| 摘 要： | 介绍了蛋白质和改性蛋白质溶胶的流变特性，指出蛋白质溶胶的流变特性主要为非牛顿流体的假塑性流体，且其流变特性受诸多因素的影响；蛋白质经过改性后，流动性有较大的改善。最后概述了蛋白质溶胶流变特性方面的应用。
