their parents' rationale for such responses. Furthermore, the outcome of such interaction tends to constitute more of a good-natured ‘game’ between parent and child, as suggested by the children, as opposed to the negative overtones of conflict indicated in the literature. The paper concludes that this interaction can be more closely aligned with our expanding understanding of the process of consumer socialisation, rather than the negative connotations of pester power and conflict phenomena, as suggested in previous studies.  相似文献

The aim of this study, with the pedagogic meal in focus, was to identify pre‐school staff members’ attitudes to the role of food and meals as part of daily activities at pre‐school. Interviews were carried out at 12 pre‐schools and a total of 34 pre‐school staff participated. The staff revealed strong opinions as well as ambivalence towards how food and meals should best be integrated into their daily work and pedagogic activities. The pre‐school staffs’ lack of or insufficient education and knowledge regarding food and nutrition resulted in an ambivalent and uncertain situation with respect to how they should see themselves as teachers in the meal situation. Nevertheless, most of the staff had a clear perception of what it meant to practice a pedagogic meal. It meant helping and encouraging the children to help themselves and serving as an adult model for the children at table, though this pedagogic activity was uncommon. While the staff were satisfied with the pre‐schools’ role of catering for the children, they expressed concern about or even mistrust towards the children's parents. Despite, or perhaps due to, their inadequate knowledge about food and nutrition and the lack of specific aims for the pedagogic meal, they assumed that the public sector was a better educational institution regarding foods and a better guarantor for children's food habits and dietary intake. As the teachers’ identities have changed over the past years they have not yet found a solid ground for determining how food and meals could be integrated into their everyday work as pre‐school teachers and childminders.  相似文献

This study investigates the role of physical appearance (body mass index (BMI), body shapeperception, self-esteem) and variables related to eating habits (food choice, critical attitude towards food, parents’ attitude towards food) in the development of advertising literacy in children focusing on food advertising. Based on the concept of self-esteem and the theory of cognitive dissonance, a research model is developed and tested in an empirical study with 249children aged 7 to 11. Using PLS path modelling, self-esteem and critical attitude towards food are identified as factors influencing advertising literacy directly. Self-esteem is significantly influenced by children’s BMI and body shape perception, while critical attitude is determined by children’s food choices and children’s perception of their parents’ attitude towards food. Evidence was found that the influence of body shape perception on advertising literacy is fully mediated by self-esteem. The results link variables related to physical appearance and eating habits to how children deal with advertising. Implications for academic research and public policy are discussed, and the study raises issues for children’s advertising literacy support and training.  相似文献

Abstract

How children learn to function as consumers has been extensively reviewed in the consumer and marketing literature, although early childhood (5 to 7 years of age) has received relatively limited attention to-date. This study examines this process specifically in relation to the role of socialisation agents. It questions whether parents/guardians, who have traditionally been acknowledged as the primary socialisation agents, retain this influence in an era of changing family structures. Leisure-travel provides the context for review with children aged 5–7 the research population. Findings confirm parental influence to be pivotal across different family structures, but note that, in some structures and circumstances, this influence is shared, particularly with grandparents and the leisure industry. Future research opportunities include the need to examine this shared role further, to investigate leisure industry awareness and response to their influence and to investigate further the implications of social class and ethnicity upon the findings.  相似文献

Parents play a pivotal role in socializing their children for healthy eating. The objectives of the present study were (1) to identify food socialization outcomes valued by parents, and (2) to study how parents socialize their children for (healthy) eating at home and during food shopping. Including both parents' perceptions of valued food socialization outcomes and associated processes addresses a significant gap in the food socialization literature. The study used semi‐structured, in‐depth interviews with parents of young children. Data were subsequently analysed by interpretive, thematic procedures. The sample consisted of middle‐ to high‐income families from two cities in Denmark. Findings reveal four main food socialization goals valued by parents: (1) Nutrition and Health, (2) Healthy Relationship with Food, (3) Food Assimilation and (4) Self‐Regulation and Autonomy. Parents prioritized children's acquisition of a healthy relationship with food which included preserving family relations and harmony, more than strictly attending a nutritious diet, contrasting the focus on the nutritional value of diet usually emphasised by public health authorities. The study therefore concludes that parents' notions of what constitutes healthy diets for their children is not completely aligned with common nutrition‐oriented recommendations. Also, fathers were found to play a very active role in their children's food‐related consumer socialization. The findings underline the importance of addressing the priorities and strategies of both mothers and fathers when marketers and policy makers target contemporary families regarding children's food socialization.  相似文献

Relatively little is known about the influence children have on their parents’ purchases in a retail setting. This study investigates which factors affect children's purchase requests and their parents’ subsequent purchases. It was found that factors influencing the number of children's purchase requests were the freedom of a child's movements, the product's visibility, and the child's developmental stage. The latter variable together with the suitability of the good for consumption on the premises, the linguistic form of child's request, the parent's household income, and the price of the good determine the number of purchases following a child's request.  相似文献

The increasing importance of children as consumers has focused attention on ‘pester power’: children’s influence over adult purchasing through requests and demands for certain products. Many concerns are expressed about pester power, including that it increases parent-child conflict. In the contested area of food marketing, an additional and particularly potent criticism of pester power is that it can undermine parents’ attempts to feed their children a healthy diet. Results from a systematic review of international evidence find that food advertising does cause ‘pestering’ by children and results in parents buying less healthy products that are associated with obesity. This undermines industry arguments that pester power is just a legitimate way for children to express their growing autonomy as consumers. Policy implications for marketers and government are discussed.  相似文献

It has been acknowledged that it is only by obtaining a more detailed understanding of food choice that people’s diets can be improved. In Northern Ireland, research into food choice has been limited yet the Province has the second highest rate of heart disease in the world, indicating the need for change. This study investigated the food choices of 9‐ to 17‐year‐olds in Northern Ireland and the influential factors. A range of research techniques were employed incorporating both qualitative and quantitative methods, namely observations, focus groups, picture associations, dietary case studies and questionnaires. The research indicated that the dietary patterns adopted by this group are characterized by a high consumption of fat, yet the reduction of fat tends to dominate the overall strategy for the prevention of obesity and lowering the risk of coronary heart disease. In addition, a high consumption of sugar products was evidenced along with a distinct dislike for healthier alternatives such as fruit and vegetables. The ‘skipping’ of meals, especially breakfast and a high prevalence of snacking was also apparent. However, these eating habits were found to be affected by various factors such as age and gender, emphasizing the complex nature of food choice. The findings from this research enabled the development of a model relating to the food choices of 9‐ to 17‐year‐olds in Northern Ireland, highlighting the influential factors and subsequent health implications.  相似文献

We conducted a field experiment to test the effect of nonmonetary incentives in increasing children's vegetable consumption during lunch at school. We measured children's daily vegetable consumption for four consecutive weeks prior to the provision of incentives, for four consecutive weeks during the incentive provision, and for three consecutive weeks right after the provision of incentives. To check the longer-term effect of the incentive provision, we measured children's daily vegetable consumption 11 weeks after the postintervention period. Results suggest that the incentives are effective in increasing vegetable consumption and that this effect persisted several weeks after the provision of the incentives ended. This is an important topic since gaining a better understanding of effects of nonmonetary incentives can help in the design of nutrition and health policies aimed at improving the dietary behavior of children and potentially reducing childhood obesity.  相似文献
